Blue Cheese Vinaigrette

  • 1/2 cup blue cheese, grated or finely chopped
  • 1/3 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2/3 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  1. Whisk together the cheese, vinegar, and mustard.
  2. While still whisking add the olive oil.
  3. Season with salt and pepper.
