Smoked Provolone Cheese Sauce

This smoked provolone sauce adds great flavor (and texture) to any recipe you need a cheese sauce. I love it over pulled pork since it has a nice smokey flavor, but not so overbearing that you can’t taste the meat. I made a big batch and squirted it over pulled pork tater tot nachos (below) and stromboli, but you’ll also love it over grilled burgers or chicken sandwiches, or the best, Italian sausage sandwiches.

This sauce would also be great as a dip (maybe add some green chiles or Rotel) or over “regular” tortilla nachos, or over an omelet. Heck it’s just great. Make it!

  • Melt the butter in a medium saucepan over medium heat.
  • Whisk in the flour and continue whisking for 2-3 minutes until the flour is cooked.
  • While still whisking, slowly pour in the milk.
  • Add the cheese, salt and pepper.
  • Stir often until the cheese is melted and the mixture is smooth.
  • Keep warm until ready to use.

I once worked near a W.G. Grinders, my favorite place for baked sandwiches at lunchtime. Sadly, W.G. Grinders no longer has any locations open in Indiana (there are a few in Ohio). They sure made great sandwiches. Now I have to make a ham and cheese grinder at home to satisfy my cravings.

Ingredients

  • ½ stick unsalted butter melted
  • 1 teaspoon garlic powder more or less
  • 1 loaf French bread
  • ¾ pound deli ham sliced thin
  • ½ pound provolone cheese sliced thin
  • ½ teaspoon paprika

Instructions

  • Preheat oven to 350 F.
  • Combine the butter and garlic powder. Add more garlic powder, to taste, if needed.
  • Split the French bread lengthwise and lay open. Brush both open sides with butter. Transfer to a baking sheet.
  • Add ham and cheese, then sprinkle with the paprika.
  • Bake for 15 minutes or until the cheese is melted and the bread is crispy.

Smoked Turkey Avocado Wraps

The avocado mix I used on these smoked turkey avocado wraps really kicks up an ordinary wrap. The key a good wrap, for me, is a quality cheese and some sort of spicy sandwich spread. Hot mayonnaise or this avocado cilantro mixture work just fine. And fresh, crisp lettuce.

A nice variation on these smoked turkey avocado wraps is to substitute chipotle peppers in adobo for the hot sauce. Just chop a pepper and add it along with a little adobo sauce to the avocado mixture. The smoked jalapenos add a nice smoky flavor, plus of course, a little heat.

  • ½ large tomato chopped
  • ¼ cup cilantro chopped
  • ½ teaspoon hot sauce or more
  • 1 avocado peeled, pitted, diced
  • 4 large tortillas or wraps
  • 8 slices smoked turkey sandwich meat
  • 4 slices provolone cheese
  • 4 leaves lettuce

Instructions

  • Combine the tomato, cilantro, hot sauce and avocado in a small bowl.
  • Top wraps with sandwich meat, cheese, and lettuce.
  • Divide avocado mixture between wraps. Roll up tightly, cut in half, and serve.
