unsalted butter

tablespoons
all-purpose flour

cups
whole milk

ounces
smoked provolone cheese
torn

teaspoon
kosher salt

teaspoon
ground black pepper
Instructions
Melt the butter in a medium saucepan over medium heat.
Whisk in the flour and continue whisking for 2-3 minutes until the flour is cooked.
While still whisking, slowly pour in the milk.
Add the cheese, salt and pepper.
Stir often until the cheese is melted and the mixture is smooth.
Keep warm until ready to use.
Notes
Store any unused sauce in the fridge.
