Bayou Fried Shrimp

These Bayou fried shrimp are absolutely incredible. I’m quite sure that they are the best shrimp I’ve ever made or had. The coating is nice and light, with just a bit of crunch, and a bit of a spicy kick. The shrimp are tender, moist, and cooked perfectly. They are the perfect appetizer, but would be even more insanely good on a shrimp po boy sandwich.

The marinade and coating mixture I used on this Bayou fried shrimp would also be fantastic on other fried seafood, from oysters to any kind of fish. It’s really great stuff, adding flavor to just about anything.

If I’m cooking for a crowd, I’ll break out my big deep fryer. But, if it’s just the two of us, I’ll fire up my Fry Daddy fryer. It’s the perfect size for both of us. It fries everything perfectly. And as an added bonus, it doesn’t use a lot of oil, which saves me money.

Bayou Fried Shrimp

Ingredients

Instructions

  • Place shrimp into a resealable container or baggie.
  • In a large bowl whisk together the buttermilk, egg, mustard and 1 teaspoon of Creole seasoning.
  • Pour mixture in with the shrimp, seal, and shake gently to coat.
  • Refrigerate for 1 hour.
  • Whisk together the fish fry mix and remaining Creole seasoning.
  • Heat 3″ of oil in a Dutch oven to 325 F.
  • Working in batches, remove shrimp from container. Shake off excess marinade then transfer to the fry mix. Roll and coat. Shake off an excess coating and place in hot oil.
  • Fry shrimp 1 1/2 minutes per side then transfer to a wire rack or paper towel-lined plate to drain and cool.
  • Serve with your favorite dipping sauce or on a po boy.

Bayou Sloppy Joes

It doesn’t take much to kick up a normal ole Sloppy Joe dish and make it something special. Add some bold Bayou-inspired flavors, take a bite, and you’ll be asking yourself why you didn’t make this a lot sooner. And there’s no reason to be shy with the hot sauce, either. I usually make a double batch of these Bayou Sloppy Joes and freeze some for later. It’s perfect for a quick lunch.

If you aren’t a big fan of hot sauce, just substitute a few splashes of Worcestershire sauce. No harm, no foul! These Bayou Sloppy Joes are great either way.

I like to use my good ole trusty Dutch oven to make these Sloppy Joes and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

Instructions

  • Brown the ground beef in a large skillet over high heat.
  • Drain any excess fat.
  • Add all of the remaining ingredients except for the buns. Stir.
  • Reduce heat to a simmer, cover, and let simmer for 30 minutes, stirring occasionally.
  • Stir in more hot sauce as desired.
  • Serve on buns.

Bayou Blast Wings

I fired up my Big Easy with the Wingin’ator 3000, made these fabulous spicy Bayou Blast wings with buffalo dipping sauce, and kicked back and enjoyed a great meal. There’s a little heat from the wings, but not too much. And that dipping sauce! Oh me!

Bayou Blast Wings

I’ll eat wings any time, anywhere, but I enjoy wings off my Char-Broil Big Easy the most. It is the easiest tool in my grilling stable, though technically it isn’t a grill at all. It’s a load-and-go cooker so it doesn’t require constant attention or checking. It makes making Bayou Blast Wings easy.

I’m a big fan of Cholula hot sauces for dishes like this.
