Quick Fix Club Sandwich with Pesto Mayonnaise

The other night I dreamed I was on a deserted island. I could only pick one sandwich to have on the island for the rest of my life. It came down to a choice between a Reuben and a club sandwich. I went with the club sandwich, believe it or not. But not an ordinary club sandwich. Instead, my quick fix club sandwich with pesto mayonnaise! I definitely made the right choice!

Quick Fix Club Sandwich with Pesto Mayonnaise

This quick fix club sandwich with pesto mayonnaise is different and delicious! And as much as I do love a good Reuben sandwich, I know I made the right choice. Crunchy bacon. Tangy cheese. Crispy lettuce. Ripe tomato. And that nutty pesto. If you find pesto strong, don’t use much, just enough to get the taste. If you love pesto, load up on it!

I am required to have my club sandwich (any club sandwich) with a dill pickle spear. It has to be super cold, too. Hopefully I can get those on my island.

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

Also try my BBQ Island club sandwich.

BBQ Island Club Sandwich

I devoured my BBQ Island Club sandwich like I devoured the Margaritaville: The Cookbook. That’s where I found the recipe that inspired this sandwich. There’s nothing wrong with your standard good ole club sandwich. This is your standard good ole club sandwich… but with a twist. The dressing mix, as easy as it is, sets them apart.

BBQ Island Club Sandwich

This Is One Great Club Sandwich

I made a big batch of the dressing and BBQ sauce mix and kept it on hand for burgers and sandwiches. It’s a nice change and is also absolutely fantastic on a Reuben or pastrami sandwich. Of course it’s also great on a BBQ Island club sandwich. If you love club sandwiches as much as I do, you also need to make my club with pesto mayonnaise!

If I’m reaching for a bottled BBQ sauce, I often go for Sweet Baby Ray’s.

Try my Cheeseburgers in Paradise. They’re just like the restaurant classic!

Now, if I could just get someone to pay for a stay at the Margaritaville Resort in Gatlinburg!
