Malt Vinegar Aioli

This malt vinegar aioli is absolutely yummy. I made a batch and served it as a dipping sauce for tater tots and fries. What a great change from ketchup! That wonderful malt vinegar flavor, tamed just enough by the tarragon and garlic. All in a great creamy sauce. Anywhere you can possibly think of using malt vinegar, use this aioli instead.

I Love This Stuff

This aioli is also absolutely amazing for dipping deep fried fish filets (like my awesome copycat Long John Silver’s fish filets), or just slather it on some crab cake sliders. Oddly enough, as a kid my favorite thing about going to Long John Silver’s was the malt vinegar. Truth is, I could drown a piece of fish in that stuff. I consider this malt vinegar aioli to be the grown-up version (and hey, it does have malt vinegar in it!).

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Sriracha Aioli

Nothing is as easy to throw together as a simple aioli like this Sriracha aioli. Make a big batch and keep it in a squeeze bottle in the fridge. It’s great for topping roasted turkey sandwiches. Or regular sandwiches, wraps, and hot dogs. And it’s great on burgers.

Roasted Turkey Sandwiches with Sriracha Aioli

Any place you now use mayonnaise, substitute this Sriracha aioli instead. It’ll take something that was just ok and make it taste fantastic. Sriracha has a great spiced flavor, with just a little heat. If you’re not a fan of Sriracha you can substitute your favorite hot sauce instead.

Chipotle Aioli

This is the perfect kicked-up aioli. Great for topping roasted turkey sandwiches, regular sandwiches, wraps, hot dogs (yes, hot dogs) and burgers. Everything where you would use mayonnaise. This chipotle aioli takes something that was just ok and will make it taste fantastic.

Why have boring when you can get a little heat and a little smoky flavor to boot? Make a batch of chipotle aioli and keep it in the fridge. For an aioli with a bit more of a spicy kick than this chipotle aioli, try my Sriracha aioli. It’s great on sandwiches too! Make them both and really have a crowd-pleasing sandwich bar.

I’m not shy with these sauce when I make a big ole sandwich. And I like for it to set for a few minutes before I dive in. I like it to soak into my bread. More flavor, more better, I say!
