Apple Zoodle Dessert

I love my spiral slicer. So far, I’ve used it for making great side dishes or salads and a few main dishes. I was intrigued when I first came across this idea for a low-carb dessert that is made using a spiral slicer. What a brilliant idea – apple zoodle dessert! Great apple flavor and crunch, a hint of cinnamon, and topped with toasted coconut flakes.

Choosing The Apple

I used a Gala apple for making this dessert, but you can substitute whatever you like. Of course, it being a dessert you’ll probably want to use a sweeter apple, such as golden delicious, pink lady, red delicious or Fuji.

This apple zoodle dessert pairs perfectly with my Parmesan chicken zoodles.

Instructions

  • Core the apple then slice it into thin noodles using your spiral slicer.
  • Heat the oil in a medium skillet over medium-high heat.
  • Add onion slices and saute until they start to get tender.
  • Sprinkle with cinnamon and stir.
  • Remove apple to serving plate.
  • Add the coconut flakes to the skillet and cook until starting to brown, stirring constantly.
  • Sprinkle apple with the toasted coconut flakes and serve.

These homemade cinnamon brown sugar Pop Tarts were incredible! And they were so easy to make! They taste just like Pop Tarts. I was so impressed I think I giggled in-between bites. I loved and I do mean LOVED cinnamon Pop Tarts as a kid! Sadly, I could devour a box in no time (assuming Mom wasn’t watching). Just give me some Pop Tarts and a glass of cold milk for dunking and I was one happy boy!

The Perfect Crusts

The crusts on these homemade cinnamon brown sugar pop tarts were flaky and light. The filling is oh-so-yummy! These are the perfect milk-dunking pop tarts! As a kid I would often eat the crunchy crusts first. I’d save the soft, warm, delicious middles for last.

Homemade Cinnamon Brown Sugar Pop Tarts

Instructions

  • Preheat oven to 350 F.
  • Lightly dust a work surface with flour.
  • Working one sheet at a time, roll out the pie crusts to about a 1/8″ thickness and cut into 3″ x 4″ rectangles. You should get 6 rectangles out of each dough roll.
  • Place 12 of the dough rectangles onto baking sheets. These will be the bottoms of the tarts.
  • Beat the egg with 1 tablespoon water and brush onto the crusts.
  • Make the filling by combining all ingredients and place 1 heaping tablespoon onto the center of each tart bottom. Do not get the filing within 1/4″ of the edges of the dough.
  • Place the remaining dough rectangles on top of the bottoms and press down along the edges with your fingers to seal. Use a fork to then crimp the edges.
  • Brush tops with egg wash.
  • Bake 20-25 minutes or until golden brown.
  • Remove from oven and let cool completely.
  • Make the icing by combining all the of ingredients, beating with a fork. Add more milk if the mixture is too thick, but don’t add too much or it’ll be too thin.
  • Brush icing on top of tarts.
  • To serve, reheat in a toaster or toaster oven.

They’re easy, and a nice lighter alternative to large, morning nap-inducing rolls. I woke up early one morning and made these for my wife to take in to work. Everyone really enjoyed them.

Mini cinnamon rolls are a great thing for feeding a crowd. Well, if you can keep everyone from grabbing two handfuls at a time, that is! I can’t tell you how many times I’ve made these and every time they are a big hit. As easy as they are, they always make people happy!

  • Preheat oven to 375 F.
  • Unroll the dough into two squares of 4 triangles each.
  • Pinch the seams between the dough triangles together. Lightly roll out with a rolling pin until it is about 1/4″ thick.
  • Brush the dough with the butter.
  • Sprinkle the dough with the cinnamon and brown sugar. Don’t go crazy, just enough to lightly cover the dough.
  • Roll up the dough pieces into tight logs. Using a sharp knife or pizza cutter, cut each dough log into 8 pieces. Place into miniature muffin pans that have been sprayed with non-stick spray.
  • Bake 9-15 minutes until the rolls have risen and are golden in color.
  • Meanwhile, whisk together the ingredients for the icing.
  • Remove the rolls from the oven. Remove from the pan and drizzle with the icing.
