Tomato soup? In a salad dressing? I made that “what?” look when I first read over this recipe for a southern French salad dressing. Ketchup? Maybe. Tomato sauce. Perhaps. But tomato soup? Huh. Ok. I’m in! It sounded different. I had to make it. I’m a salad dressing addict. How could I not make it? So I did…. And it tasted amazing! A slight tang, a slight sweetness. There is so much flavor in this dressing that like me, you’ll want more. Good thing this makes a big batch! I found this to be amazing. I love French dressing. This is French dressing elevated. Re-imagined. Different.

Grate the Day Away
This southern French salad dressing calls for grated onion. French salad dressings often do, or seem to. And if you’re up to it, you can grate the onion by hand. And you’re gonna be doing some grating, too. A whole medium onion’s worth. So set aside some time… or… do like I did. I reached for my rotary cheese grater. I use this little dream tool all the time for shredding cheese. Nothing beats freshly-shredded cheese. Well, it also does a great job grating onion. In no time at all. And clean up was easy. And my wrist thanked me!
You Know The Soup
There is no reason to use some fancy, expensive tomato soup in this dressing recipe. I didn’t. And it came out fantastic. You know the one. If you’re like me, you grew up on it. You might have had it with a grilled cheese sandwich. For dipping. That’s the soup you want.
Self-Control
I find myself losing my ability to control myself around this dressing. I mean serving-wise. No, I wasn’t like dancing around crazy and wailing or anything. But I had no self-control. So now I grab a condiment cup and use that to make sure I don’t use up half the recipe in one sitting!
