Grilled Pork Tenderloin with Cantaloupe Salsa

I always stock up on pork tenderloins when they go on sale. They’re so easy to grill, and they can take on so many great flavors. I topped this marinated grilled pork tenderloin with cantaloupe salsa. The cool salsa complimented the juicy, tender, flavorful tenderloin perfectly. This made for the perfect summer grilled dish, perfect for enjoying out on the patio.

If you don’t want to go thru the steps for making your own salsa, just grab your favorite store-bought version at the store. I would recommend a thicker, chunky salsa. It’ll hold up better with the pork. But if you have the time and ingredients, you can’t beat this grilled pork tenderloin with cantaloupe salsa. I like my salsa nice and chunky. That’s hard to find in the store-bought stuff.

Get yourself a good set of grill tools for this tenderloin and anything else you grill. You won’t regret the extra few bucks they cost over the cheap ones that you’re going to have to replace in a few years. I have had several sets of Weber tools for decades and have yet to replace a single one.

Grilled Pork Tenderloin with Cantaloupe Salsa

I topped this marinated grilled pork tenderloin with cantaloupe salsa. The cool salsa complimented the juicy, tender tenderloin perfectly.

  • Place the tenderloins in a large resealable baggie or container.
  • Whisk the remaining ingredients together and add to the bag.
  • Seal and rotate a few times to cover the meat.
  • Place the baggie in a large bowl or deep pan in the fridge for 4-6 hours.
  • Fire up your grill for direct and indirect cooking.
  • Remove the tenderloins from the marinade and shake off the excess.
  • Sear over direct heat then remove to indirect heat and cook until the temperature reaches 150 F.
  • Remove from heat and let rest 10 minutes before slicing.
  • Serve topped with the salsa.

Cantaloupe Salsa

This is great salsa. Tired of the same old tomato-based salsa? This cantaloupe salsa will cure you! You could serve it with chips, though you might want to chop the cantaloupe a little smaller. Or do as I did and serve it over a fantastic grilled pork tenderloin.

Grilled Pork Tenderloin with Cantaloupe Salsa

I liked the chunkier pieces of fruit in my cantaloupe salsa when served with tender, juicy pork tenderloin. Smaller pieces would’ve been lost in the dish, I think.

I serve a similar dish but use a cherry salsa instead. Either salsa pairs perfectly with the pork.

Add a little minced jalapeno or serrano for an extra kick!

Jello-Filled Melon

Who would’ve thought that cherry Jello and cantaloupe go together so well? This Jello-filled melon is just fun to look at and make. Everyone will oooh and ahhh when you serve it. And when they bite into it they’ll thank you. Because they aren’t expecting this to be great. Well, it’s not all for show.

Jello-filled melon is definitely on my list of favorite sides for breakfast (or breakfast for dinner…)! I can see trying this same recipe using a honeydew melon and a different flavor of Jello, such as lime! Or I might make both and have a melon bar!

  • Cut the melon in half and scoop out the seeds.Also cut a small piece off the bottom of each half so that it stands up without rolling around.
  • Pour the contents of the Jello package into a medium bowl.
  • Whisk in the hot water and continue whisking for 2 minutes.
  • Stir in the cold water.
  • Place Jello into the refrigerator for 15-25 minutes or until it just starts to thicken. You don’t want it to gel, but you do want it to be thickened enough so that it doesn’t absorb into the melon.
  • Pour Jello into the melons and place in the refrigerator until completely gelled, about 3 hours. Note: I placed the melon halves on a baking sheet in the fridge BEFORE adding the Jello. I then poured the Jello into the halves using a measuring cup. This kept me from spilling the Jello as I probably would have had I filled them first and then tried to transfer them to the fridge.
  • Cut into wedges using a sharp and slightly wet knife. Serve.
