Slow Cooker BBQ Pot Roast

I’m not ashamed to say it. I can put away some pot roast. Put a bowl of pot roast in front of me, and there’s only one outcome: an empty bowl. Put a bowl of this slow cooker BBQ pot roast in front of me and there’s only one outcome: me asking for seconds and probably thirds, with nothing but empty bowls between rounds. That same great flavor as a traditional pot roast, completely amped up with BBQ flavors. This is surprisingly different and really a treat to eat!

A Bowl Of Happiness

I used a sweet and spicy BBQ sauce when I made this slow cooker BBQ pot roast. You want something with a smoky flavor, and maybe even a bit of a spicy kick. After all, this isn’t your normal pot roast. I wouldn’t go with something that’s over-the-top sweet but a little bit is ok. Just like with the heat. A little heat is a good thing.

The broth in this pot roast screams ‘dip something in me’. So I made some Italian breadsticks on the side. I saved as much of the broth as I could for the end, at which point I got to soppin’ with my breadsticks!

  • Place everything into your slow cooker, starting with the meat first.
  • Cook on low 8-10 hours or until the meat is fall-apart tender, stirring every hour after the first 4 hours.
  • Add more water as you go if the pot roast is thicker than you prefer.
  • Chop the meat as you like.
  • Serve hot.

Notes

I put my cutting board inside a rimmed baking sheet before chopping the roast. That way the juices don’t run all over the place.

Slow Cooker Italian BBQ Chicken

I knew exactly what I was going to do with this slow cooker Italian BBQ chicken as soon as I saw the recipe. Po Boys. I knew that the tender chicken, cooked in BBQ sauce and Italian dressing, would be perfect on French bread and I was right. The chicken has just a hint of sweetness, a bit of a tanginess, and a bit of heat. Perfect for a sandwich of any kind. I loved the contrast of the melt-in-your-mouth chicken and the crunch of onion and iceberg lettuce. Yum!

I didn’t mess around making a sandwich. I loaded up on the chicken. Thick onion slices (soaked in water for 30 minutes to cut a little bit of that onion heat). Ripe tomato. Plenty of shredded lettuce. Heck yeah, it was messy. And messy is good.

Open To Changes

You can really change up the taste of this slow cooker Italian BBQ chicken by using a more herby or zesty dressing or by adding different BBQ sauces. Smoky, hot, mesquite, etc BBQ sauces would all really make for different tastes. That way you can make this chicken again and again without getting bored with it.

Slow Cooker Spicy Spaghetti and Meatball Soup

I have a slow cooker (er, crockpot) for the same reasons everyone else does. I on occasion like a great, easy meal that I can toss into the pot and not have to fuss with. A Dutch oven over low heats works just as well, specially if you need to brown something first. For this slow cooker spicy spaghetti and meatball soup it doesn’t matter whether you go low-and-slow in the crockpot or Dutch oven, the end result is great. It’s like having Campbell’s SpaghettiOs™ but with much better, richer flavor, and a nice kick. And really big meatballs. Who didn’t want more meatballs in their SpaghettiOs™ when they were a kid? I sure did. I probably threw fits about it, too! Well, problem solved!

A Great Meal For A Crowd

I used packaged frozen meatballs for this slow cooker spicy spaghetti meatball soup. Our homemade Italian meatballs (made on the stovetop or in the Char-Broil Big Easy) would be great too. Outstanding, even. Either way, this makes a good batch of soup. Plenty for a small crowd.

You can leave out the red pepper flake, but I think you’ll want to add at least a little. And don’t be shy with the basil either.

Slow Cooker Cubed Steaks with Gravy

I woke up last Tuesday and all of a sudden it hit me. Eureka! I needed to make something simple but comforting in my slow cooker. I don’t know why, but the idea crept into my head and I could not get rid of it. Fact is, I hadn’t had cubed steak in years and years, so that seemed like a good start. Gotta have gravy too, then. My slow cooker cubed steaks with gravy hit the spot. Nothing fancy, nothing complicated. Just toss a few ingredients into the slow cooker and let ‘er go for a bit.

Beef And Gravy Goodness

Sure, I love the beefy flavor of the cube steaks. And oh, they are so tender and juicy! But I have to I admit, it’s the gravy that is the star of the show for me. That’s due in large part to the fact that I am a gravy-aholic. Big time. It’s my favorite thing at Thanksgiving. Fortunately, these slow cooker cubed steaks with gravy make plenty of delicious, flavorful gravy. Perfect over the cubed steaks and awesome over mashed potatoes!

What? No French Onion Soup?

As an aside, if you can’t happen to find French onion soup at your grocery store, you can substitute a can of beef broth or gravy. I guess everyone around me had the same idea and raided all of the French onion soup the day I went to the market so I had to improvise. No problem, everything still came out great!

Slow Cooker Cubed Steaks with Gravy

  • Lightly spray the inside of a 6-quart slow cooker with non-stick spray.
  • Add in the packet of au jus, both cans of soup and the water. Stir well.
  • Season the cube steaks (I'd go light on the salt, but heavier on the pepper) and add to the slow cooker.
  • Cover and cook on low for 6-8 hours. If desired, flip the steaks once halfway through the cooking time to get the sauce well-coated onto the cube steaks.
  • In a small glass or bowl, whisk together the cornstarch and water until well combined.
  • Carefully remove the steaks from the slow cooker and place on a plate.
  • Stir the cornstarch mixture into the slow cooker.
  • Add the steaks back in and turn the heat to high.
  • Cook another 30 minutes to thicken the gravy.
  • Serve steaks covered in the gravy.

Notes

Great served with mashed potatoes.

My wife and I both agreed that these slow cooker spicy Italian beef sandwiches were absolutely fantastic. And besides tender, juicy beef, you also get great Italian spice flavors. All served on a sub bun with plenty of smoky provolone cheese. Every bite of this sandwich is perfect.

Kick it Up Even More

To really kick up your slow cooker spicy Italian beef sandwiches use hot pepperoncini and Giardiniera, and substitute habanero jack cheese for the provolone. You’ll have the perfect game-time sandwich.

You may or may not need all of the peppers and Giardiniera I listed for the sandwich build. It all depends on how much you like on your sandwiches. Me, I like pepperoncini, and lots of it, on top. I only used the Giardiniera in the slow cooker and didn’t add any to the sandwich. To each his own!

For the Italian beef

For the sandwiches

  • 10 Hoagie buns or steak sandwich rolls
  • 10 slices Provolone cheese sliced
  • 1 12 ounce peperoncini slices, drained
  • 1 12 ounce Giardiniera drained, lightly chopped

Instructions

For the Italian beef

  • Add beef broth to slow cooker set to high.
  • Stir in the dressing seasoning and red pepper.
  • Add the peppers and Giardiniera.
  • Add meat and cover.
  • Cook on high for 6-8 hours or low for 10-11 hours until the meat can be shredded.
  • Remove meat, shred, and return to the slow cooker and cook another hour.

For the sandwiches

  • Open buns and add cheese slices. Make sure to cover the bread with the cheese – it’ll help keep the buns from getting overly soggy.
  • Add shredded meat.
  • Top with pepperoncini and chopped Giardiniera as desired.
