Greek Hot Dogs

Yowsa! Talk about a great bite! These Greek hot dogs definitely have it going on. Great beef flavor (don’t use a cheap dog. Ever.). Crunchy red onion, tamed down with some Feta and black olives. All backed up with a great Greek vinaigrette that ties it all together. It’s almost like a Greek salad on a dog.

Greek Hot Dogs

If you think red onion in these Greek Hot Dogs is too strong, soak a few slices in cold water for 5-10 minutes before chopping them for these dogs. They’ll be a little more mellow but still have great flavor and crunch.

Try substituting other types of dogs or sausages, such as kielbasa or polish sausage.

Greek Salad Bites

I was making grilled lamb gyros the other day and figured I’d better scout around for a Greek-inspired side dish. I didn’t want to do the ‘usual’ Greek salad, but I wanted something light. These little Greek salad bite appetizers worked just great as a side. My wife is a big fan of sun-dried tomatoes and Kalamata olives, so she really liked these. The basil sprinkled on top really brings these little morsels together.

I think that the cucumbers made for a great vessel for these Greek salad bites. But really, you don’t have to use them. You can substitute your favorite cracker instead.

  • Fold together the feta, yogurt, parsley, sun-dried tomatoes, garlic, and black pepper in small bowl. Cover and chill for at least 2 hours, up to 24.
  • Slice cucumber into slices.
  • Spoon mixture onto the tops of the cucumbers.
  • Sprinkle tops of cucumbers with the olives, followed by a pinch of the crumbled dried basil.

Grilled Greek Chicken Salad

This grilled Greek chicken salad was one of those “throw-a-few-things-together” dishes. I had some chicken sitting around that I needed to use up. And some Greek yogurt. And I was in a Greek mood… at least in a mood for Greek tastes. The combination of the grilled marinated chicken and the vinaigrette worked very well. The chicken was very tender and moist, while the vinaigrette had a nice vinegar and Dijon flavor.

Grilled Greek Chicken Salad

I skewered the chicken pieces and then grilled them on my Weber grill. My wife isn’t a fan of grilled foods that have holes in them. Next time I’ll butterfly the chicken breast and marinate and grill it whole. No holes. Even better grilled Greek chicken salad.

Ingredients

For the salad

  • Grilled Greek chicken see below
  • Vinaigrette see below
  • Greens
  • Kalamata olives sliced
  • Cucumber sliced
  • feta cheese crumbled

For the chicken

  • Combine all ingredients except chicken in a large resealable baggie. Seal and shake to mix well. Add chicken and refrigerate for 3 hours.
  • Shake off excess marinade. Place chicken pieces onto bamboo skewers that have been soaked in water for at least 30 minutes and grill, turning occasionally, on all sides until done.

For the vinaigrette

  • Place all ingredients in a small jar. Cover. Shake until well combined.

For the salad

  • Top greens with chicken, olives, Feta and cucumber. Serve with the vinaigrette.

Gyros on the Grill

This recipe for gyros on the grill brought together two of our favorite things: grilled Gyro meatballs and Tzatziki sauce. The end result was tasty and messy. The best dishes are often messy. The flavors are just like an authentic gyro. The meatballs have a slightly different texture, of course, but they’re really great. Plus they have that great grill char on them..

  • Peel the cucumber.
  • Cut the cucumber in half lengthwise and scrape out all of the seeds.
  • Mince the cucumber.
  • Place cucumber onto a large piece of plastic wrap.
  • Sprinkle cucumber with a pinch of salt.
  • Roll the plastic wrap up to make a tight log. Let sit at room temperature for at least 30 minutes.
  • Meanwhile, whisk the remaining ingredients together in a medium bowl.
  • Cut or open one end of the bag and squeeze out as much of the accumulated liquid as you can. You want the cucumber to be as dry as possible.
  • Add the cucumber to the sauce and fold to combine.
