Cheddar Jalapeno Chicken Burgers with Guacamole

I’m not saying that I’ve given up on beef smash burgers. But with burgers like these cheddar jalapeno chicken burgers with guacamole, I find myself eating them a bit less and less of the beef versions these days. These chicken burgers pack crazy wonderful flavor in every bite. And a little heat. The patties are tender and juicy. As a bid to my beefy smash burgers, I like to get a bit of a ‘crust’ on the outsides. A little crunchy texture to offset that great chicken. Some guacamole to cool off from the jalapeno. These burgers do not disappoint. They’re easy to assemble, easy to cook and darned easy to eat.

I kept the toppings on my cheddar jalapeno chicken burgers with guacamole pretty simple. Guac. Onion. Done. I could’ve kept going. Pile it on. You can do whatever you want. Cheese. Lettuce. Sour cream. However you like. The patties are so flavorful that I didn’t want to hide them.

Depending on your ground chicken, you might want to add a bit of breadcrumbs to the meat mixture to help firm it up. Don’t go crazy with it. I form my patties and put them in the fridge overnight to help them ‘set up’. Otherwise they tend to fall apart as I put them on the grill. I handle them fairly gingerly. Unlike my beef patties, which I can kind of manhandle without worries, the chicken patties can fall apart fairly easily. And they like to stick. But with a little patience and care, they always turn out fantastic!

You’ll want to be careful flipping your burgers. Let them get a good char on them before the first (and last) flip. Don’t go flippin’ crazy. Just once is all they need. The more you flip, the better the chances of burger disaster. So do it once, gently, and let them do their thing.

Ingredients

For the chicken burgers

  • 1 pound ground chicken I prefer 85/15. If you use leaner chicken you might have to add a bit of breadcrumbs to help form patties.
  • ½ cup yellow onion finely chopped
  • ¼ cup cilantro finely chopped
  • 2 cloves garlic finely chopped
  • 2 teaspoons jalapeño seeded, finely chopped. I used an entire medium jalapeno for extra heat.
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • cup cheddar cheese finely shredded
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 4 hamburger buns
  • guacamole

Other toppings

  • sour cream
  • lettuce chopped or pieces
  • red onions sliced
  • salsa
  • bacon

Instructions

  • Heat a grill or griddle over medium heat.
  • Place chicken into a medium bowl.
  • Add remaining ingredients up to the buns. Using your hands, gently mix everything together. You want the ingredients to be distributed evenly throughout but try to not overwork the chicken.
  • Form chicken into 4 equally-sized patties. They'll end up around 5 ounces each.
  • Grill burgers for 5-7 minutes per side or until temperature reaches 165 F as measured in several spots.
  • Toast buns as desired.
  • Slather cut sides of buns with guacamole. Now is not the time to be shy with it.
  • Add patties and any other desired toppings and serve.

Notes

Don’t be tempted to smash these burgers like you would beef burgers. The chicken won’t hold up to the pressure! Just put them on the grill and leave them alone for 5-7 minutes per side, flipping them gently when it’s time to flip them!

Cheddar Ranch Chicken Burgers

You gotta add flavor when you make chicken burgers. And boy, do these cheddar Ranch chicken burgers add flavor. I almost thought about giving up on beef hamburgers after my first bite. Juicy. Nicely cheesy. Ranchy. Just flat-out yummy. The toppings are up to you. I went with some of my favorites, like lettuce and tomato and bacon. Heck, they’re great with just Ranch dressing!

Is It Hot In Here?

As they are, these cheddar Ranch chicken burgers are delicious. There’s no reason to change a thing. Ever. But… If you like a little kick, a little heat, in your burgers, there’s no reason not to add some (or a lot)! Add a few pinches of red pepper flake or cayenne. For color and heat, mince up a jalapeno or two (seeded or not, up to you) and add to the chicken mixture. And yeah, you can use pepper jack cheese instead of cheddar. Now we’re talking a little heat!

Or just make them the way they are. They’re delicious!

And yes, you can make these with ground turkey instead!

Ingredients

For the chicken patties

For the burgers

  • vegetable oil for cooking the patties
  • 8 hamburger buns toasted as desired
  • Ranch dressing
  • toppings your favorites, such as shredded lettuce, tomato, cooked bacon, sliced onion

Instructions

For the chicken patties

  • Place all of the patty ingredients into a large bowl.
  • Combine the ingredients using your hands. Get everything well-distributed.
  • Form the patties into 8 equally-sized patties. They'll be about 5 ounces each. Place onto parchment paper until ready to cook.

For the burgers

  • Preheat a large skillet over medium heat. Alternatively, the patties can be cooked on an outdoor (or indoor) griddle.
  • Add some oil.
  • Working in batches as needed, cook the patties for 6-8 minutes per side. They should be nicely browned and cooked through.
  • Slather the cut sides of the buns with Ranch dressing.
  • Add the cooked patties and your desired toppings.

Notes

For a spicier version, add a few good pinches of red pepper flake or cayenne to the chicken mixture.
These burgers are also great topped with fresh guacamole!

Chicken Pizza Burgers

Something happened when I had these chicken pizza burgers. It’s not like they were the first chicken burgers I’ve ever made. But these were different. I started to re-think my usual beef smash burgers. Maybe it’s time to make more chicken burgers, I thought. If they’re all going to be this fantastic, I need to look at chicken burgers a bit differently. They’re going from a “I guess I should make them” to a “I want to make them”!

Hold The Pizza

Honestly, you could skip the ‘pizza’ part of these chicken pizza burgers. The patties are great on buns with a little mayonnaise or spicy mustard. Maybe a slice of pepper jack cheese. Oh sure, don’t get me wrong, they’re crazy good with pizza sauce and pepperoni. But they’re also great without all that.

I also think the chicken mixture would be great as meatballs. Just cook them up, place them on sub rolls, top with pizza sauce and some cheese, and devour!

Instructions

  • Place chicken, garlic, parsley, red pepper flake, salt and pepper into a medium mixing bowl.
  • Gently combine the ingredients and form into 4 equally-sized patties. If the mixture is too wet and does not make patties easily, add bread crumbs a little at a time and mix.
  • If you have the time, place the patties onto wax paper, cover and refrigerate overnight. This helps the flavors blend better and the patties to firm up, especially if you've added bread crumbs.
  • If you are cooking in a skillet, heat oil in a large skillet and add the burgers. Cook 5-6 minutes per side until golden brown.
  • If you are cooking on a griddle, add some oil to hot griddle over medium heat. Cook the patties 5-6 minutes, flipping once, until golden brown.
  • Right before you remove the patties top them with the cheese, pepperoni and sauce and let heat for another minute.
  • Transfer patties to burger buns and serve.

Buffalo Chicken Burgers

One sign that you absolutely love a dish? You make it three days in a row. Like these Buffalo chicken burgers, that I made… you guessed it… three days in a row! The burgers are so tender, so juicy, and they have just the right amount of spiciness. The heat is there, but I’d say it’s somewhere around medium spicy. Packed with celery and carrots, and topped with a wonderful blue cheese sauce, each bite really is like a fantastic chicken wing. But on a bun.

These Are Some Great Burgers

I so enjoyed making and devouring these Buffalo chicken burgers. They have found their way to the top of my gotta-make-regularly list. Not only are they very easy to make, they look and taste absolutely fantastic. I cannot wait to enjoy them again, and soon. You can skip the blue cheese sauce if you want, and just dress the burgers plainly, using mayonnaise if you want. The blue cheese adds more of a Buffalo wing experience.

I like to use a burger press when I make burgers. It, in combination with some patty papers, enables me to crank out a whole bunch of equally-sized burger patties in no time at all with little cleanup.

Ingredients

Creamy Blue Cheese Sauce

Instructions

  • Place the chicken hot sauce, carrots, celery, garlic powder, onion powder, parsley, chives and bread crumbs into a large bowl.
  • Gently combine but do not overmix.
  • Cover and place in the fridge for 30 minutes.
  • Fire up your grill for direct cooking over medium-high heat.
  • Divide the meat mixture into 4 equally-sized balls and form into patties.
  • Lightly brush both sides with oil and transfer to the grill over direct heat.
  • Cook 4-5 minutes.
  • Turn and continue cooking another 4-5 minutes or until the internal temperature has reached 165 F. Remove.
  • Serve the burgers on the Kaiser rolls, with a few pieces of lettuce and plenty of the creamy blue cheese sauce.

Creamy Blue Cheese Sauce

  • Place the blue cheese crumbles into a small bowl.
  • Use a fork to smash or break up into small pieces.
  • Add the remaining ingredients and stir.

Notes

I also like to drizzle these burgers with a little Buffalo wing or hot sauce!
