Breakfast Hobo Packets

Good morning! Time to enjoy some breakfast hobo packets. I love making things in foil packets and just tossing them onto the grill to cook. They’re easy to put together, easy to cook, they taste great and clean up is a breeze! They’re also great for cooking for a crowd. You can (in most cases) assemble them ahead of time, then just toss them on the grill when your guests arrive.

My wife does not always share my love for things cooked in foil. I did a lot of camping as a kid. A few breakfast hobo packets would’ve been welcomed. Nothing like one of these all-in-one meals to get you ready for a day of hiking or fishing!

Breakfast Hobo Packets

Ingredients

  • ½ pound breakfast sausage bulk, ut into 1/2" rounds
  • ½ pound shredded hash browns frozen, thawed
  • ¼ cup red bell pepper diced
  • ¼ cup green bell pepper diced
  • 4 large eggs
  • kosher salt
  • ground black pepper
  • sharp cheddar cheese shredded
  • 1 small tomato chopped, for garnish
  • 1 green onion chopped, for garnish

Instructions

  • Fire up your grill for direct and indirect cooking.
  • Tear off two large pieces of aluminum foil (about twice the size of a dinner plate). Spray each with non-stick spray.
  • Divide the sausage patties between the foil.
  • Top with the hash browns and peppers.
  • Take a spoon and push down in the center of each ‘pile’, making an indentation large enough to hold the two eggs.
  • Gently break the eggs (two each) into each indentation.
  • Season with salt and pepper.
  • Gently fold up the sides of the foil and seal.
  • Place onto direct for a few minutes then remove to indirect heat and let cook until the sausage is done (I poked them with an instant-read thermometer) and the eggs are done, 10-15 minutes.
  • Open packets and add cheese. Return to grill and heat until the cheese melts.
  • Top with desired garnishes.

Spicy Hobo Sausage Packet Sandwiches

Hobo packets are a great thing when you’re in a hurry to make dinner. Usually you can make them ahead and just toss them onto the grill (or into the oven). These spicy Hobo sausage packet sandwiches combine smoked sausage, sweet onions and kicked-up BBQ sauce. Served on top of hoagie rolls with melted cheese for a really quick and easy lunch or dinner dish. Grab a few napkins, you’re going to need them!

For a little more crunch, add fresh-made coleslaw. If you prefer to make your spicy hobo sausage packet sandwiches not so spicy, just substitute regular ole BBQ sauce.

Ingredients

  • 1 pound smoked sausages cut into 1/2″ rounds
  • 1 Vidalia onion sliced
  • ¼ cup your favorite BBQ sauce the spicier the better!
  • 2 tablespoons cilantro chopped
  • ½ ground black pepper
  • 4 Hoagie buns
  • Mozzarella cheese shredded

Instructions

  • Tear off a large sheet of aluminum foil.
  • Place the sausage, onion, BBQ sauce, cilantro and black pepper in the center of the foil.
  • Fold up the sides and seal. Place the packet over indirect heat on the grill and cook about 20 minutes or until the sausage is hot and the onions are slightly tender.
  • Serve sausage over buns topped with cheese.

BBQ Hobo Packets

I’ve made a few variations on hobo packets. They’re easy to make, tasty, and make for easy cleanup. This BBQ hobo packets version uses BBQ sauce and has quickly become one of my favorites. Cheesy goodness, with potatoes and onion, all cooked with sausage in a BBQ sauce. All of the ingredients get all steamy happy inside the packet while they cook and the flavors melds perfectly.

I made these BBQ hobo packets a few times for the crew that was remodeling our kitchen. They liked them with sausage or chicken, but I think they favored the chicken one the most!

BBQ Hobo Packets

Ingredients

  • 8 small red potatoes
  • 2 teaspoons vegetable oil divided
  • ½ sweet onion cut into thin wedges
  • ½ pound smoked sausage cut into bite-sized pieces (or chicken tenderloins)
  • 3 tablespoons your favorite BBQ sauce spicy works best
  • cup shredded cheese

Instructions

  • Bring a small pot of water to a boil. Add potatoes and boil until just starting to get tender, 15-20 minutes. Remove from water and let cool slightly then cut into wedges.
  • Spread out foil pieces and drizzle with 1 teaspoon of oil each.
  • Add the remaining ingredients, splitting them between the two pieces of foil, drizzling with however much BBQ sauce you prefer (a tablespoon or so each should be enough). Also add half of the potatoes to each.
  • Seal foil into tight packets and place on a grill over indirect heat for about 10-15 minutes or until the onion has started to soften.
  • Remove from grill and open to let cool before serving.
  • Note: If you aren’t careful the bottoms of the packets can get very hot. Let them cool before serving!
