Parmesan Chicken Zoodles

This absolutely fantastic pasta-free dish reminds me of one we made years ago, but with pasta. It has all the great flavors, but uses zoodles (zucchini noodles) instead. I recently picked up a zoodler (spiralizer… spiral slicer… I’ve been making up names for it as I go), and just love how they are such a great low-carb substitute for pasta. Parmesan chicken zoodles combine some of my favorite tastes in one bite. First, cream. Gotta have cream. Second, chicken thighs. I love chicken thighs. I prefer them over chicken breasts. Sure, thighs aren’t as lean so if you want, you can substitute chopped chicken breast instead.

Next up? Sun-dried tomato. Sun-dried tomatoes were not something I was exposed to growing up, so they were a new flavor experience to me when I started cooking. I really like them. They have such a great texture and deep flavor, and the oil they are packed in is absolutely great for cooking (so don’t ever toss it out!).

If you know me or follow this blog at all, you know I gotta have some kick. Some heat. It doesn’t have to be much, but a little something to offset the sweetness of the cream is necessary in this dish. Use a little or a lot.

Finally, zoodles. Thinly sliced zucchini. Cooked so they have just a bit of crunch. Almost like pasta, and essentially carb-free. Perfect!

Equipment

Ingredients

  • 1 tablespoon unsalted butter
  • 1 ½ pound chicken thighs boneless, skinless, cut into strips or chunks
  • 1 7.5 ounce sun-dried tomatoes julienned
  • 4 cloves garlic minced
  • 2 cups half-and-half
  • 1 cup Parmesan cheese freshly grated
  • Kosher salt to taste
  • pinch dried basil
  • pinch dried red pepper flake
  • 2 large zucchini or 3 medium, made into zoodles or just sliced thin/julienned

Instructions

  • Melt the butter in a large skillet over medium-high heat.
  • Season the chicken with salt and add it to the pan. Stir to coat then cook until golden brown on all sides.
  • Lower the heat to medium.
  • Add the sun-dried tomatoes and 1 tablespoon of the oil they are jarred in along with the garlic and saute for 2-3 minutes.
  • Reduce heat to low and stir in the cream.
  • Add the cheese and stir until melted.
  • Season with salt and add dried basil and red pepper flake.
  • Add the zucchini, stir, and cook for about 5 minutes or until al dente.
  • Serve with additional Parmesan cheese sprinkled on top if desired.

Grilled Sweet-n-Spicy Chicken Thighs

Nothing beats the tenderness of grilled boneless, skinless chicken thighs. This simple recipe for grilled sweet-n-spicy chicken thighs brings a little spiciness and a little sweetness. Although you could use the rub and glaze on white meat chicken or even pork, it works best with the richness of a chicken thigh.

Grilled Sweet-n-Spicy Chicken Thighs

I prefer boneless skinless chicken when I make something like these grilled sweet-n-spicy chicken thighs. You could substitute boneless skinless chicken breasts instead. I would recommend butterflying them first. That way you get nice even cooking. Those big breasts are easy to overcook on the outside if you don’t butterfly them first.

Ingredients

For the chicken

  • 2 pounds boneless skinless chicken thighs, trimmed of any large pieces of fat
  • 1 tablespoon olive oil

For the rub

For the glaze

Instructions

  • Prepare your grill for direct and indirect cooking.
  • Place the chicken into a large bowl and drizzle with the oil. Toss to coat.
  • Combine the rub ingredients in a small bowl. Sprinkle over the chicken, tossing as you go.
  • Grill chicken over direct heat 2-3 minutes per side just long enough to get grill marks and a little color. Remove to indirect heat and cool until internal temperature reaches 155 F.
  • Microwave the honey in a bowl or cup for 20 seconds. Stir in the vinegar.
  • Reserve 2 tablespoons of the glaze. Brush remaining glaze (you may not need all of it), over the chicken as it cooks to completion, 165 F internally.
  • Serve chicken drizzled with reserved glaze.

Grilled Jamaican Jerk Chicken Sandwiches

Man oh man, these grilled Jamaican jerk chicken sandwiches disappeared fast. I used my preferred chicken meat, thighs, instead of breasts, but you can certainly use white meat instead. I would recommend butterflying the breasts or just cutting them thin (and to a consistent thickness so they cook evenly). No matter what you use, these sandwiches are nicely spiced, crazy tender and perfectly moist. I wouldn’t change a thing about them.

I used some The Shizzle jerk marinade. It is my favorite. They also make a hot version that I love (it is called Voodoo Hot for a reason!). Their marinade is what makes these grilled Jamaican jerk chicken sandwiches soooo good.

  • Let the chicken marinade for at least 4 hours (and up to 24 hours).
  • Fire up your grill for direct and indirect cooking.
  • Shake off any excess marinade from the chicken and place over direct heat. Sear for a few minutes, then rotate 90 degrees and cook another 2 minutes or until you get those perfect grill marks. Flip and cook another 2 minutes. Remove to indirect heat and cook until done.
  • Lightly toast the buns on the grill.
  • Assemble the sandwiches by topping buns with chicken and slaw.
