Garlic Lobster Tails on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

This was my first time cooking lobster tails. Prior to this great moment in history I had no experience cutting the shells, cleaning them or even buying them. I wanted everything to be as easy to do as possible, so I opted to cook garlic lobster tails on the Char-Broil Big Easy. I could not have been happier with the results. Tender, buttery, garlicky lobster tails cooked absolutely spot-on perfect. And with just a slight kick of Cajun seasoning.

Seasoned Simply

You could add whatever seasonings you want to these garlic lobster tails on the Char-Broil Big Easy. I figured since this was my first experience with cooking lobster tails I would go simple. I didn’t want to bury the great lobster flavor with some over-the-top seasoning.

Cook Time

Cook time was about 20 minutes for the two tails I used. Make sure you select tails that are as close to the same size as possible so they cook in the same amount of time. If you use a bunk bed basket to cook on multiple levels at once, keep in mind that some levels may cook at a different rate than others. Always check the temperatures (you’re aiming for 140-145 F) in all tails before removing them to serve. You definitely do not want to overcook them or they will become tough and you will be sad.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Crab legs are also fantastic on the Big Easy.

Garlic Lobster Tails on the Char-Broil Big Easy

Tender, buttery, garlicky lobster tails cooked absolutely spot-on perfect. .

Ingredients

  • 4 4 ounce lobster tails (thawed, if frozen)
  • 4 teaspoons garlic minced
  • 6 tablespoons unsalted butter cut into cubes
  • 1 lemon juiced
  • 1 lemon quartered
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon seafood seasoning

Instructions

  • Fire up your Big Easy.
  • Using kitchen shears, cut the lobster tails down the back to the tail. Do not cut the tail, you want the end of the lobster to stay intact.
  • Gently pry the shells open just enough to get your fingers inside to separate the meat from the shell and remove any vein that may be present. Rinse with cold water and pat try.
  • Divide garlic and butter between the tails.
  • Drizzle with the lemon juice and sprinkle with the seasonings.
  • Transfer tails to the Big Easy basket and Bunk Bed basket. Add lemon wedges.
  • Lower into the Big Easy and cook for 15-20 minutes or until the lobsters reach 145 F. and the meat is opaque Do not overcook.
  • Serve with the lemon wedges.

Fowl Play Chicken on the Char-Broil Big Easy

Fowl Play marinade by The Shed BBQ adds tremendous flavor to any cut of chicken. As soon as I opened it I knew that I was in for nothing but goodness. I detected soy sauce. Apple juice. Citrus. It’s tangy with a slight hint of vinegar. Fowl Play Chicken cooked on the Char-Broil Big Easy comes out incredibly flavorful all the way through.

This Is The Big Easy At Its Best.

I used split bone-in chicken breasts, marinating them for 4 hours before placing them into the Big Easy. The skin doesn’t get crispy because of all that time in the marinade, but the meat… oh my goodness. So tender and juicy and good! Incredible. If you’re looking for a quick, painless way to make masterful chicken on the Big Easy this is it.

I was a bit worried that maybe some of the spices in Fowl Play might burn from the high heat in the Big Easy but they did not. You have to watch for that if you’re using anything with large chunks of things like minced garlic.

I’m a big fan of store-bought marinated chicken like this Fowl Play chicken or Chiavetta’s chicken cooked on the Big Easy. It’s as simple as it gets.

Char-Broil The Big Easy Better Basket

This is a preliminary look at the new Char-Broil The Big Easy Better Basket. I have three Big Easy oil-less fryers (NOT the Smoker Roaster & Grill!) and many of the rigid baskets. I was looking forward to this basket if nothing else because it folds up to a smaller size.

Ok, so first out of the box. It’s flat. Cool! You just pick up on the handle and BOOM a basket!

It’s Like Magic

The Char-Broil Bigger Better Basket unfolds easily and becomes a big basket, bigger than the standard basket. It’s a little taller and a little wider (at the top). Better for bigger birds, for sure! It is made of stainless steel. The base is the same size as a standard basket. The rings are connected by stainless steel wires that are on swivels so they can rotate as you unfold the basket. With the wires being non-rigid I think inserting/removing a turkey or large chicken will be easier with this basket.

Easy Clean Up

Here’s a close-up of how the wires connect. I’m guessing that they might be a little challenging to clean. The basket is dishwasher safe. I admit that I usually just toss my other Big Easy baskets into the dishwasher after I use them. First, I knock off any easy-to-remove remnants of whatever I was cooking. I don’t worry so much about them looking like I just bought them.

Let It Open Completely

There’s a handle, just like on the regular basket. It’s easy to pick up.
The basket slid into my Big Easy with no problem.The basket is smaller at the bottom than the top (that’s how it collapses on itself). Just something to keep in mind when you pick a bird for cooking. The bottom of the basket is the same size of the standard basket, 9″ across.When you unfold the basket you have to rotate your hand a bit, allowing for the basket to twist. If you don’t the rings and wires and swivels can get caught up on themselves.

Big Enough For A Big Turkey

It’s an easy thing to untangle, and not anything to complain about. Once you realize you need a soft touch on the handle it’s easy to unfold the basket time-and-time again. Unlike the standard basket, there’s no way you’ll get a bunk bed basket into the Better Basket, at least not on the lower level. It does fit, but it leaves you with only about a 1″ gap below the bottom rack.

Add A Bunk Bed Basket Too!

You can, however, put a bunk bed basket at the top. This will give you two cooking levels which is usually crucial when cooking something other than full birds. The bunk bed would be near the top of the Big Easy, higher than if you put it into a standard basket, so foods there will cook at a different rate.

I’ll pick up a whole chicken or turkey soon and give my Better Basket a whirl. I’ll let you know how it goes. Until then, happy cooking!

Yes! Oh yes! How I do love my chicken with a little kick. I made some fiery chicken breasts on my Char-Broil Big Easy and they had that great spicy hit. Not too much, and not too little. Perfect. The meat was moist, tender and had the perfect flavor. All thanks to a quick marinade in Goya’s Mojo Chipotle marinade!

As Mistake-Proof As You Can Get

I’ve cooked literally hundreds of chicken breasts on my Big Easy and I can say it’s pretty much impossible to goof it up. I mean you’d have to work really hard at it. This recipe is a great example. Marinate the chicken, drop it into the Big Easy (ok, put it in the basket first!) and cook until done. Boom. That’s it.

Goya’s Mojo Chipotle marinade has a great southwestern flavor with just a little spicy smokiness. If you’re afraid of heat don’t worry because it won’t overwhelm you at all. It’s just right. If you can’t find it in your local store or don’t want to order it online, try my Kick’N Chicken Legs instead.

Loaded Roasted Twinkies on the Char-Broil Big Easy

Oh how I do love cooking Twinkies on my Char-Broil Big Easy. They’re the world’s easiest dessert, topped with darn near anything you have in the pantry, fridge or freezer. The Twinkies take only a few minutes to get a nice little crunch on the outside, while the insides get all oooey gooey. I topped my loaded roasted Twinkies on the Char-Broil Big Easy with Nutella, marshmallows, whipped cream, toffee and for a hint of healthy, some fresh strawberries.

The Big Easy Does Dessert Too!

Spreading a bit of Nutella on the Twinkies first gives the remaining ingredients something to hold onto. They don’t slide off and into the pan. That’s not to say that if they did slide off that it’d be the end of the world. The more toppings the better because loaded roasted Twinkies on the Char-Broil Big Easy are meant to be loaded!

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Also make up a batch of chocolate chip cookies or some bloomin’ apples for dessert. On your Big Easy. Yep, that’s right, on your Big Easy!

  • Spread most of the Nutella out on the bottom of the pie pan.
  • Add the Twinkies then top with the remaining Nutella (It gives the marshmallows something to stick to).
  • Place into the Big Easy for 10 minutes or until the Twinkies start to brown and crisp a bit and the marshmallows have melted.
  • Remove and add whipped cream, Toffee and berries.
  • Serve.

I could’ve fired up my gas grill to cook a batch of hot dogs. Or lit some charcoal. That’s when I had a ‘duh’ moment. The Big Easy! It cooks everything great, so why not use it! So that’s what I did and wow, I have to say it cooks up hot dogs about as quick and as easy as you could possibly get. Just fire it up, load it up and wait. Read a book, watch some TV, play a game, because there’s no turning, no worrying, no burning. Hot dogs on the Char-Broil Big Easy are done in no time and roasted perfectly! Say hello to the new way to cook up hot dogs!

Pick Your Kabob

Char-Broil makes two different kabob sets for the Big Easy. One sits on the bottom of the Big Easy with the kabobs extending upwards. The other rests on top of the cooking basket with the kabobs pointing downward. Either one will work just fine for cooking up a nice big batch of hot dogs. There’s plenty of room in the Big Easy for jumbo dogs, too.

For something totally different, try marinating your hot dogs first.

  • 8 hot dogs you can also substitute fresh, uncooked sausages but you’ll have to increase the cook time

Instructions

  • Fire up your Big Easy.
  • Thread the hot dogs onto the Big Easy kabobs. If using the holder that points downward be sure you use the cotter pins or the dogs might slide down and off as they cook.
  • Lower the kabobs into the Big Easy and cook for 12 minutes or until done as desired.

Notes

I easily fit 8 regular-sized hot dogs onto the kabobs. I might could squeeze 8 more. If you use bun-length dogs you’ll only be able to fit 8.

SPAM on the Char-Broil Big Easy. Yep, I did it. I was expecting not-so-spectacular results. What I got was deliciousness. Just slice, season and place into the cooker. Twenty minutes later, hot tasty SPAM, ready for a sandwich (or chop into scrambled eggs!)!

SPAM Heaven!

I used ‘regular’ old classic SPAM, but any flavor will do. I used my new all-purpose favorite rub, Albukirky Seasoning’s Red Chile Rub. The great southwestern flavors really worked well with the Spam. Not being one that grew up on Spam, or even had it until I was much older, I was surprised about how much I really liked Spam on the Char-Broil Big Easy.

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

You can also cook bologna on the Big Easy. And it’s way, way good.

Wow, such great flavor in every bite! The seasoning on the chicken I roasted in the Big Easy was fantastic, nicely herby. It’s a copycat of the roasted chicken Kentucky Fried Chicken used to have on the menu years ago. KFC dropped the idea, but now you can have that great taste at home. I believe KFC removed the skin from the chicken. I’ll leave the decision to do that or not to you.

More Seasoning, More Flavor

I admit, I’m often pretty heavy-handed with seasonings, especially when it comes to chicken. I find that chicken needs all the flavor help it can get. This KFC roasted chicken seasoning clone is so good I put on a little extra. It would also be fantastic on a turkey cooked in the Char-Broil Big Easy.

KFC came out with roasted chicken to compete with Boston Market. Check out my copycats of Boston Market’s Tuscan herb chicken and Famous Dave’s Roasted chicken, also made on the Char-Broil Big Easy.

Easy Large Turkey on the Char-Broil Big Easy

I’ve roasted a ton of turkeys in my Char-Broil Big Easy. It’s why I originally bought the oil-less fryer. I loved it so much the first time that I bought two more, keeping one at my parents house for a fantastic holiday turkey. This time I set out to keep the process as absolutely simple as possible. No brines. No fancy rubs. Just a 16 pound turkey, a little oil, and some seasoning and 10 minutes per pound.

Easy Every Single Time

There’s really nothing easier than cooking poultry on the Big Easy. It really is as easy as fire it up, put it in, walk away and come back later. Unless the weather conditions are really adverse, you can count on 10 minutes per pound for a turkey.

One Big Bird

I cooked a nice big 16 pound turkey in exactly 160 minutes. That’s in 30 degree weather with a very light breeze. I kept the lid off the Big Easy until the last 30 minutes to then add a little color.

I started with a pre-brined turkey. You can certainly get a natural, un-brined turkey and go thru that process, and I have. But for this cook it was about easy, and easy means getting a turkey that’s already in a solution that brined the bird for me. You can also inject your turkey for even more flavor, like my Cajun-injected bird on the Big Easy. Or try my buttermilk-marinated turkey.

You can use the basket that comes with your Big Easy, but I admit it’s a bit challenging getting a big bird in/out of it. If you’re going to do any amount of cooking on the Big Easy (and you should) I recommend that you at least get the hinged basket like you see in the picture above. It really makes getting the turkey in or out very simple indeed. See my thoughts on the accessories for the Big Easy here.

Easy Large Turkey on the Char-Broil Big Easy

No brines. No fancy rubs. Just a 16 pound turkey, a little oil, and some seasoning and 10 minutes per pound.

Ingredients

  • 1 large turkey up to 16 pounds (completely thawed if frozen)
  • Vegetable oil
  • Your favorite seasoning salt and pepper are just fine too! DO NOT use a seasoning mix that contains sugar as it might burn under high temperatures.

Instructions

  • Fire up your Big Easy.
  • Remove the turkey from the packaging along with any turkey neck and giblets that might be there.
  • Rinse the turkey in cold water and dab dry with paper towels.
  • Very lightly coat the turkey (inside and out) with the oil. You only want enough to help the seasoning adhere and to help crisp the skin.
  • Season the turkey liberally inside and out.
  • Place the turkey into the Big Easy basket and lower into the cooker.
  • Cook for 10 minutes per pound. Check for doneness, 180°F in the thighs and legs, and 170°F in the breast. Always check in multiple locations.
  • Remove the basket from the Big Easy and let the turkey rest for 15 minutes before carving.

Notes

I used a pre-brined turkey. You can easily identify a bird that is already in a brine solution by looking for the words ‘Contains up to 8% of a solution of water, salt, spices, and natural flavor’ or something similar on the packaging.

Kick’N Chicken Legs on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

It just occurred to me the other day. I have never cooked chicken legs by themselves on my Char-Broil Big Easy. I’ve done plenty of whole chickens, and tons of wings and breasts, but never legs. What the heck was I thinking? I immediately set out to remedy that situation. These Kick’N chicken legs on the Char-Broil Big Easy came out fantastic, just like all the other poultry I’ve ever cooked on the Big Easy. Super moist and tender, and thanks to Weber’s Kick’N seasoning, nice and spicy!

KickN Chicken Legs on the Char-Broil Big Easy

Not Crispy, But Mighty Delicious!

You won’t end up with crispy skin when you make these Kick’N chicken legs, but you will end up with delicious meat bite after bite. I’d say I used the right amount of the seasoning because I do prefer a little kick to my chicken, but not so much that I’m balled up on the floor crying. These legs were fantastic and spiced perfectly.

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Kick’N Chicken Legs on the Char-Broil Big Easy

These Kick’N chicken legs on the Char-Broil Big Easy came out fantastic, just like all the other poultry I’ve ever cooked on the Big Easy. Super moist and tender.

Instructions

  • Fire up your Big Easy.
  • Lightly brush the chicken legs with oil and season, to taste, with the Kick’N chicken seasoning.
  • Transfer legs to the Big Easy.
  • Lower the basket into the Big Easy and cook for approximately 20 minutes per pound, or until the legs reach 165-175 F as measured in several spots.
  • Remove and let rest 10 minutes before serving.

Notes

I used a bunk bed basket because it makes for easier cleaning. You ‘ll need a basket to cook 8 legs at a time.
