Slow Cooker Steak Fajitas

I have a slow cooker for the same reason most people have one: it’s easy. But even though I like easy, I love flavor more. I won’t trade taste for convenience, which is why I really liked these slow cooker steak fajitas. The beef simmers low and slow, taking on the great flavors from onion, peppers and salsa, along with a really fantastic fajita seasoning. This isn’t a complicated dish by any stretch, but it sure is good. And packed with flavor. Ever had a kinda dull crockpot dish? A little boring? This isn’t that.

Slow Cooker Steak Fajitas

Flavor-Packed Goodness

I topped these slow cooker steak fajitas with a very simple but flavorful sour cream mixture. All you do is take a little sour cream and add chipotles in adobo. In a crunch for time? Just use chipotle salsa instead of chopping chipotles. You can usually find it right by the canned chipotles in the grocery store. If you can’t find it, just add your favorite hot sauce. A little or lot. Whichever you prefer.

The better the salsa you use the better these fajitas will be. Don’t opt for the cheap stuff. Last thing you want to do is ruin a good dish with meh salsa.

About That Seasoning

I made my own fajita seasoning mix. I did that because I tend to want a little less salt than I find in the store-bought mixes. And because my wife is not a big fan of cumin. So I cut back on both. Doing so does not change the flavors enough so that I’d really notice.

My version has very little kick to it. If you want a bit more spiciness, add more red pepper flake or add a few good pinches of cayenne pepper instead. You can also use hot chile pepper if you want!
