Creamy Crab Salad Sandwiches

I’m pretty sure I’m addicted to crab salad. And my preferred way to enjoy it is on bread. These creamy salad crab salad sandwiches are exactly what I like the most. Chunky crab (imitation works fine, trust me). Plenty of creamy mayonnaise (Blue Plate is my favorite). And plenty of crunchy onion and celery. And you have to have dill. It’s the perfect combination for an easy, delicious lunch.

Creamy Crab Salad Sandwiches

If you have fresh dill, by all means use that instead of dry. I’d start with about half of a tablespoon and go from there. I’m pretty much a dill addict, so I’m sure I’d end up adding more. These creamy crab salad sandwiches are great, but they’re even better with more dill!

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

  • 8 slices bread Croissants or brioche buns also work great

Instructions

For the creamy crab salad

  • Place all of the crab salad ingredients into a large bowl and stir gently until combined.
  • Refrigerate for 1 hour before serving.

For the sandwiches

  • Toast the bread as desired.
  • Divide the creamy crab salad between 4 slices of bread. Top with remaining bread and serve.

Copycat Golden Corral Crab Salad

Easy and delicious. That’s exactly what this copycat of the crab salad at Golden Corral is. You can easily up-size this to make a big ole batch for a crowd without breaking the bank. That’s the point. This is a good, inexpensive dish that is perfect as a side and even better piled up on a bun or bread as a sandwich. Either way, you won’t be disappointed!

Crab Salad Wraps

I made a batch of these crab salad wraps for us to take for a ‘picnic’ at the Exit 76 Antique Mall. We didn’t want to leave the mall for lunch… we might miss out on a deal! Quick and easy bites like these hold up well for the drive down and require nothing special to eat. Just grab one and dive on in!

Ingredients

  • 1 pound crab meat real, picked over, or imitation
  • 2 stalks celery chopped
  • 1 tablespoon onion minced
  • 4 ounces cream cheese softened
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons sugar
  • 6 eggs hard-boiled, cooled, shelled, lightly chopped
  • lettuce leaves I used iceberg
  • 6 tortillas

Instructions

  • Break the crab meat into small pieces. Place in a large bowl and combine with the celery and onion.
  • Stir in the cream cheese, sour cream, mayonnaise, lemon juice and sugar until smooth.
  • Gently mix in the eggs.
  • Lay out tortillas. Top with lettuce and a few dollops of the crab mixture. Roll up and slice.
