Jimmy John’s Country Club Sub In A Tub

Sure, I coulda got a sub for lunch. But I wasn’t in the mood for all that bread. Plus I’m all about making my lunch at home. I work here. I’m not going out to grab a sandwich. So I made a Jimmy John’s Country Club sub in a tub instead! And boy was it a mighty delicious salad! Fresh ingredients, ready in no time. And heck, I even felt better after eating it!

Note: I am a lunchmeat fiend. I admit, I often can be accused of putting too much on my subs. And now I can be accused of doing it on my sub salads, too. You can feel free to adjust the amounts to make you happy!

Jimmy John’s Country Club Sub In A Tub

The No-Bread Zone

Everything is here on my Jimmy John’s Country Club sub in a tub that can be found on the store-made sandwich. I chop the lettuce and tomatoes the day before. On the day of lunch I just cut up some meat and cheese, add a little salt and pepper and I’m ready! Oh yeah! Dressing! For the dressing I just grab whatever suits my fancy! This isn’t complicated. Just a nice way to change up my regular salad rotation.

No Rules…

There’s not any really rules here. Guidelines, maybe. Suggestions as to what you should add. If you’re going to be strict and really duplicate the sub, you’re going to want to pretty much follow the ingredients below. But you can also treat them as just ideas, adding what else you love as you go!

…Except

Ok, I kind of lied. I do have one rule. But it’s not just about this salad. It’s about all salads. And that is: Season it. Always add a little salt and pepper to your salad at the end. Greens need seasoning. Tomatoes need it too. And so do onions. You don’t have to go crazy with it, but add some.

Jimmy John’s Avocado Sandwich Spread (Copycat Recipe)

Sometimes you just need a little reminder to step outside of your box of usual sandwich spreads and use something you might not think of. This copycat recipe of the avocado sandwich spread from Jimmy John’s is essentially guacamole with a few twists thrown in. So, it’s really nothing fancy. Nothing to be afraid of, that’s for sure. It’s fantastic on a sandwich and for that matter, equally as great as a dip for tortilla chips. That’s why I doubled the recipe. Sandwiches and chips. Lunch is done.

Jimmy John's Avocado Sandwich Spread (Copycat Recipe)

A Little Heat Never Hurts

Every sandwich needs a little spiciness in my opinion. Which is why I was happy that this copycat recipe of Jimmy John’s avocado sandwich spread includes a jalapeno. Now, granted, it’s a small jalapeno so you’re not going to get overwhelming heat. But you don’t want that kick to be front-and-center. Just there, in the back. Noticed but not overwhelming. This spread is excellent on my copycat of Jason’s Deli California Club sandwich.

Nice-n-Creamy

Use your food processor (or blender) to get the spread to the consistency you want. You aren’t making chunky guacamole, so I would say keep going until it’s creamy smooth. It’s up to you. You do want it to be spreadable. Once it’s creamy you can’t go back and un-creamy it, so stop every few seconds or so and test it.

See Ya Tomorrow

Any leftover spread will keep in the fridge for a day. Or so. Cover it tightly. Place a piece of plastic wrap over the top of the spread to keep air from getting to it and discoloring it. If it does get a little brown on top you can scrape that off or stir it in. It won’t hurt anything but visually it’s not as appealing. For the best results of course, serve this the day you make it.
