Creole Beef Debris Po Boy

This Creole beef debris po boy came out absolutely outstandingly good. The meat is fall-apart tender with a deep beefy flavor that is boosted by a simple roux. The beef takes a while to cook, but it is oh so worth it, and as an added bonus, your house will smell terrific while it is cooking! This is the perfect cold-weather recipe. You’re rewarded in the end with the best sandwich meat you can find. Yeah, you could eat it more like a pot roast, but for me, the real winner is a po boy. I just cannot get enough of that great flavor and the delicious juice-soaked bread. It makes for a messy sandwich, and messy is always good!

I served the Creole beef debris po boy on toasted bread, topped with Chez John’s Kaw-Cajun Comeback sauce. It was a dripping, messy, fantastic sandwich. Remember my rule: the messier, the better and this sandwich is absolutely perfect. Like my Drunken Cajun chicken po boy.

Creole Beef Debris Po’Boy

Ingredients

For the Creole beef debris

For the po’boys

  • 4 loaves French bread halved lengthwise
  • Kaw-Cajun Comeback sauce
  • 2 tomatoes sliced
  • ½ head iceberg lettuce shredded
  • 1 red onion sliced thin

Instructions

For the Creole beef debris

  • Preheat oven to 425 F.
  • Warm all of the beef broth in a pot over low heat.
  • Heat 1/2 cup of the oil in a large Dutch oven over medium heat.
  • Sprinkle the oil with flour and whisk continuously, 15-20 minutes or until the roux has turned the color of chocolate.
  • Slowly whisk in 6 cups of beef broth. Bring to a boil then reduce to a simmer and let simmer 5 minutes.
  • Strain roux through a wire-mesh strainer and reserve.
  • Wipe out the Dutch oven. Add remaining 1/2 cup of oil over medium-high heat.
  • Working in batches, sprinkle chuck with Creole seasoning and sear until brown. Remove to a bowl or large plate.
  • Add the onions to the Dutch oven along with 1 cup of water. Saute 12 minutes, stirring often.
  • Add the pepper, celery and garlic.Saute 5 minutes.
  • Add the tomato paste and hot sauce, if desired, and saute 3 minutes.
  • Add remaining 2 cups of beef broth and stir, simmering, for 5 minutes.
  • Add meat to pot.
  • Add the roux mixture.
  • Stir gently. Add water, if needed, to completely cover the meat.
  • Cover the Dutch oven and bake for 20 minutes. Note: If your Dutch oven lid doesn’t fit tightly, cover the pot with a piece of aluminum foil and then add the lid.
  • Reduce heat to 200 F and bake for 8 hours.
  • Remove from oven. Skim off any fat on the top.
  • Remove beef to a cutting board, let cool slightly, and shred.
  • Bring gravy mixture to a boil and simmer for 20 minutes, stirring often, until thickened.
  • Add the meat back along with the green onions.
  • Stir and serve.

For the po’boys

  • Lightly toast the bread, if desired.
  • Slather the bread halves with the Comeback sauce. Don’t be shy with it.
  • Add meat, tomatoes, lettuce and onions.Cut each loaf into 3 sandwiches.
  • Serve with lots of paper towels.

Creole Roasted Potatoes

I could probably eat andouille sausage all day long. I just love that great smoky, garlicky, oniony flavor. And it has a great texture. Not mushy. Sometimes andouille is a little hard to find here, so I end up substituting smoked sausage or even kielbasa. That’s ok, because no matter what sausage you use in these Creole roasted potatoes, it’s going to come out fantastic.

Spicy Creole Remoulade

This spicy Creole remoulade is fantastic on crab cakes, or slather it on a bun for a great po’ boy! There’s some kick from the horseradish and mustard … and hot sauce! This is not some light, laid-back, weak remoulade at all! It packs a lot of flavor. It’s my go-to sauce when I want something ‘lively’.

This spicy Creole remoulade is also great on my crab cakes with shrimp! The creaminess and spiciness works fantastic with crab. And shrimp. Or put it on a hoagie next time you make a big ole cold-cut sandwich or burgers. It’s so much better than adding a plain-old sauce. Just slather it on the insides of the bread or buns!

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

Creole Crab Cake Sliders

I love Marguerite’s blog, Cajun Delights. I’m a big fan of food with great flavors (duh!) and a little kick. These Creole crab cake sliders are also very tender and juicy. They have a nice crunch to them too. And despite all the ingredients you still get that wonderful crab flavor. Crab cakes without crab flavor aren’t crab cakes in my opinion!

You can serve these Creole crab cake sliders with or without the buns. I thought they’d make them a little different. Oh, and be careful when you flip the crab cakes in the pan. They’re very tender and can fall apart on you if you’re not gentle.

  • Mix the mayo, mustard, bell pepper, green onion, parsley, garlic, Worcestershire sauce and Creole seasoning in a large bowl.
  • Add in the crab meat and bread crumbs and combine gently.
  • Heat the oil in a large skillet over medium-high heat.
  • Form the crab mixture into patties about 3″ wide and an inch thick. Add to skillet and cook until golden brown, 3-4 minutes, on each side.
  • Serve on lightly toasted buns, topped with plenty of the remoulade.

Creole Pizza

This started out as an attempt to make Cajunlicious’ Cajun Calzones, but I failed at getting the calzones to seal correctly, so I went with Plan B – Creole pizza, and I have to say, these were darned tasty good! Tremendously flavorful and packing a nice spicy punch, each bite is fantastic. And different.

Andouille sausage on a pizza is fantastic. It’s a nice change from your usual pepperoni or Italian sausage. The Creole meatball sauce is quite tasty, like a regular pizza sauce but with the addition of celery, bell pepper and a little Creole seasoning.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

I always use my fantastic Creole meatball sauce when I make this pizza.

  • 1 pizza dough
  • 1 tablespoon butter melted
  • ½ teaspoon Creole seasoning
  • ¼ teaspoon garlic powder
  • ½ cup Creole meatball sauce
  • 1 Andouille sausage lightly browned, sliced thin
  • ¼ cup green bell pepper sliced thin
  • ¼ cup red bell pepper sliced thin
  • ¼ cup sweet onion sliced thin
  • Mozzarella cheese shredded

Instructions

  • Preheat oven per dough instructions. Roll out dough on a lightly floured surface.
  • Stir the Creole seasoning and garlic powder into the butter and brush onto the dough.
  • Add the sauce and top with remaining ingredients.
  • Cook as the dough instructions say.

Creole Meatballs and Spaghetti

We’ve really been enjoying the big batch of Creole meatballs we made. As appetizers, on subs and over pasta, they are tasty and my favorite part, they have kick! This Creole meatballs and spaghetti came out quite tasty, and it definitely has some great spicy kick to it.

Our Creole meatballs are so tender and tasty. Definitely not bland like plain old meatballs. Topped with a great spicy tomato sauce, this is a great dinner dish. Just add some of our Gotta-Have-It garlic bread and a little salad on the side, and you’ll be in heaven!

This is the sauce I use on my Creole meatballs if I am serving them over pasta or on meatball sandwiches. The meatballs already have some kick, so this sauce is a little more mellow. But, if you want more heat, just substitute Rotel tomatoes for the diced tomatoes and pucker up!

I make a big batch of these Creole meatball appetizers, so I usually end up doubling the amount of sauce I make. Oh, and if you can’t find Creole mustard, use a good grainy mustard and add just a tad more vinegar. If you aren’t a fan of liquid smoke you can leave it out. If you still want a bit of smokiness add a few good-sized pinches of chipotle powder.
