Slow Cooker Steak Fajitas

I have a slow cooker for the same reason most people have one: it’s easy. But even though I like easy, I love flavor more. I won’t trade taste for convenience, which is why I really liked these slow cooker steak fajitas. The beef simmers low and slow, taking on the great flavors from onion, peppers and salsa, along with a really fantastic fajita seasoning.

Slow Cooker Steak Fajitas

I topped these slow cooker steak fajitas with a very simple but flavorful sour cream mixture. All you do is take a little sour cream and add chipotles in adobo. In a crunch for time? Just use chipotle salsa instead of chopping chipotles.

The better the salsa you use the better these fajitas will be. Don’t opt for the cheap stuff.

Also try my slow cooker Sloppy Joes.

Grilled Chicken Fajita Sandwiches

Boneless, skinless chicken breasts were on sale the other day so I backed up the truck and bought a few family packs. I decided to make some grilled chicken fajita sandwiches. I often make chicken sandwiches, but I like to butterfly the breasts first so they aren’t so thick. You get more flavor that way, you get more out of your chicken, and the texture is better I think. I don’t like biting through a 1″ thick piece of chicken breast. But that’s just me!

Grilled Chicken Fajita Sandwich

For these grilled chicken fajita sandwiches I first marinated the chicken for 2 hours then tossed it into the grill. Meanwhile, I made a simple (but fantastic) roasted poblano cream sauce for topping the sandwiches. The sauce itself is amazing (and perfect as a dip, or in baked potatoes) and it compliments the smoky grilled chicken flavor perfectly.

Also try my roasted chicken sandwich with roasted green pepper mayonnaise.

Fajita Seasoning Mix

We love our taco seasoning mix. It has a great spicy flavor that is perfect with ground beef for tacos. For fajitas we use this mix. Fajita seasoning mix doesn’t just have to be used on fajitas. We enjoy it mixed in (about a tablespoons worth) with sauteed bell peppers and sweet onions (one each medium green and red bell peppers and a medium sweet onion), which we then used to top burgers and hot dogs.

Fajita Seasoning Mix

We seasoned a few home-ground beef patties with the mix, grilled them, then served them topped with the veggies, which were sliced.

Sprinkle a bit of the mix on hot dogs, grill them, and serve them on buns topped with the fajita-seasoned veggies (and a little cheese). We chopped the peppers and onion for the hot dogs.

Make a big batch of this and keep it in an airtight container in your pantry. This mix is perfect on beef. For chicken fajitas, try my chicken seasoning.

Chicken Fajita Marinade

We made some chicken fajitas on the grill the other night. We marinated the chicken first, using the chicken fajita marinade recipe below. Normally I use chicken tenderloins for something like fajitas, but a search of our freezer turned up nothing so I sliced chicken breasts instead.

This marinade has a nice citrus flavor from the lime, with a slight hint of smoke. Don’t be afraid to use more cayenne if you like a little more heat.

This marinade is perfect for chicken fajitas. For beef, try my fajita seasoning.
