Ingredients

potatoes
small, halved (or use fingerlings)

tablespoons
olive oil

tablespoons
unsalted butter

cloves
garlic
minced
½
teaspoon
dried oregano
½
teaspoon
dried basil
½
teaspoon
dried dill
Kosher salt
to taste
freshly ground black pepper
to taste

Parmesan
freshly grated

tablespoons
fresh parsley
chopped, for garnish (optional)
Instructions
Spray the inside of your slow cooker with non-stick spray.
Add all ingredients except the Parmesan and parsley. Stir gently to coat.
Cover and cook on low 4-5 hours or until the potatoes are cooked through.
Serve sprinkled with the Parmesan and garnished with the parsley, if using.
Notes
Also great with Pecorino-Romano cheese.
