Ham Salad Sandwich

I was digging around in the freezer when I came across a container of leftover smoked ham. My first thought was to make your standard ham-and-cheese sandwiches, but after more pondering, I decided that a ham salad sandwich would be way better. And it was. So much better.

This ham salad was fantastic on a sandwich. It has a nice bit of a crunch, and a little kick from the Cajun seasoning (I used more than a dash). The salad is also great in a wrap. And even fantastic on crackers. Got a fru-fru fancy luncheon planned? Yep, finger sandwiches with this salad are bound to impress everyone.

I absolutely stink (best word I could think of) when it comes to making boiled eggs. Hard or soft, doesn’t matter. I am egg challenged. So I picked up a little cheap egg cooker like the one below. This lil baby cranks out 6 eggs in about 15 minutes and they’re perfect each and every time! I don’t even feel bad any more that I just cannot make boiled eggs!

You can use precooked ham from your grocery instead of a home-smoked one, of course.

  • Pulse ham in a blender or food processor a few times to chop it further. Do not over-blend and create a paste. Remove to a medium bowl.
  • Add the pickle to the blender or food process and pulse a few times. Remove to the bowl with the ham.
  • Add celery, onion, mustard, and mayonnaise. Mix well.
  • Gently fold in the eggs.
  • Add Cajun seasoning and salt and pepper to taste.
  • Serve on a nice crusty bread or as a topping for crackers.

Smoked and Glazed Spiral-Sliced Ham

Spiral-cut hams from the grocery store are already cooked, and often smoked. That doesn’t mean that they can’t get even more awesome with a little more time on a smoker. A sweet glaze doesn’t hurt either. The end result is a lightly smoky flavored ham with a deliciously sweet crust. Like this smoked and glazed spiral-sliced ham that disappeared in no time.

This smoked and glazed spiral-sliced ham was perfect for sandwiches, salads, and just eaten as-is.

I prefer to use fruit or nut woods when I smoke unless I want a heavier smoke flavor. Pecan, apple or cherry are my favorites. I used apple for this ham.

For the basting sauce

Instructions

  • Fire up a smoker for cooking at 225 F. You can also make this in an oven or on a grill over indirect heat, but be careful to not dry out the ham – keep the temperature low and baste it often.
  • Add 2 small chunks of cherry or apple wood. Do not add very much wood or it will over-power the ham, since it is already smoked.
  • Sprinkle the ham with the rub and massage it into the meat. Transfer the ham to the smoker.
  • Combine the syrup and butter.
  • Every 1 hour, baste the ham with the basting sauce.
  • Continue cooking for about 5 hours or until the internal temperature of the ham reaches 140 F. Remember, the ham is already cooked. You’re just warming it and adding flavor.
  • Let the ham rest for 20-30 minutes before carving.

Zesty Grilled Ham Steak

The glaze on this zesty grilled ham steak is easy to throw together. It combines the sweetness of brown sugar, the tartness of lemon, and the kick of horseradish. It makes for a great side for breakfast-for-dinner.

This glaze would be great on other pork dishes… such as grilled pork loin or tenderloin. You could also brush the glaze onto bacon just before it’s done baking in the oven.

I love cooking up breakfast on the grill, even if it’s just a side dish or an ingredient I’ll use as part of a bigger dish, like my smoked crumbled breakfast sausage.

  • Fire up a grill for medium-heat cooking.
  • In a small sauce pan, combine the brown sugar, horseradish, lemon, and Cajun seasoning (if desired). Stir. Bring to a boil and reduce the heat to a simmer. Stir, and continue simmering until thickened. Remove from heat.
  • Place the ham steak over the medium heat on the grill. Brush with the glaze.
  • Grill for about 5 minutes, then rotate to get those great grill marks. Add more glaze and cook another 5 minutes.
  • Flip, glaze, and cook another 10 or so minutes. Add more glaze just before removing.

I once worked near a W.G. Grinders, my favorite place for baked sandwiches at lunchtime. Sadly, W.G. Grinders no longer has any locations open in Indiana (there are a few in Ohio). They sure made great sandwiches. Now I have to make a ham and cheese grinder at home to satisfy my cravings.

  • ½ stick unsalted butter melted
  • 1 teaspoon garlic powder more or less
  • 1 loaf French bread
  • ¾ pound deli ham sliced thin
  • ½ pound provolone cheese sliced thin
  • ½ teaspoon paprika

Instructions

  • Preheat oven to 350 F.
  • Combine the butter and garlic powder. Add more garlic powder, to taste, if needed.
  • Split the French bread lengthwise and lay open. Brush both open sides with butter. Transfer to a baking sheet.
  • Add ham and cheese, then sprinkle with the paprika.
  • Bake for 15 minutes or until the cheese is melted and the bread is crispy.

Hot Country Ham Dip

This hot country ham dip is another great recipe from the book, Race Day Grub that I picked up the other day. The first recipe we made, the Harvick’s Mexi-Cali dip, was perfect for race watching. This dip is savory, making for a great contrast to the heat of the first dip.

  • Preheat oven to 350 F.
  • Spray an 8″ x 8″ baking dish with non-stick spray.
  • Combine the cream cheese, sour cream, ham, onion and garlic powder in medium bowl.
  • Pour mixture into baking dish and spread out evenly using a spatula.
  • Melt the butter in a small skillet over medium high heat.
  • Stir in the Worcestershire sauce and add the pecans. Cook, stirring often, for 3-5 minutes or until the nuts start to brown.
  • Spoon the nuts over the cheese mixture.

Ham Salad Filled Avocados

These ham salad filled avocados reminded me of a similar dish we used to eat in Lima, Peru. They’re fresh, light, and very tasty. The salad is nice and creamy and smooth and would be great just by itself. The mandarin oranges add a fantastic explosion of citrus flavor. Finally, there’s the perfectly ripe and creamy avocado. These ham salad-filled avocados are a perfect light lunch on a summer day.

Fortunately, avocados were on sale here last week. They’re very versatile and probably my favorite fruit. They’re definitely my favorite when they are filled with salad.

I recently discovered Blue Plate mayonnaise, which I think is the best around. If you can’t find it locally you can pick it up online for a fair price.

  • Cut avocados in half and remove the seeds. Sprinkle with the lemon juice. Pre-cut into segments if desired, but don’t cut all the way through the fruit.
