Copycat Taco Bell Nacho Fries

Who wants boring frozen fries? Not me! Not you! In just minutes you can transform that bag of sadness into something great with this copycat Taco Bell Nacho fries. Spicy (as spicy as you want) seasoning that’ll wake you up and make you forget those tasteless fries of yesterday. And the cheese sauce! Oh my! Double the recipe and you’ll thank me, because you seriously cannot get too much of the sauce on your fries!

Copycat Taco Bell Nacho Fries

For my copycat Taco Bell nacho fries I used crinkle fries. That’s not what you’ll get at the fast food joint. Why did I commit such a heinous crime? Well, those crinkles hold more cheese sauce and the cheese sauce is yummy! Old school skinny fries aren’t going to give the glorious sauce as much to cling to. Go crinkle and get happy, I say!

I admit that at first, I was pretty sure I didn’t want or need an air fryer. Heck, I can bake my fries in my oven. I can cook my wings on my grill. Yes, I made a lot of excuses for not getting one. Well, the neighbor gave me one of her old ones and I’ve never looked back! I used to to cook these copycat Taco Bell nacho fries!

I use a pretty straight-forward air fryer, that doesn’t have a lot of bells (ok, it has a bell for when the timer goes off!) and whistles. It gets the job done.

Ingredients

For the seasoning

For the cheese sauce

  • 1 cup Cheez Whiz cheese dip
  • ½ cup whole milk
  • 1 tablespoon brine plus 2 teaspoons, from pickled jalapeno slices
  • 1 pinch ground cayenne pepper

For the fries

  • 2 pounds Ore-Ida Golden Fries frozen French fries or your favorite kind

Instructions

For the fries

  • Prepare the fries according to the bag. I recommend making them in an air fryer or deep fryer to get them good and crunchy. While the fries are cooking, making the seasoning and sauce.
  • Transfer the cooked fries to a large bowl and sprinkle with the seasoning blend (using however much or little as you want, you might have leftover seasoning). Toss lightly to coat. Serve with the warm cheese sauce on the side.

For the seasoning

  • Combine the ingredients in a small bowl. I like to put them in a resealable container, close the lid, and shake gently to combine.

For the cheese sauce

  • Heat a small saucepan over medium-low heat. Add the cheese and heat through. Whisk in the remaining ingredients. Keep warm until needed, stirring occasionally.

Beer-Cheese Sauce

I made this great beer-cheese sauce the other night and poured it all over grilled hamburgers. The end result was crazy good. And even better was the fact that any of the cheese sauce that dripped off was immediately sopped up by hot-out-of-the-oven fries. Next time I’ll make extra sauce and pour some over the fries.

This sauce is also great for dipping warmed pretzels. Trust me. I did it. And it’s also great over grilled hog dogs. Anywhere you need cheese sauce, you need beer-cheese sauce.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Also try my other version of beer cheese sauce. Same great flavor, but a little creamier and thicker. Ideal for just about anything, including as a dip!

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon ground mustard
  • ¾ cup beer more or less depending on the desired consistency
  • ½ cup half-and-half cream
  • 1 ½ cups extra sharp cheddar cheese grated
  • 1 tablespoon prepared horseradish
  • green onions chopped, for garnish

Instructions

  • Melt the butter in a medium saucepan over medium heat.
  • Whisk in the flour and mustard powder and cook for 1-2 minutes or until the flour is cooked but not brown.
  • Whisk in the beer and bring to a simmer.
  • Whisk in the half-and-half and let simmer, whisking constantly until thickened. If too thick, add more beer in very small amounts.
  • Add the cheese and horseradish and stir until melted.
  • Fold in the chives or green onions and serve.

Nacho Cheese Sauce

This is my go-to easy nacho cheese sauce. It’s great over hot dogs (such as the awesome grilled San Antonio hot dogs shown below). It’s also fantastic as a dip, drizzled over steamed veggies, over baked potatoes, on burgers. Just about everything needs this sauce. Add chili to make a great chili sauce for fries. Or, add salsa for a fantastic dip.

Add just a little cayenne or chopped pickled jalapenos to your sauce. Or chipotles in adobo sauce or your favorite hot sauce (Sriracha is awesome in a cheese sauce!) to this nacho cheese sauce for a little kick.

  • 2 tablespoons unsalted butter

  • 7 slices processed American cheese
  • ½ teaspoon salt

Instructions

  • Melt butter in a medium saucepan over medium heat.
  • Add in the flour and stir. Cook for 2-3 minutes.
  • Slowly pour in the milk and stir until thickened.
  • Break the cheese into smaller pieces and add to the pan along with the salt.
  • Stir until the cheese has melted completely, 10-15 minutes.
  • Add more milk if the mixture gets too thick.

We had our grilled cheesy chicken over egg noodles, but you could serve it over rice, pasta… or just eat it all by itself! The cream cheese sauce is so good that it is perfect just over noodles as a side dish. Any good white melting cheese will work great in the sauce. Our favorites are Gruyere or Fontina. A combination of your favorites will also be excellent!

Get yourself a good set of grill tools for these corn pops and anything else you grill. You won’t regret the extra few bucks they cost over the cheap ones that you’re going to have to replace in a few years. I have had several sets of Weber tools for decades and have yet to replace a single one.

  • Brine the chicken per instructions.
  • Fire up a grill for direct and indirect cooking.
  • Sear the chicken over direct heat then move to indirect heat to continue cooking to 165 F. Remove from heat.
  • Heat chicken stock in a medium saucepan. Do not boil.
  • Reduce heat and slowly stir in the cream and mustard. Stir well and continue cooking until thick, about 5 minutes.
  • Remove pan from heat and add in the cheese. Stir until melted.

Cheese Sauce

This is my go-to, super easy, cheese sauce. I use it mostly on vegetables, and often on baked potatoes. It’s also great on hot dogs and hamburgers. You need a cheesy sauce, this is the one. It has just the right consistency. You don’t want it too runny. You don’t want it to be all gloppy. This is right down the middle, perfect.

Cheese Sauce

Substitute a Monterey Jack cheese for a nice white sauce, or pepperjack for something a little kicked up. You can also add things like chopped roasted chiles or jalapenos to give it even more heat.

This sauce is the boss on my cheesy mushroom baked potatoes and my cheesy broccoli baked potatoes.

  • Heat 3/4 cup of the milk in a small saucepan over medium heat until it starts to steam, stirring often.
  • In a coffee cup or glass, mix together 1/4 cup of milk and all of the flour until the flour is completely dissolved and the mixture is smooth.
  • While stirring, slowly pour the milk and flour mixture into the heated milk. Keep stirring until the mixture comes to a boil and is nice and thick.
  • Remove from heat and stir in the cheese until melted.
  • Add salt and cayenne pepper, to taste.
