Cajun Shrimp-Stuffed Poblano Peppers

Wow, talk about amazingly good. The heck with the main dish, just load me up on some of these Cajun shrimp-stuffed poblano peppers. A slight kick of heat, perfect shrimp and creamy melted cheese. What’s not to love?

Cajun Shrimp-Stuffed Poblano Peppers

You could use green bell peppers instead, if you want, in these Cajun Shrimp-Stuffed Poblano Peppers. I love poblanos because they are a little spicier than a bell pepper without just completely drowning out a dish in heat.

For extra kick, substitute shredded pepper jack cheese for the feta and mozzarella and add a few diced roasted jalapenos into the shrimp mixture. That’ll definitely liven up the party.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Ingredients

  • 2 large poblano peppers
  • ½ pound shrimp raw or pre-cooked, 24-30 count, peeled, deveined
  • 1 teaspoon olive oil if you are using raw shrimp
  • 1 tablespoon Cajun seasoning
  • ¼ cup feta cheese crumbled
  • ¼ cup Mozzarella cheese shredded
  • 2 teaspoons dried basil crumbled
  • 1 tablespoon hot sauce
  • cilantro chopped, for garnish

Instructions

  • Note: You can use pre-cooked shrimp if you desire. Just toss the shrimp with the Cajun seasoning and do not cook.
  • Preheat oven to 375 F.
  • Cut the peppers in half lengthwise. Remove any stems or seeds.
  • If using cooked shrimp, toss the shrimp with the Cajun seasoning in a large bowl.
  • If using raw shrimp, heat the oil over medium-high heat in a skillet. Add the shrimp, sprinkle with the seasoning, and cook, turning, until done, about 5 minutes. Remove from heat.
  • Add the cheeses, basil and hot sauce to the shrimp Stir.
  • Transfer shrimp mixture to the poblanos and place on a baking dish.
  • Place in oven and bake 30 minutes or until the cheese is melted and the peppers are softened.
  • Serve garnished with chopped cilantro.

Roasted Cauliflower on the Char-Broil Big Easy

As much as I use my Big Easy to cook up fantastic chicken, I also use it just as much for side dishes. This roasted cauliflower on the Char-Broil Big Easy came out absolutely delicious. Tender and flavor-packed, with just a hint of smokiness from the bacon. And as with anything I cook on my Big Easy, it was easy to make.

Roasted Cauliflower on the Char-Broil Big Easy

Make sure when you pick out the head for your roasted cauliflower on the Char-Broil Big Easy. Don’t get a really big one or it won’t fit into the cooker. Shoot for one that is about 8″ wide. Or if you prefer, try my recipe for roasted cauliflower florets.

For a little kick don’t be afraid to add a few pinches of dried red pepper flake to the chicken broth as you cook the cauliflower. It won’t be overwhelmingly hot, but it’ll give you a slight hint of heat.

You can roast cauliflower in the standard basket that comes with the Big Easy or a bunk bed basket (lined with foil to keep the liquid in), or the Big Easy cooking rack.

Instructions

  • Place the cauliflower in a pot and add the chicken stock.
  • Add the thyme and bay leaves.
  • Bring to a boil and reduce heat to a simmer. Simmer for 12 minutes.
  • Drain but reserve some of the cooking liquid.
  • Fire up your big easy.
  • Place the cauliflower into a pie pan and place into the cooking rack.
  • Pour 1/4 cup of the cooking liquid over the cauliflower.
  • Pour half of the butter over the cauliflower.
  • Sprinkle with more thyme and a few pinches of salt and pepper.
  • Place rack into the Big Easy and cook 10-15 minutes or until the cauliflower starts to turn golden in color.
  • Remove from cooker and drizzle with remaining butter.
  • Transfer to a serving platter and sprinkle with bacon and more thyme, salt and pepper to taste.

Baby potatoes have such a wonderful creamy sweetness to them. I love them roasted so the skin gets just a bit crispy. They pop when you bite into them. The Big Easy is the perfect cooker for making a lot of things, and these Fire-Eater potatoes on the Char-Broil Big Easy are just one of them. Roasted potatoes hit with a nice seasoning mix that brings a little heat to offset the sweetness.

You can substitute any rub or seasoning mix you desire, but you might want to shy away from any that contain a lot of sugar which might burn in high heat. These Fire-Eater potatoes on the Char-Broil Big Easy do cook quickly since they are smaller, but keep an eye on them if you do use a sweeter spice mix. For a little more mellow (but still super yummy!) potato using the Big Easy, try my roasted baby potatoes.

  • Fire up your Big Easy.
  • Place the potatoes in a large bowl.
  • Drizzle with just enough oil to lightly coat the potatoes.
  • Add the Fire-Eater seasoning and toss to coat.
  • Add potatoes to your Big Easy and lower into the cooker and cook until tender, 15-20 minutes depending on the size. I use a long bamboo skewer to poke the potatoes to test for doneness.

Mmmmmm. Tasty, moist, tender chicken. Montreal seasoning combines many of my favorite things: garlic, coriander, black pepper, cayenne pepper, dill seed, and salt. I made my Montreal chicken on the Char-Broil Big Easy since it makes perfect chicken every single time. In fact, I cooked 6 chickens on one of my Big Easy’s just the other day.

It’s optional, but I went the beer can route with my Montreal chicken on the Char-Broil Big Easy. It’s not any harder to do on the Big Easy than ‘regular’ chicken. Just add a bit of seasoning to an open beer can, insert, and cook. That’s it. The Big Easy cooks chicken just great without the beer can, believe me, but it does add a little coolness factor and flavor.

If you’re not a fan of beer, don’t fret. Soda works just as well. For Montreal chicken, I’d lean towards something like root beer or maybe a ginger ale.

  • Fire up your Big Easy.
  • Rinse the chicken and pat dry.
  • Lightly brush the chicken with olive oil.
  • Generously sprinkle the chicken with the seasoning.
  • If opting to make beer can chicken open the can and drain (er… drink) about 1/4th of the beer. Add a heaping teaspoon of seasoning to the beer. Insert beer can into the bottom of the chicken.
  • Place chicken into the basket and insert into the Big Easy.
  • Cook for 15 minutes per pound or until the chicken has hit 165 F as measured in several locations.
  • Let rest 15 minutes before removing the beer can (if using) and carving.

Notes

I use the Char-Broil folding chicken roaster to hold the beer or soda cans securely. If the beer you’re using is only available in a bottle, just empty the contents into an empty beer or soda can.

Roasted Harissa Cauliflower

So long and goodbye to boring cauliflower. Bring on the spiciness of harissa, a Mediterranean hot chile pepper paste that is so flavorful I’m quickly finding myself using on just about everything. Rubbing the paste on a head of cauliflower and roasting it results in an unbelievably tasty side dish. The heat gets tamed a bit (but it’s still there), leaving you with a wonderful garlicky, earthy bite. Roasted harissa cauliflower is quite possibly the perfect side dish (and it’s low in carbs too!).

You can make the roasted Harissa cauliflower in the grill too, just place the harissa-covered head directly on a hot grill over indirect heat and cook until tender. I prefer to poke it with a long skewer to check for doneness. Specially when grilled over charcoal, the cauliflower will also get a nice light smoky flavor along with the taste of harissa. And don’t hesitate to make more than one head at a time. The leftovers are just as good as (and maybe a bit better) than the night you make them. The harissa flavors penetrate the cauliflower even more overnight. For a little citrus flavor, squeeze fresh lemon over the roasted cauliflower just before serving.

  • Preheat your oven to 375 F. You can also roast the cauliflower on a grill over indirect heat.
  • Bring a large pot of water to a boil.
  • Remove any leaves from the bottom of the head of cauliflower but do not remove the stem.
  • Lower the head into the boiling water and return to a boil and boil for 4 minutes.
  • Remove and let cool.
  • Rub harissa paste over the cauliflower. No need to be shy.
  • Transfer the cauliflower to a sheet pan and place in the oven for 20-30 minutes until softened. I used a small sharp knife to test for doneness by poking the stem.
  • Remove and serve.

Downtown Roasted Chicken on the Char-Broil Big Easy

Any day that ends in the letter ‘y’ is a good day to roast up some chicken in my Big Easy. A few hours in a flavor-packed marinade, one hour on the cooker, and we sat down to enjoy some fantastic downtown roasted chicken breasts on the Char-Broil Big Easy. The chicken is moist and tender with just a hint of spiciness and smokiness. I used bone-in chicken breasts, but any chicken cuts (or even a whole chicken) would work just fine.

I removed the skin because the marinade is going to keep it from getting crispy. Also, no skin means that the marinade soaks in deep, making sure each bite of downtown roasted chicken on the Char-Broil Big Easy is full of flavor. The marinade would also be fantastic on steaks.

When using a marinade and cooking on the Big Easy I like to lay my chicken flat so that the marinade doesn’t fun off. If you are using the basket that comes with the Big Easy you can easily cook two breasts at a time. Add the bunk bed basket and you can cook four.

  • 4 chicken breasts split bone-in ,skin removed

For the rub

Instructions

  • Place the chicken in large resealable bag or container.
  • Place all of the rub ingredients into a blender and process until smooth.
  • Pour marinade over chicken. Close the container and toss gently to coat.
  • Refrigerate for 1 hour.
  • Fire up your Big Easy.
  • Remove the chicken from the container and place into the Big Easy basket.
  • Place into cooker and cook until the chicken hits 165 F, about 1 hour.

Herb Roasted Mushrooms on the Char-Broil Big Easy

The cooking rack for the Char-Broil Big Easy (sadly, no longer available!) is a definite must-have accessory for the cooker. I use it to cook everything from French fries to nachos. And yep, even herb roasted mushrooms on the Char-Broil Big Easy. I often remove the racks themselves and add 9″ pie pans (you can leave in the racks and use 8″ or smaller pie pans). Then I’m off and running.

Everything comes out great. And since I have more than one Big Easy I can cook a main dish in one (like fantastic roasted chicken) and a side or two in the other! Score!

Spiralized Roasted Pickled Beets

If you would’ve put beets in front of me when I was a kid I would’ve said “Ewwwww” and pushed them away. Now, I find that I really like them, specially when roasted. Or pickled. Or even better, spiralized, roasted, and pickled! The aroma as the beets roast is fantastic. Spiralized roasted pickled beets are amazing.

The shallots and rosemary combine with the beets for something really special. They then go into jars with a brine, but not a normal pickling brine. The addition of red onions and tarragon add so much to the beets. Even beet haters will love them!

Make sure you wear kitchen gloves when handling the beets, and clean your spiralizer (and cutting board) immediately after using them. Roasted spiralized pickled beets can be messy.

I also learned quickly that you want to use beets with a little ‘give’ to them – not too hard. A few that I grabbed were hard to spiralize, and I ended up turning them by hand instead of using the crank. No worries, they still came out fantastic! Lesson learned!

Spiralized Roasted Pickled Beets

For the roasted beets

  • 6 medium beets cleaned, peeled. Try to select beets that are slightly soft. Tougher beets will be difficult to spiralize.
  • 2 large shallots peeled, sliced thin
  • 2 sprigs rosemary or 1 teaspoon dried rosemary, crushed
  • 2 teaspoons olive oil

For the picking brine

Instructions

For the roasted beets

  • Preheat oven to 400 F.
  • Note: I like to cut a small slit down the sides of the beets. This produces a single half moon spiral.
  • Spiralize the beets. Tougher beets can be difficult to spiralize. Make sure you put the root side into the spiralizer first and have the stem side towards the crank.
  • Wash your spiralizer to keep it from staining.
  • Place beets onto a large piece of foil. Top with the shallots, sprinkle with rosemary, and drizzle with oil.
  • Seal the foil tightly and place into the oven for 30-40 minutes or until tender but not mushy. Be careful opening the packet as the steam will be hot.
  • Let cool completely before pickling.

For the picking brine

  • Bring vinegar, tarragon, salt, sugar and water to a boil in a medium saucepan. Stir until the sugar is dissolved. Remove from heat and let cool completely.
  • Alternative beets and onions in jars.
  • Pour in the brine. Add more water if necessary to completely cover the beets.
  • Seal and store in the refrigerator for at least 3 days before serving.

Roasted Vegetable Stuffed Mushrooms

These roasted vegetable stuffed mushrooms may be one of my favorite summertime grilling ideas. It doesn’t really matter what vegetables you use, either. Just grab whatever vegetables are in season at the store, roast them on the grill, then spoon them into large mushroom caps. Add a bit of seasoning, a little cheese, place onto a cedar plank over a hot fire, and in no time at all you’ll have a great side dish.

Grilling (I usually use my Weber grill) on cedar planks can be a sensitive subject. Some folks really don’t care for it, others, like me, love it. I like the light flavor the planks can add (I tend to not get my planks super smoky before adding my food). And it looks cool. And it makes the deck area smell great.

I have to admit that I’m cheap, so I re-use planks as much as I can. As long as you don’t burn them too much on one side, you can get a few uses from them. Don’t buy any el cheapo cedar planks for this or any other dish. Get the good stuff and you won’t ever look back. Cheap planks split, warm and have splinters. Good planks are thicker, stay flat and have smoother edges.

These roasted vegetable stuffed mushrooms may be one of my favorite summertime grilling ideas. It doesn’t really matter what vegetables you use, either. Just grab whatever vegetables are in season.

  • Soak the cedar plank in water, if using.
  • Fire up your grill for high-heat cooking.
  • Lightly brush the peppers (I used whole peppers and saved the rest for later use) and corn with oil.
  • Place over high heat and roast, turning often, until lightly charred and just tender.
  • Remove from heat, let cool slightly, then chop the peppers and cut kernels from the ear of corn.
  • Place vegetables into a bowl and season with oregano (if desired) and salt and pepper, to taste.
  • Add the cedar plank and let it get hot and smoky, about 20 minutes.
  • Reduce grill heat to medium.
  • Using a spoon, gently scrape out the gills from the mushrooms.
  • Lightly brush both sides of the mushrooms with oil.
  • Place mushrooms on grill cap side up and grill 3 minutes. The mushrooms will start to sweat, but do not overcook them.
  • Remove from heat and place onto the cedar plank.
  • Spoon the vegetable mix into the mushrooms and place onto the grill.
  • Grill for 20 minutes or until the mushroom is almost tender, watching to make sure the plank doesn’t catch on fire. If it does, spray it with water from a spray bottle.
  • Add cheese and cook another 3-4 minutes until melted.
  • Remove from heat, garnish with chopped cilantro, and serve.

Roasted Beets on the Char-Broil Big Easy

Now, sure you can roast beets in your oven. Or even on your grill. But if you have a Char-Broil Big Easy, you should use it instead. The Big Easy is one of the best and easiest outdoor cookers you can find. No mess. No fuss. Perfect for everything from chicken to pies to yes, beets. Just brush the beets with a little oil, vinegar and spices and into the cooker. An hour or so later, perfectly roasted beets on the Char-Broil Big Easy.

After the beets cooled I peeled them and sliced them for topping a great side salad. These Roasted Beets on the Char-Broil Big Easy were perfect!

Using beets that are roughly the same size will ensure that they all get done at the same time, a big plus.

To make these beets on the Char-Broil Big Easy I used a bunk bed basket. It lets me double or even triple the amount of cooking space I have.

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

  • Fire up your Big Easy.
  • You can peel your beets before or after cooking. It’s easier to peel them first, but I think they stay moister if you peel them after they cook.
  • Cut the root end off so that the beets stand straight up.
  • Combine remaining ingredients and brush onto the beets.
  • Place beets into the Big Easy basket and lower into the cooker.
  • Roast for about 60 minutes or until beets are tender but not mushy.
  • Let cool before peeling and slicing.
