Garlic Sriracha Dry Wings

I’m a huge fan of making chicken wings without saucing them in the traditional Buffalo wing manner. I season them and let them marinate for a bit, then cook them. When they are done I toss them with more seasoning and serve them ‘dry’, with a dipping sauce on the side. This time I used the Garlic Sriracha seasoning from Weber, which is a little spicy, for some garlic Sriracha dry wings. Dry doesn’t mean flavorless. In fact, it means quite the opposite!

These garlic Sriracha dry wings came out absolutely fantastic. There’s enough spicy kick to wake you up. The garlic adds a really great almost earthy flavor. I cooled them off with just straight-up Ranch dressing for dipping. Also try my blackened dry wings.

Sriracha Bacon

I’ve been really enjoying making bacon at home. It has turned out to be much easier than I ever imagined, and definitely tastier than I ever dreamed. Although the process takes over a week, it’s so easy you won’t even notice it. I started by making applewood maple bacon, and have since expanded my bacon horizons, including making this great Sriracha bacon.

This bacon isn’t overly spicy, so don’t fear the Sriracha. Sriracha has such a great flavor, and it really isn’t overwhelmingly hot (well, to me at least). The bacon definitely has Sriracha flavor, and color. Add more Sriracha to the recipe if you want it spicier, but I felt the amount I used was just perfect for us.

Sriracha bacon is absolutely fantastic. Not only on burgers, but also on BLT sandwiches. Or for breakfast. Heck, just grab a piece and eat it as a snack.

I prefer to use fruit or nut woods when I smoke unless I want a heavier smoke flavor. Pecan, apple or cherry are my favorites. I used apple for this bacon.

Sriracha Bacon

  • Put the belly into a large resealable bag.
  • Whisk together the remaining ingredients in a medium bowl. Add to the baggie.
  • Seal the bag, trying to remove as much air as possible. Place in to a deep flat pan (in case the bag leaks) in the fridge for 7 days, flipping over twice a day.
  • The day you are ready to smoke, fire up your smoker for 225 F cooking over a light wood such as apple.
  • Remove belly from the bag and rinse well with cold water.
  • Place belly onto smoker and smoke for 1 1/2-2 hours or until the meat reaches 150 F.
  • Remove belly from smoker and let cool slightly before placing in the fridge for an hour.
  • Slice bacon as desired. Bake, pan fry, or use however you wish!
  • Store smoked bacon in a plastic bag or container in the fridge for up to 2 weeks.

Notes

Scale the recipe for your pork belly. The recipe is for a 2 pound belly.

Sriracha Bugles

I made Ragin’ Cajun Cheddar Ranch Bugles and they ended up being a huge hit. Everyone loved them. Bugles are so yummy and addicting. Sriracha hot sauce is also yummy (spicy) and addicting. So I decided to combine the two into a single terribly good snack – Sriracha Bugles.

I made these just hot enough for people to notice. Sriracha has such a great spicy flavor, but some folk might be afraid of it. So, I added enough flavoring so it’ll be noticed, but not so hot that people are running around screaming about their mouths being on fire. Of course, if I was making a batch of Sriracha Bugles just for myself I would probably double or triple the amount of seasoning.

Sriracha Oyster Cracker Bites

After making (and devouring) a big batch of my Sriracharitos (Sriracha-flavored tortilla chips) the other day, I still had Sriracha snacks on the brain. I noticed a bag of oyster crackers in the pantry, so the next step was pretty obvious: Sriracha oyster cracker bites. Easy to make, and addicting as anything you can imagine. A great crunch and of course, a little Sriracha kick. Don’t like a lot of heat? Just cut back on the amount of spice mix. But, I think more is definitely better on these snacks.

Sriracharitos (Sriracha Doritos) with Dip

Like just about everyone these day, I’m a really big fan of Sriracha sauce. And I’m a really big fan of tortilla chips. I used to be borderline addicted to habanero-flavored Doritos, but sadly and wrongly, they were removed from the market. They were darned hot. Seriously hot. Now, Sriracha isn’t as hot as habaneros, but it still has some kick. It’s a nice kick, not the kind that leaves you curled up on the floor in agony. Not even close. I was jonesin’ for some kickin’ hot tortilla chips and a dip. So I developed Sriracharitos with dip.

Sriracharitos have that great Sriracha flavor, all on a crunchy tortilla chip. The dip has a generous amount of dill, so it actually seems cool. It’s a great contrast to the heat. You can serve it with any kind of chip. But then you’d have to re-name it! Just kidding…. I think corn chips would also be excellent prepared this way.

I found J&Ds Sriracha rub in the spice section of my grocery store. You can also substitute Weber’s Sriracha rub. Either way, you’ll love a big plate of Sriracharitos with a big bowl of dip!

Instructions

For the Sriracharitos

  • Preheat oven to 400 F.
  • Place chips onto a large baking sheet.
  • Spray the chips with a bit of oil or non-stick spray. Sprinkle with the Sriracha seasoning.
  • Turn the chips over and spray and season the other side.
  • Place the chips into the oven for 5-10 minutes.
  • Let cool just slightly before serving with the dip.

For the sriracha dip

  • Whisk together all ingredients. Refrigerate for 30 minutes before serving.

Sriracha Horseradish Sauce

I made a fantastic prime rib on my Char-Broil Big Easy the other day. I needed a rockin’ good horseradish sauce to go with it. One with some serious kick besides just a horseradish kick. And this Sriracha horseradish sauce is it.

It has some ‘tang’ to it, for sure, and that great Sriracha heat. Not overpowering at all, which was a good thing, since for me, a little horseradish goes a long, long ways.

I also made a great homemade au jus for the prime rib. The entire dinner was absolutely fantastic. I still dream about it.

This Sriracha horseradish sauce would also go absolutely great with my copycat Arby’s Beef-n-Cheddar sandwich.

Sriracha Aioli

Nothing is as easy to throw together as a simple aioli like this Sriracha aioli. Make a big batch and keep it in a squeeze bottle in the fridge. It’s great for topping roasted turkey sandwiches. Or regular sandwiches, wraps, and hot dogs. And it’s great on burgers.

Any place you now use mayonnaise, substitute this Sriracha aioli instead. It’ll take something that was just ok and make it taste fantastic. Sriracha has a great spiced flavor, with just a little heat. If you’re not a fan of Sriracha you can substitute your favorite hot sauce instead.

Bacon-Wrapped Sriracha Onion Rings

These bacon-wrapped Sriracha onion rings are absolutely crazy good. The Sriracha caramelizes a bit as the bacon crisps over a sweet Vidalia onion, leaving you with a fantastic sweet heat. I’m a huge fan of Vidalias, always snatching up as many as I can while they are in season. And who doesn’t like Sriracha and bacon? It’s like having everything you ever dreamed of in one bite.

Bacon-Wrapped Sriracha Onion Rings

There are a few variations of these out on the web, but I settled on this one because it’s pretty straightforward. I’ve seen some recipes that like to sprinkle the rings in brown sugar before cooking. I’m pretty sure you’ll end up with a sticky mess on the grill if you do.

You can also make these in an oven. Just place the rings onto baking racks over baking sheets that are lined with aluminum foil and bake at 350 F (keeping an eye on them as they cook).

The key to these is to cut your onion rings thick (at least 1/2″), and use good, well-shaped thin sliced bacon. I use Indiana Kitchen brand bacon because the slices are generally all nice and rectangular. You don’t want a skinny piece of bacon that’ll shrink up and fall off your onion ring!Keep the leftover inner onion rings and make a fantastic Vidalia onion dip.

Ingredients

For the rings

  • 2 large sweet onions
  • Sriracha
  • 8 slices bacon

For the dipping sauce

Instructions

  • Fire up your grill for indirect cooking, around 300-350 degrees F. These will take about 30 minutes, but maybe as long as an hour to cook depending on your grill temperature.
  • Cut the onions into 1/2″ rings.
  • Push out the inner rings, leaving the last two outer rings still together as one. Do not separate them.
  • Squeeze some Sriracha into a bowl that’s just big enough to fit an onion ring.
  • Place the ring into the sauce. Using your fingers, spread the sauce all over the ring. Flip the onion and repeat. Get it coated, but not drenched.
  • Wrap bacon around the rings. Don’t wrap too tightly since the bacon will shrink. Don’t wrap it too loose or it’ll fall off.
  • Brush (or just use your fingers) more Sriracha on the outside of the bacon.
  • Place the rings on your grill over indirect heat.
  • Grill the rings until the bacon just starts to crisp. Gently flip them (I used a grill spatula) and cook another 10-15 minutes. Remove to a baking sheet and let firm up a bit.
  • Serve with dipping sauce.

For the dipping sauce

  • Whisk together all ingredients except the milk.
  • If the mixture is too thick, add a splash of milk, whisk, and add more as needed if it is still too thick.

Sriracha Slaw

I love a slaw with some kick. Sure, I’ll enjoy a big ole bowl of sweet slaw too, but for my money you can’t beat a Sriracha slaw that brings a little heat.

Sriracha sauce is a wonderful thing. Though it is a little spicy, it’s not a burn-the-cover-off-your-tongue hot. It’s pleasant really. And it is fantastic in this slaw.

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

Boy, this Sriracha-lime popcorn is some mighty good popcorn. Lime, basil and Sriracha really go great together. I never thought about those flavors in popcorn. I do now. In my dreams.

Make a double batch of Sriracha-lime popcorn. And pop it using a Stir Crazy Popcorn maker. This stuff doesn’t last! Now, if you’re like me and love Sriracha, you have to resist the temptation to add more to the spice mixture. More is usually better, but more in this case will mean soggy popcorn. No one wants a bowl of soggy sadness.
