Lemon Pepper Corn on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Chicken is my favorite thing to cook on my Big Easy. Corn-on-the-cob is my second most favorite. You can season it a million ways and no matter what, it always comes out sweet and tasty. Like this lemon pepper corn on the Char-Broil Big Easy. This is why the arrival of sweet corn season is such a happy time for me.

It Couldn’t Be Easier

You cannot screw up lemon pepper corn on the Char-Broil Big Easy. Well, you could if you let it overcook, I guess. But, it’s pretty unforgiving. If you’re not sure that it’s quite done, just life up a piece and poke a kernel with a toothpick. If the toothpick inserts with just a little resistance and the kernel ‘pops’, you’re good-to-go.

Corn-on-the-cob on the Big Easy is also great with lime pepper seasoning. As good as my garlic Old Bay corn!

Lemon Pepper Corn on the Char-Broil Big Easy

Lemon pepper corn on the Char-Broil Big Easy is why the arrival of sweet corn season is such a happy time for me.

Ingredients

  • 4 ears corn-on-the-cob husks and silks removed, cut in half
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon lemon pepper seasoning more or less, to taste

Instructions

  • Fire up your Big Easy.
  • Brush corn with the butter. Sprinkle with the lemon pepper.
  • Place corn into the Big Easy basket. You'll need a Bunk Bed basket to cook all of the corn at once.
  • Cook in the Big Easy for 20-25 minutes or until the corn is tender.

Notes

You’ll need a Bunk Bed basket or two to cook more corn at once on your Big Easy.

I was already addicted to sweet corn-on-the-cob before the Char-Broil Big Easy came along. The Big Easy, though, made my addiction much, much worse. I cannot get enough easy Corn-on-the-Cob on the Char-Broil Big Easy. Just like the name of the cooker, it’s easy to make. I just take a few ears of corn, shuck them, brush on a little butter and add my favorite seasonings. I often make my own seasoning, but I’ve found that McCormick’s Perfect Pinch seasonings make for the perfect corn topping.

The Timing Isn’t Super Critical

Corn-on-the-cob takes about 25 minutes in the Big Easy. It’s sort of hard to overcook so don’t be upset it you let it go a few minutes longer.

I used McCormick’s Perfect Pinch Vegetable seasoning. My wife and I both love it. It doesn’t bury that great corn flavor, just enhances it. Perfect! You can of course just use salt and pepper.

Instructions

  • Fire up your Big Easy.
  • Place the 8 pieces of corn onto pieces of foil.
  • Place the butter in a small saucepan over medium heat and stir until the butter is melted. Brush over the tops of the corn and sprinkle with the seasoning and a few pinches of salt.
  • Rotate and brush the other side of the corn and sprinkle with more seasoning and salt..
  • Seal tightly in the foil and place into the Big Easy basket.
  • Cook in the Big Easy for 20-25 minutes or until the corn is tender.

Notes

Note: To cook all 4 ears (8 pieces in all) of corn you’ll need a Bunk Bed basket for your Big Easy.

The Char-Broil Big Easy is a fantastic all-around cooker. And as much as I use it to cook poultry, that’s not all it does perfectly. This Cajun corn-on-the-cob on the Char-Broil Big Easy is just another great side dish. As with just about anything on the Big Easy, it’s no-fuss and as easy as can be. The corn comes out packed with spicy buttery goodness, cooked perfectly.

Light On Heat, Heavy On Flavor

There is a nice little kick to Cajun corn-on-the-cob on the Char-Broil Big Easy. If you’re worried it might be too spicy (it’s really perfect to me), cut back on the cayenne and red pepper flake. I wouldn’t eliminate them completely. That little heat balances well with the sweetness of the corn. This corn goes great with my Cajun Creole chicken on the Big Easy.

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Also try my Buffalo blue cheese and honey-butter corn on the Big Easy. Nothing is easier than making corn on a Big Easy!

Nothing beats fresh, in-season corn-on-the-cob. Although there’s lots of ways to cook up sweet corn, I love to add just a bit of flavor, wrap it in foil and toss it into my Big Easy. In no time I am enjoying delicious, sweet, juicy corn. There’s nothing wrong with eating corn with nothing added, but sometimes I like to add a little twist, from Mexican- or Italian-inspired flavors or a bit of smokiness. You can’t go wrong no matter what you add to this corn in packets on the Char-Broil Big Easy. Or don’t add.

Corn in Packets on the Char-Broil Big Easy

Ingredients

  • 2 ears corn shucked and cut in halves

For Mexican-style corn

  • 1 tablespoon unsalted butter melted
  • 1 tablespoon Cotija cheese crumbled
  • 2 pinches cayenne pepper
  • lime juice
  • cilantro chopped, for garnish

For Italian-style corn

  • 1 tablespoon unsalted butter melted
  • 1 tablespoon Parmesan cheese grated
  • lemon juice
  • parsley chopped, for garnish

For Smoky corn

Instructions

For Mexican-style corn

  • Place corn on small sheets of foil.
  • Brush with melted butter and sprinkle with Cotija cheese, cayenne pepper and lime juice.
  • Wrap corn ears tightly and place in a hot Big Easy.
  • Cook for 20 minutes until tender.
  • Garnish with chopped cilantro and serve.

For Italian-style corn

  • Place corn on small sheets of foil.
  • Brush with melted butter and sprinkle with Parmesan cheese and lemon juice.
  • Wrap corn ears tightly and place in a hot Big Easy.
  • Cook for 20 minutes until tender.
  • Garnish with chopped Italian parsley and serve.

For Smoky corn

  • Place corn on small sheets of foil.
  • Brush with melted butter and sprinkle with smoky paprika and cayenne pepper.
  • Wrap corn ears tightly and place in a hot Big Easy.
  • Cook for 20 minutes until tender.
  • Garnish with chopped Italian parsley and serve.

Notes

You can fit 2 halved ears of corn in the basket of the Big Easy. Add a bunk bed basket to double the amount of cooking area or a cooking rack to make 6 or more ears at once.
