Got a Char-Broil Big Easy? Think you can’t join the tailgating crowd with it? That it’s just for turkeys? Well, wrong! It’s time to fire up and make some fantastic crispy Cajun wings on the Char-Broil Big Easy! These great wings take just a little effort, just a little time, and they come out absolutely fantastic. And the sauce is nothing to sneeze at either! These are great tasting wings too!

It’s Super Easy

There are just two simple steps to making crispy Cajun wings on the Char-Broil Big Easy. First, you need to air dry the wings coated in seasoned baking powder (not baking soda) overnight in a fridge on a wire rack. This helps dry out the skin, making it easier to get it crispy later. And second, when it comes time to cook the wings, make sure you don’t over-crowd your Big Easy. The high heat circulates around the wings helps crisp up the skin.

Load Up

You can use a bunk bed basket (and you’ll want to) for more wings. And in fact, if you’re patient, you can fit two bunk bed baskets into the Big Easy at once. Or do like me and get more than one Big Easy and have a wing-cooking funfest!

Don’t Forget The Sauce

Sure, you can use any sauce you want on these wings. But you’ll want to keep that Cajun theme going and make a batch of the sauce below. It has a nice spicy kick to it with a great flavor that compliments the seasoned wings perfectly.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Crispy Cajun Wings on the Char-Broil Big Easy

Ingredients

For the wings

  • 2 pounds chicken wings flats and drumettes separated, tips saved to make stock
  • 1 tablespoons baking powder
  • 3 teaspoons Cajun seasoning or more, to taste

For the sauce

For the wings

  • Place the wings in a large bowl or resealable container.
  • Combine the baking powder and Cajun seasoning.
  • Sprinkle half of the seasoning mix over the wings. Using your hands, toss the wings to coat.
  • Add the remaining seasoning and repeat.
  • Transfer the wings to a wire rack over a baking sheet. Place in the fridge 12 hours or overnight to dry out the skin.
  • Fire up your Big Easy. Lightly spray the basket and the bunk bed basket with non-stick spray. Let the Big Easy preheat for 5-10 minutes.
  • Add the wings to the baskets and lower into the Big Easy. Do not let the wings touch or overlap. You can stand them on end if you want to fit more wings into the baskets. You can also use up to two bunk bed baskets at a time, adding more cooking area.
  • Cook until the wings are lightly browned and crispy, usually 30 minutes. While the wings are cooking make the wing sauce. Note: Wings towards the bottom of the cooker may cook faster so check them after 30 minutes.
  • Transfer the wings to a large bowl. Pour as much sauce as desired over the wings and toss to coat. Serve hot.

For the sauce

  • Melt the butter in a small saucepan over medium heat.
  • Stir in the hot sauce and Worcestershire.
  • Reduce heat and keep warm until ready to use.

Buffalo Wings on the Char-Broil Big Easy

Boy howdy, these Buffalo wings on the Char-Broil Big Easy came out great! 30 minutes marinating, 30 or so minutes cooking and it’s time to devour some traditional-flavored wings. I used the Big Easy Cooking Rack, which lets you cook on up to 6 different levels, enough room for a family pack (around 4 pounds) of wings. You can also use the standard Big Easy basket along with the bunk bed basket, but you won’t be able to cook as many wings at once. The rack is no longer available, but has been replaced by the bunk bed basket.

Buffalo Wings on the Char-Broil Big Easy

I did ‘finish’ the wings on a grill to get a little char and crisp, but doing so is completely optional. These Buffalo wings on the Char-Broil Big Easy are fantastic right off the cooker. If a little crunch is what you want do what I did and put them over high heat on a grill for a few minutes before serving.

To make this dish on the Char-Broil Big Easy I used a bunk bed basket. It lets me double or even triple the amount of cooking space I have.

Buffalo Wings on the Char-Broil Big Easy

Ingredients

Instructions

  • Place the wings into a large resealable bag or container.
  • Melt the butter in a medium saucepan.
  • Stir in the remaining ingredients.
  • Let cool slightly. Pour all but 1/4 cup of the marinade onto the chicken. Save the 1/4 cup for finishing the wings later.
  • Seal the chicken and toss to coat. Let marinate at room temperature for 30 minutes.
  • Fire up your Big Easy.
  • Add chicken to the cook racks and lower into the cooker.
  • Cook for 30-45 minutes or until chicken is done. Note that depending on conditions, chicken at the top of the rack may cook quicker or later than those on the bottom. Don’t just check one piece for doneness.
  • NOTE: At this point, you can if you wish, transfer the chicken to a hot grill to get a nice char and a little crunch on the wings. It’s completely optional, though.
  • Remove chicken and place into a large bowl.
  • Add the reserved marinade and toss to coat.
  • Serve with your favorite dipping sauce.

Notes

You’ll need the Char-Broil Big Easy Cooking Rack to be able to cook an entire 4 pounds of chicken at once.

I have cooked a LOT of chicken wings on my Char-Broil Big Easy. It’s my favorite way to cook wings, other than deep frying. The Big Easy cooks wings so easily and quickly. I usually finish off the wings over a hot grill to get a bit of a crunch on the skin. Well, no more. Crispy wings on the Char-Broil Big Easy are fantastic!

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic. I won’t do wings any other way again, and that includes deep frying. This is it, the way to do wings.

Dry Skin Means Crispy Skin

The key to getting the wings crispy is to dry out the skin so that takes on a good crunch under the high heat of the Big Easy. If you don’t have a Big Easy, you should get one. Until then, you can also make these crispy wings in the oven.

I used my Wingin’ator 3000 basket when I cooked up these wings so that I can cook more at once than I could with the basket that comes with the Big Easy. You can also pick up a bunk bed basket (see the link below) that doubles the amount of room you’ll have for cooking wings. You don’t want to crowd the wings into the cooker or they won’t cook evenly.

Try my wicked sticky Big Easy wings and my Yard Bird wings for something crazy messy instead.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Ingredients

  • 4 pounds chicken wings separated
  • 2 tablespoons baking powder
  • ¾ teaspoon kosher salt
  • Your favorite wing sauce and dipping sauce

Instructions

  • Rinse the wings and pat them very dry with paper towels.
  • Place on a sheet pan or plate and cover with more paper towels. Refrigerate for 2 hours to further dry out the skin.
  • Preheat oven to 250 F.
  • Transfer wings to a resealable baggie or container. Add in the baking powder and salt. Seal, and shake or toss to coat well.
  • Spray a baking rack with the non-stick spray and put it over a baking sheet that is lined with foil.
  • Place wings onto rack but do not crowd them.
  • Bake for 30 minutes. While baking, fire up your Big Easy.

For the Big Easy

  • Transfer wings to the Big Easy and cook another 10-20 minutes or until done.

For the oven

  • Increase the oven temperature to 425 F and continue baking for another 20 or so minutes or until done.

Serving

  • Toss wings in your favorite sauce and serve with your favorite dipping sauce.

Fire-Eater Chicken Wings on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I bought a Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer a while back. It is one of my favorite “grills” by far. It doesn’t get any easier – marinate/brine/rub/whatever meat you wish to cook and put it into the cooker. Turkeys and chickens take about 15 minutes per pound. A family pack of wings takes about 30 minutes. Done. No mess, no fuss. It’s a beautiful thing. And trust me, I cook a lot of wings on my Big Easy. A lot. To get a family pack of wings onto my Big Easy, I use my homemade mod, the Wingin’ator 3000. You can always cook the wings in an oven or charcoal or gas grill of course.

Just The Right Kick

These fire-eater chicken wings from Steven Raichlen’s The Barbecue! Bible 10th Anniversary Edition are absolutely amazing (as are the other recipes in the 575 page book). Yes, they have some kick, but it’s not overwhelming at all. They’re perfect. I plan on using the rub recipe on whole roasted chickens and turkey from my Big Easy, it’s just that good.

I cook the wings for about 30 minutes in my Big Easy, then I toss them onto a hot grill for a few minutes to crisp up the skin. You can skip that final step and still enjoy really fantastic wings. I served them with our cool Ranch dipping sauce.
