Slow Cooker Kid’s Sloppy Joe

This slow cooker kid’s Sloppy Joe is the easiest recipe ever. The beef soaks up all that great seasoning after a few hours in the crockpot, making it better than the old skillet version in my opinion. I don’t know where it went, but summer up and left and it got cool, fast. I instantly went into hunker-down, comfort food mode. One of my all-time favorite cooler weather foods is a Sloppy Joe. Messy, beefy, tasty sandwiches. You can’t beat that.

I don’t put anything on my slow cooker kid’s Sloppy Joe. No cheese. No extra onions. And no jalapenos. Nothing. I keep it simple, like I remember as a kid. This isn’t the time for fru-fru, this is the time for good ole eats.

Now, I do have one sort of indulgence. I have to toast my buns. I just cannot stand soggy slow cooker kid’s Sloppy Joe buns. The longer that saucy sauce sits the more the buns soak it in and they get soggy and mushy. As a kid I would request (nicely of course) that my mom get my hamburger buns extra crispy. Not burned, just crispy.

Potluck Macaroni and Cheese

My wife declared this potluck macaroni and cheese our go-to dish for family get-togethers. I agree, it’s not just darned good but it makes a mighty big batch to boot. You can make it in a (big) crockpot or on the stovetop (in a pretty big pot). It’s creamy, cheesy and downright yummy. And I do mean mega creamy and mega cheesy, too. No one is gonna be screaming for more cheese.

The Mexican cheese adds a wonderfully different flavor but it doesn’t make the dish spicy. If you want to spice up your mac and cheese, substitute Mexican Velveeta. Don’t worry, it won’t be so hot that it’ll run grandma off. But you might want to warn her a bit.

Potluck Macaroni and Cheese

Notes

You can also cook this on the stovetop. Instead of transferring to a slow cooker, just return the drained pasta to the pot in which you cooked it. Stir in the remaining ingredients. Cover and cook on low for 30 minutes or until the cheeses have melted and the mixture is heated thoroughly, stirring often.

Slow Cooker Barbacoa Beef

When chuck roasts go on sale here I instantly think of cooking them until fall-apart tender in my slow cooker. Nine times out of ten, I’m going to make a sandwich or po boy with the results. Sure, I occasionally keep it ‘traditional’ and serve my almost-pot roast with mashed potatoes and gravy and veggies, but for me, it’s a sandwich for the win. This slow cooker barbacoa beef packs some great flavor (and a good bit of heat) into every bite. It’s perfect piled high on bread.

I doubled (or maybe tripled) the amount of chipotle peppers when I made this slow cooker barbacoa beef. I was looking for a nice spicy result, and I definitely found it. The peppers also add a wonderful smokiness.

The spicy beef is also great piled high on tacos, nachos, or tortillas. Instead of po boys on bread, try making sandwiches using hamburger buns instead.

I know that some may poo-poo the idea of making chili in a crockpot. I can only say to them: you have to try this slow cooker meat lovers chili. Do you have to make it in a slow cooker? No, of course not. It’s just a bit easier when you do. No matter how you cook it, it’s packed with flavor. Three meats to satisfy any carnivore’s desires. The perfect combination of spices and heat. This is the perfect chili for a cold day.

You can adjust this recipe for slow cooker meat lovers chili however you like. Spicy ground sausage and a chopped habanero or two will definitely kick the heat up a few notches. Leave out the beans for a more Texas-style chili. Substitute ground turkey sausage, ground turkey and regular ground sausage for a beef-less chili. This recipe very flexible so you can adjust it as you like.

One thing I like to do with my chilis and any recipe that calls for canned tomatoes is to substitute fire-roasted tomatoes instead. The roasting really adds a tremendous flavor to the tomatoes and any dish that you use them in.

I’m a member of the Sausage Sandwich Lovers Club. Well, I would be if there was such a club. Now normally, that means a grilled brat or kielbasa smothered in a red sauce with plenty of vegetables and cheese. Like my Italian version. These slow cooker Creole sausage sandwiches are a fantastic twist on what I normally make. Very simple flavors that come together over time with just the right ‘bite’. The sausages themselves are crazy good just as they are. Heck, I could eat them without putting them on a sandwich to be truthful.

It might sound a little weird but for me, mayonnaise is the way to go. Now, if you’re in the mood for a spicier version, just substitute a hot sausage for the Italian. And maybe even add a pinch or two of cayenne or red pepper flake to the slow cooker.

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

  • Divide mayonnaise between the buns. Don’t be shy, the mayonnaise really makes these dogs even better!
  • Top each bun with a sausage of some of the pepper/onion mixture and enjoy!

I’m usually a crispy-hash-browns kind of guy. I like the potatoes to get that nice little crust on them.  And don’t tell anyone this, I like to put butter on them instead of ketchup. Well, this time I decided to go another route with frozen cubed hash brown potatoes. These slow cooker creamy hash brown potatoes are rich and tasty. They are the perfect breakfast side, whether breakfast is in the morning or for dinner. I’m a big fan of breakfast for dinner. I feel like I’m cheating when I have breakfast for dinner. Like I’m being bad and not getting caught.

For a little kick to your slow cooker creamy hash brown potatoes add diced roasted jalapenos, or use a pepper jack cheese instead of the Colby jack. You can also substitute cayenne pepper for the paprika. It’ll still add the (needed) color and a little spiciness.

Bored of that same-ole, same-ole crockpot corned beef recipe? Well, here ya go! You’re not going to be disappointed with this slow cooker Guinness corned beef. Oh yeah, it’s tender and moist. And, boy oh boy is it ever packed with great flavor. The stout beer adds a tremendous deep flavor to each and every bite. The mustard adds a nice little kick, almost unexpected. And onion. I’m a big fan of onion, and I never hesitate to add it to a dish, be in the slow cooker or a steak marinade. It adds a great flavor to the meat for sure.

Any time I made slow cooker Guinness corned beef it’s going to end up in one place and one place only: between two slices of nice marbled rye bread as a sandwich. On a bun. As a dip. In a wrap. On a cracker. It doesn’t matter how you serve this slow cooker creamy bacon chicken, you’re going to love it. Tender, moist chicken. Creamy cheese. Bacon. Ranch dressing flavors. Bacon. Oh, I said that already. I love bacon. There’s no reason that you couldn’t add a bit more bacon to the crockpot. Kinda slip an extra piece or two in for that extra bacon-y flavor.

I would not be afraid to use jalapeno cream cheese instead of the plain stuff. And I wouldn’t be afraid to add a few squirts of Sriracha or my favorite hot sauce, either. Heck, throw in some diced roasted jalapenos too. You can always make two versions. One nice and mellow and one nice and spicy.

If you want your chicken to have a bit more texture than the shredded version in the recipe, just cut into small cubes instead. Same great taste with a little bit different bite.

Ever order French onion soup at a recipe only to get a bowl with so much cheese you can’t tell whether you ordered soup or a grilled cheese sandwich? Yeah, me too. That’s why I love to make slow cooker French onion soup at home. I can control the cheese. I like mine on top of lightly crusted sliced baguettes. Like crunchy cheese croutons. Perfect on a cold day, this soup is packed with fantastic onion flavor. And the aroma that filled the house while this soup was cooking in the crockpot was absolutely amazing. My stomach was growling all day long!

I like to add a bit of beef base to my slow cooker French onion soup to give it just a bit more beefy flavor. Although it’s completely optional if you use a good homemade beef broth. I felt mine could use a little help in the beefiness flavor department. I used a store-bought beef broth which, though good, needed more flavor for sure. If I’d used a better brand (I admit it, I was being cheap) I could’ve skipped the base.

  • 6 tablespoons unsalted butter
  • 4 large yellow onions sliced thin, rings separated
  • 1 tablespoon sugar
  • 2 cloves garlic minced
  • ½ cup cooking sherry
  • 7 cups beef broth

  • 1 teaspoon kosher salt
  • ¼ teaspoon dried thyme
  • 1 bay leaf
  • 8 slices French bread or 16 slices of a thin baguette

Instructions

  • Melt the butter in a large pot or Dutch oven over medium-high heat.
  • Add the onions and saute about 10 minutes or until translucent, stirring often.
  • Sprinkle with the sugar, stir and reduce heat to medium. Cook 30-40 minutes or until soft and lightly caramelized.
  • Add the garlic, stir and cook 2 more minutes.
  • Stir in the sherry and cook until evaporated, stirring and scraping up any yummy bits on the bottom of the pot.
  • Transfer the onions to a lightly greased slow cooker on low.
  • Stir in the broth, beef base, salt, thyme and bay leave.
  • Cover and cook 8 hours.
  • Place bread pieces under the broiler to get lightly browned. Sprinkle with cheese and place back under the broiler until the cheese is melted.
  • Serve soup in bowls topped with a slice of the cheese bread (or 2 slices if using a small baguette).

Slow Cooker Cheeseburgers

I really wasn’t expecting these slow cooker cheeseburgers to be all that great. Would I get that great cheeseburger taste?  Would they leave me hankering for the real thing instead? I have to admit that I loved them! I thought they were great. Kind of like Sloppy Joes, but they taste just like cheeseburgers. On a cold day they hit the spot and then some. A little ketchup, a little mustard, and a few pickle slices and I was a happy guy!

  • Crumble the ground beef into a large skillet and season well with salt and pepper. Cook until browned..
  • Add 1 clove of the minced garlic, stir and cook another minute. Drain well and transfer to a slow cooker set to low.
  • Add the remaining garlic, Velveeta and onion.
  • Cover and cook on low 6 hours, stirring occasionally. If mixture gets too thick add a bit of milk or water and stir.

For the sandwiches

  • Toast buns if, desired.
  • Divide meat mixture between buns. Add pickle slices and a couple of good skirts of ketchup and mustard. Serve with plenty of napkins!
