It’s impossible to get tired of roasted chicken. Though sometimes I do like to mix it up a bit and make beer can chicken. It’s just as easy as not-beer-can-chicken, and comes out packed with flavor and is so moist and tender…. yum! For my honey brown beer can chicken on the Char-Broil Big Easy I used a great honey brown ale and a slightly herby seasoning that paired perfectly with the beer. The chicken smelled so great while it was cooking that I just sat next to the Big Easy, inhaling the wonderful aromas.

Blaze Your Own Trail

Yep, most food blogs take pictures of their beer can chickens from the front, also known as the ‘money shot’. Me, nope. I went for the flip side of my honey brown beer can chicken on the Char-Broil Big Easy.

Oh That Crispy Skin

Also, look at that great color! And yes, the skin is crispy. Even if you’re trying to avoid fat, I double-dog dare you to not at least try a piece of the skin. For something different, try my beer can cabbage on the Big Easy. It’s different for sure!

For my honey brown beer can chicken on the Char-Broil Big Easy I used a great honey brown ale and a slightly herby seasoning that paired perfectly with the beer.

Instructions

  • Fire up your Big Easy.
  • Rinse the chicken and pat dry.
  • Lightly brush the chicken with oil.
  • Combine the remaining ingredients except for the beer. Reserve 1 teaspoon of the mixture. Sprinkle the remaining seasoning onto the chicken.
  • Add reserved spice mixture to the beer and insert into the chicken.
  • Place chicken into the basket and insert into the Big Easy.
  • Cook for 15 minutes per pound or until the chicken has hit 165 F as measured in several locations.
  • Let rest 15 minutes before removing the beer can and carving.

Notes

I use the Char-Broil folding chicken roaster to hold the beer or soda cans securely. If the beer you’re using is only available in a bottle, just empty the contents into an empty beer or soda can.

Don’t be fooled by the lightly charred chicken exterior. Inside this Cajun marinated chicken on the Char-Broil Big Easy is fantastically moist, tender, flavor-packed chicken. Just like you always get when you cook chicken on the Char-Broil Big Easy. Ready in less than an hour it’s perfect sliced. Perfect cubed over salads. Perfect picked up and devoured.

Load Up And Get To Cookin’

I used the regular ole basket that comes with the Big Easy when I made this Cajun marinated chicken on the Char-Broil Big Easy. You can fit 4 decent-sized chicken breasts in the basket, but you might have to stand them on end. That’s fine. Just don’t let them touch too much or they won’t cook evenly.

The marinade is just a tad bit spicy, but even the most heat-fearing folk will like it. For something a bit more mellow, give my Big Easy Montreal chicken a try.

Ingredients

  • 2 large chicken breasts skin removed

For the marinade

Instructions

  • Place the chicken into a re-sealable bag or container.
  • Whisk together the remaining ingredients and add to the bag.
  • Seal and toss gently to coat.
  • Refrigerate for 3 hours, turning occasionally.
  • Fire up your Big Easy.
  • Remove the chicken from the bag and shake off any excess marinade.
  • Place into the Big Easy basket and lower into the cooker.
  • Cook until chicken is done, 45 minutes to an hour.

Notes

Make sure all pieces of chicken reach 165 F before removing from the cooker.

You can take a big ole chicken, season it, and drop it into a Char-Broil Big Easy and in no time (15-20 minutes per pound, usually), have a fantastically tender, juicy, flavorful bird. And I cook chicken in my Big Easy just like that, and often. This time, though, I decided to go the beer can route, using a flavor-packed apple ale to infuse even more flavor and moisture into the chicken. The end result of this Apple Ale Beer Can Chicken on the Char-Broil Big Easy was delightful with a hint of apple and as always, the crispiest skin you’ve ever had.

Beer. Or Not Beer.

If you’re not a beer person, you can substitute a good apple cider or juice instead. If it doesn’t come in a can just drink up a can of your favorite drink and pour the beer or cider or whatever into the empty can. But, beer makes a difference in this Apple Ale Beer Can Chicken on the Char-Broil Big Easy.

It’s Hot!

Be careful when you remove the chicken from the Big Easy. The beer is hot (mighty hot!) and you don’t want to slosh it onto yourself. And make sure you’re also careful when you go to remove the can. Same story: hot.

  • Combine the olive oil and balsamic vinegar and brush onto the chicken.
  • Combine the taragon, salt and pepper. Reserve 1 teaspoon of the mixture. Sprinkle the remaining seasoning onto the chicken.
  • Add reserved spice mixture to the beer (take a few drinks first to make room) and insert into the chicken.
  • Place chicken into the basket and insert into the Big Easy.
  • Cook for 15-20 minutes per pound or until the chicken has hit 165 F as measured in several locations.
  • Let rest 15 minutes before removing the beer can and carving.

Sure, I’ve made bacon-wrapped jalapeno poppers. A lot of times. And I love them. But not everyone loves a little kick in their appetizers like I do, so that’s when these sausage-stuffed peppers on the Char-Broil Big Easy take the stage. The peppers get a nice little char on them. They have a little sweetness to them. The sausages bring a wonderful smokiness, and they kind of ‘pop’ when you bite into them. That’s a bit unexpected. The cream cheese? Well, it’s creamy. All wrapped in bacon goodness with a sprinkle of rub.

Use Your Favorite Rub Or Seasoning

I used the rub for my root beer can chicken on these sausage-stuffed peppers on the Char-Broil Big Easy. The rub has a little smoky flavor to it, along with a bit of garlic and just a very, very small hint of spiciness. Not enough to offend those that prefer mellower snacks. You can use your favorite rub or seasoning. I recommend something that has a little smokiness to it to give these that done-on-the-grill flavor.

Sausage-Stuffed Peppers on the Char-Broil Big Easy

Not everyone loves a little kick in their appetizers like I do, so that’s when these sausage-stuffed peppers take the stage.

Instructions

  • Fire up your Big Easy.
  • Cut the peppers in half lengthwise and remove any seeds and membranes.
  • Divide the cream cheese between the peppers.
  • Add the sausages and press down slightly to fit snuggly inside the peppers.
  • Wrap the peppers with the bacon and sprinkle with the rub.
  • Place into the Big Easy basket and bunk bed basket and cook for 20-25 minutes or until the bacon starts to crisp and the peppers have softened.
  • Let cool slightly before serving.

Notes

You’ll need a Bunk Bed basket to cook 20 peppers at once.

Stubb’s Chicken Rub Chicken on the Char-Broil Big Easy

I use a lot of products from Stubb’s, from sauces to marinades. I’ve been very happy with them all. That’s why I decided to use some of Stubb’s chicken rub on a whole chicken and drop it into my (awesome) cooker, the Char-Broil Big Easy.

The Big Easy cooked the bird in 15 minutes per pound. The Stubb’s seasoning added a little sweetness. It also added a mild mustard flavor. I’ve rubbed beef in mustard before but never added mustard flavor to chicken. It was fantastic!

Try It As Beer Can Chicken

I did make my chicken a beer can chicken by adding a bit more Stubb’s chicken rub to a can of beer that I then inserted into the chicken. You can skip that part if you wish, or use an empty soda can with chicken broth added. There’s no wrong with Stubb’s chicken rub chicken on the Char-Broil Big Easy because the oil-less fryer cooks chicken right every time. The skin always comes out crispy and dangerously delicious, to say nothing of how tender and moist the meat is, dark or white!

Stubb’s also makes a chicken and citrus marinade that is also great on chicken cooked in the Big Easy.

Multiple Bunk Bed Baskets on the Char-Broil Big Easy

I’m always on a search for ways to add more cooking capacity to my Char-Broil Big Easy. I started with my homemade Wingin’ator 3000, which works great but you do have to make it yourself. Then Char-Broil came out with a cooking rack that gave you 5 cooking levels. Sadly, the rack wasn’t available for sale for long. A reader of Life’s A Tomato mentioned something to me the other day that should’ve occurred to me long ago: you can use two of the Char-Broil Bunk Bed Baskets at once, giving you 3 cooking levels! Doh!

Multiple Bunk Bed Baskets on the Char-Broil Big Easy is as easy as it looks. Grab the basket that comes with your Big Easy and just lower two bunk bed baskets down into it, securing it with the handles on the sides. You’ll need to offset the two baskets by 90 degrees, otherwise the handles from the lower basket will interfere with the top basket. You can kind of see that in the picture on the right, above.

You’ll get about 3″ of cooking room on each level, plenty for wings or drumsticks. You can fit up to 6 chicken breasts on too, if they aren’t too huge. All in all, it’s a win-win!

The nice thing about this approach is that all of the baskets are dishwasher-safe, readily available, and easy to use. You don’t get quite as much cooking room as with a Wingin’ator 3000 or the (now unavailable) cooking rack, but 3 levels is plenty for a good cookout!

Roasted Cauliflower on the Char-Broil Big Easy

As much as I use my Big Easy to cook up fantastic chicken, I also use it just as much for side dishes. This roasted cauliflower on the Char-Broil Big Easy came out absolutely delicious. Tender and flavor-packed, with just a hint of smokiness from the bacon. And as with anything I cook on my Big Easy, it was easy to make.

Don’t Get A Big Head!

Make sure when you pick out the right-sized head for your roasted cauliflower on the Char-Broil Big Easy. Don’t get a really big one or it won’t fit into the cooker. Shoot for one that is about 8″ wide or a bit smaller.

For a little kick don’t be afraid to add a few pinches of dried red pepper flake to the chicken broth as you cook the cauliflower. It won’t be overwhelmingly hot, but it’ll give you a slight hint of heat.

You can roast cauliflower in the standard basket that comes with the Big Easy or a bunk bed basket (lined with foil to keep the liquid in), or the Big Easy cooking rack.

Roasted Cauliflower on the Char-Broil Big Easy

This roasted cauliflower came out absolutely delicious. Tender and flavor-packed, with just a hint of smokiness from the bacon. And as with anything I cook on my Big Easy, it was easy to make.

Instructions

  • Place the cauliflower in a pot and add the chicken stock.
  • Add the thyme and bay leaves.
  • Bring to a boil and reduce heat to a simmer. Simmer for 12 minutes.
  • Drain but reserve some of the cooking liquid.
  • Fire up your big easy.
  • Place the cauliflower into a pie pan and place into the cooking rack.
  • Pour 1/4 cup of the cooking liquid over the cauliflower.
  • Pour half of the butter over the cauliflower.
  • Sprinkle with more thyme and a few pinches of salt and pepper.
  • Place rack into the Big Easy and cook 10-15 minutes or until the cauliflower starts to turn golden in color.
  • Remove from cooker and drizzle with remaining butter.
  • Transfer to a serving platter and sprinkle with bacon and more thyme, salt and pepper to taste.

Notes

Serve immediately.

Mmmmmm. Tasty, moist, tender chicken. Montreal seasoning combines many of my favorite things: garlic, coriander, black pepper, cayenne pepper, dill seed, and salt. I made my Montreal chicken on the Char-Broil Big Easy since it makes perfect chicken every single time. In fact, I cooked 6 chickens on one of my Big Easy’s just the other day.

Perfect Chicken Every Time

It’s optional, but I went the beer can route with my Montreal chicken on the Char-Broil Big Easy. It’s not any harder to do on the Big Easy than ‘regular’ chicken. Just add a bit of seasoning to an open beer can, insert, and cook. That’s it. The Big Easy cooks chicken just great without the beer can, believe me, but it does add a little coolness factor and flavor.

If you’re not a fan of beer, don’t fret. Soda works just as well. For Montreal chicken, I’d lean towards something like root beer or maybe a ginger ale.

Root Beer Can Chicken on the Char-Broil Big Easy

The Char-Broil Big Easy does a phenomenal job cooking poultry. You don’t even have to get all fancy with it, but sometimes I like to do a little extra and make a beer (or soda) can version of my favorite whole roasted chickens. This root beer can chicken came out fantastic. I used a slightly spicy but simple rub, and a good canned root beer. Moist and tender meat with great flavor. I couldn’t have been happier.

Easy. Different. And Delicious.

The flavor from the root beer is subtle, but there. Use a quality root beer. If you can’t find one in a can, just empty (er… drink) a can of soda or beer and add the good root beer in.

There’s nothing complicated about cooking a whole chicken on the Big Easy. You can pretty much count on it taking 15 minutes per pound unless it’s really windy out. Of course you’ll still want to poke it with an instant-read thermometer to make sure it gets about 165 F, but I’ve cooked probably 50 chickens on my Big Easy and counting on 15 minutes per pound has never failed me.

Root Beer Can Chicken on the Char-Broil Big Easy

This root beer can chicken came out fantastic. I used a slightly spicy but simple rub, and a good canned root beer. Moist and tender meat with great flavor. I couldn’t have been happier.

Instructions

  • Fire up your Big Easy.
  • Rinse the chicken and pat dry.
  • Lightly brush the chicken with oil.
  • Combine the remaining ingredients except for the root beer. Reserve 1 teaspoon of the mixture. Sprinkle the remaining seasoning onto the chicken.
  • Add reserved spice mixture to the root beer and insert into the chicken.
  • Place chicken into the basket and insert into the Big Easy.
  • Cook for 15 minutes per pound or until the chicken has hit 165 F as measured in several locations.
  • Let rest 15 minutes before removing the soda can and carving.

Notes

I use the Char-Broil folding chicken roaster to hold the beer or soda cans securely. If the beer you’re using is only available in a bottle, just empty the contents into an empty beer or soda can.

Honey-Chipotle Glazed Ham on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I’m a big fan of cooking honey-chipotle glazed ham on the Char-Broil Big Easy. The ham gets a nice roasted flavor, a bit of a crispy outside, and a super-moist inside. This time I started with a 10 pound pressed ham, which I scored (a technique I need to practice) and then glazed as it cooked. No mess, no fuss, and mighty darned good in the end. The glaze has a bit of sweet and a definite kick to it. Chipotles not only add spiciness, they add a bit of smokiness, giving the ham an almost char-grilled flavor. Fantastic!

Honey-Chipotle Glazed Ham on the Char-Broil Big Easy

I’m a big fan of cooking honey-chipotle glazed ham on the Char-Broil Big Easy. The ham gets a nice roasted flavor, a bit of a crispy outside, and a super-moist inside.

  • Fire up your Big Easy.
  • Combine the Ginger Ale, brown sugar, honey and vinegar in a saucepan over medium heat.
  • Stir. Bring to a simmer and let simmer until reduced by half.
  • Add remaining ingredients and stir. Cook for another 5 minutes.
  • Remove from heat.
  • Score the ham as desired.
  • Place into the Big Easy basket and place into the Big Easy. Total cook time will be 15 minutes per pound. 30 minutes before being done, start glazing the ham ever 5-10 minutes. You’ll end up using about half of the glaze.
  • Remove ham and let rest 10 minutes before slicing or carving.
  • Return the unused glaze to the saucepan and warm slightly to use as a gravy for the ham.

Notes

Use caution removing the ham from the Big Easy basket as it and the basket are hot!
