Ham and Egg Sandwiches

My wife proclaimed this to be the best egg salad she’s had. I’m surely not going to argue with her, either. It’s light, fluffy and tasty, and goes perfectly with thin-sliced ham. Nothing fancy here, just great ham and egg sandwiches. The original recipe was meant to make finger sandwiches, which you could do, but if I’m coming I’d prefer the full-sized version, please!

Ham and Egg Sandwiches

I chopped the ham to give it more of a shaved ham feel, a little lighter than just sliced ham. I think it went better with the airy egg salad. You don’t have to do that, and in fact, you really don’t need the ham at all. No matter how you do it, these ham and egg sandwiches are a delight.

I absolutely stink (best word I could think of) when it comes to making boiled eggs. Hard or soft, doesn’t matter. I am egg challenged. So I picked up a little cheap egg cooker like the one below. This lil baby cranks out 6 eggs in about 15 minutes and they’re perfect each and every time! I don’t even feel bad any more that I just cannot make boiled eggs!

Ingredients

Instructions

  • Place the eggs into a large bowl. Mash with a potato masher.
  • Add the mustard powder, salt and pepper, mayonnaise and parsley and mix well. Add more mayonnaise if the mixture is too thick to spread.
  • Divide the egg mixture between 6 pieces of bread.
  • Divide the ham between the sandwiches.
  • Divide and spread the Dijon onto one side of the remaining bread slices and place on top of the sandwiches.

Delicious Egg Salad

I fire-roasted a batch of eggs on my Char-Broil Big Easy the other day. Why? Well, first to see if I could, and second, to make a delicious egg salad for sandwiches for the week’s lunches. Of course you can use regular old stove-top boiled eggs just as well. Or microwaved. Well, I’m not sure about that. I’ve never microwaved eggs.

Just like chicken salad, this delicious egg salad is so easy to put together and the result is so good. Nothing makes for a better, quick lunch. Oh, and don’t be afraid to add a pinch or two of cayenne to your salad for a bit of a kick.

Egg Salad

Ah, yummy egg salad! Perfect on crackers. Or as a sandwich. Or, on a hot dog! Yes, trust me. It’s fantastic! The coolness really contrasts the hot all-beef dogs. Believe it or not, I made this just for topping my deli hot dogs. You won’t believe how well a hot-of-the-grill dog and this cold egg salad go together.

When I am feeling particularly adventurous, I roast eggs on my Char-Broil Big Easy. It’s easy, and makes for a great salad. If I’m feeling doubly adventurous I’ll use smoked eggs.

I don’t recommend using light mayonnaise when making this or any mayonnaise-based salad for that matter. Grab the real stuff. For me, that’s Duke’s.

  • Gently place the eggs into a saucepan. Add enough cold water to just cover the eggs.
  • Bring to a boil over high heat. Remove from heat and cover. Let set for 12 minutes.
  • Rinse eggs in cold water. Peel and chop coarsely.
  • Place eggs in a medium bowl.
  • Stir in the mayo, mustard and green onion.
  • Add salt and pepper to taste and paprika. Stir.
  • I prefer to let the salad chill for a few hours before serving, but that’s just a personal preference.
