Jalapeno Poppers on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Ever since getting a cooking rack for my Char-Broil Big Easy (now replaced by the bunk bed basket) I’ve been making tons of dishes I would normally make on my grill or in the oven. Like these jalapeno poppers. In no time I can make a big batch of these little treats. Cream cheese, bacon, and jalapeno. The jalapenos tame down a lot while they cook, so don’t worry about them being super spicy. They’re very good, and my favorite part, you can taste that they are peppers but not have your mouth set on fire!

A Few Tips

The bacon around the jalapeno poppers won’t get super crispy on the Char-Broil Big Easy, but it does come out cooked perfectly. Some folks like to secure the bacon using toothpicks, but I’ve found if you use pieces that are long enough they tend to secure themselves. If you do use toothpicks, soak them in water for 15 minutes first to help prevent them from burning.

For a slightly different take on the classic jalapeno popper, try making scorpion tails on your Big Easy. Or my little more mellow pickle poppers.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Jalapeno Poppers on the Char-Broil Big Easy

Ever since getting a cooking rack for my Char-Broil Big Easy I’ve been making tons of dishes I would normally make on my grill or in the oven. Like these jalapeno poppers. In no time I can make a big batch of these little treats.

Instructions

  • Cut the jalapenos in half lengthwise and remove the seeds and membranes.
  • Spoon in enough cream cheese to fill the cavity.
  • Wrap bacon around jalapenos. Depending on the size of your peppers, you may want to cut the bacon in half first.
  • Season with BBQ rub.
  • Fire up your Big Easy.
  • Transfer jalapenos to the Big Easy cooking rack.
  • Lower basket into the cooker and cook until the bacon is sizzling hot and the cream cheese is melted.
  • Let cool slightly before serving.

Notes

Serve hot.

Sweet corn is in season and that makes me happy! One of the easiest ways to prepare it is to make corn-on-the-cob on the Char-Broil Big Easy. The corn comes out tender and sweet. Every kernel pops in your mouth as you bite into it. To make my corn extra special I wrapped it in bacon first! Oh yeah!

Add Bacon. Just Because.

I cut my corn-on-the-cob in half and then put them into the Char-Broil Big Easy, standing them on end. With the bunk bed basket I think I could easily fit 6 full ears on my Big Easy. You don’t want to crowd them, though, so they cook evenly and the bacon crisps up good. If you’re using bacon, that is. And really, why not?

Corn-on-the-Cob from the Char-Broil Big Easy

Sweet corn is in season and that makes me happy! One of the easiest ways to prepare it is to make corn-on-the-cob on the Char-Broil Big Easy. The corn comes out tender and sweet. Every kernel pops in your mouth as you bite into it. To make my corn extra special I wrapped it in bacon first! Oh yeah!

  • Fire up your Big Easy.
  • Season the corn.
  • If using bacon, wrap the slices around the cobs and secure with a toothpick. Add more seasoning if desired.
  • Place the corn into the Big Easy basket. I found it easiest to stand them on end.
  • Lower the basket into the cooker and cook 25-30 minutes or until the corn is done and starting to brown on the bottom and the bacon is done (if using).
  • Remove and devour!

Notes

You’ll want to use a Bunk Bed basket to double the capacity of your Big Easy.

I love cooking on my Char-Broil Big Easy. So much that I even put together a free eCookbook containing some of my favorite Big Easy recipes. Like most people, I bought my Big Easy for cooking turkey at Thanksgiving. I quickly realized that I can cook just about anything in it. Even jumbo hot dogs! Yep! Jumbo dogs on the Char-Broil Big Easy are crazy easy, and crazy good. The dogs get a great crispy crunchy casing that just pops in your mouth. The meat is tasty, moist and perfect!

Big Dogs For Big Flavor

Don’t be shy with your Jumbo Dogs on the Char-Broil Big Easy. Add some sweet onions and peppers along with the jumbo dogs and let them roast along with the dogs. Chop and add them to buns to make a great dog even better. You can also cook up a big batch of regular-sized hot dogs in your Big Easy, enough for a crowd!

  • Place the dogs into a baggie or resealable container.
  • Add the marinade and let marinate for 30 minutes.
  • Fire up the Char-Broil Big Easy.
  • Place dogs onto kabobs and lower into the cooker.
  • Cook for 10-15 minutes or until the dogs are nice and toasty hot!

Notes

You can also just lay the dogs horizontally in the basket.

Now, sure you can roast beets in your oven. Or even on your grill. But if you have a Char-Broil Big Easy, you should use it instead. The Big Easy is one of the best and easiest outdoor cookers you can find. No mess. No fuss. Perfect for everything from chicken to pies to yes, beets. Just brush the beets with a little oil, vinegar and spices and into the cooker. An hour or so later, perfectly roasted beets on the Char-Broil Big Easy.

Perfect Roasted Beets!

After the beets cooled I peeled them and sliced them for topping a great side salad. These roasted beets on the Char-Broil Big Easy were perfect!

Using beets that are roughly the same size will ensure that they all get done at the same time, a big plus.

To make these beets on the Char-Broil Big Easy I used a bunk bed basket. It lets me double or even triple the amount of cooking space I have.

Roasted Beets on the Char-Broil Big Easy

  • Fire up your Big Easy.
  • You can peel your beets before or after cooking. It’s easier to peel them first, but I think they stay moister if you peel them after they cook.
  • Cut the root end off so that the beets stand straight up.
  • Combine remaining ingredients and brush onto the beets.
  • Place beets into the Big Easy basket and lower into the cooker.
  • Roast for about 60 minutes or until beets are tender but not mushy.
  • Let cool before peeling and slicing.

Notes

Be careful removing the beets as they and the Big Easy basket are hot!

Crispy Wings on the Char-Broil Big Easy

I have cooked a LOT of chicken wings on my Char-Broil Big Easy. It’s my favorite way to cook wings, other than deep frying. The Big Easy cooks wings so easily and quickly. I usually finish off the wings over a hot grill to get a bit of a crunch on the skin. Well, no more. Crispy wings on the Char-Broil Big Easy are fantastic!

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic. I won’t do wings any other way again, and that includes deep frying. This is it, the way to do wings.

Buffalo Wings on the Char-Broil Big Easy

Dry Skin Means Crispy Skin

The key to getting the wings crispy is to dry out the skin so that takes on a good crunch under the high heat of the Big Easy. If you don’t have a Big Easy, you should get one. Until then, you can also make these crispy wings in the oven.

I used my Wingin’ator 3000 basket when I cooked up these wings so that I can cook more at once than I could with the basket that comes with the Big Easy. You can also pick up a bunk bed basket (see the link below) that doubles the amount of room you’ll have for cooking wings. You don’t want to crowd the wings into the cooker or they won’t cook evenly.

Crispy Wings on the Char-Broil Big Easy

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic.

Ingredients

  • 4 pounds chicken wings separated
  • 2 tablespoons baking powder
  • ¾ teaspoon kosher salt
  • Your favorite wing sauce and dipping sauce

Instructions

  • Rinse the wings and pat them very dry with paper towels.
  • Place on a sheet pan or plate and cover with more paper towels. Refrigerate for 2 hours to further dry out the skin.
  • Preheat oven to 250 F.
  • Transfer wings to a resealable baggie or container. Add in the baking powder and salt. Seal, and shake or toss to coat well.
  • Spray a baking rack with the non-stick spray and put it over a baking sheet that is lined with foil.
  • Place wings onto rack but do not crowd them.
  • Bake for 30 minutes. While baking, fire up your Big Easy.

Finishing in the Big Easy

  • Transfer wings to the Big Easy and cook another 10-20 minutes or until done.

Finishing in the oven (optional)

  • Increase the oven temperature to 425 F and continue baking for another 20 or so minutes or until done.

Serving

  • Toss wings in your favorite sauce and serve with your favorite dipping sauce.

Notes

You can only fit so many wings on a Big Easy, so I’ve included instructions on how to also finish the wings in the oven.
