The Kick’N chicken I made on my Big Easy not too long ago really got me jonesin’ for more legs. These spicy roasted chicken legs on the Char-Broil Big Easy have a nice little kick to them. And they also have a wonderful buttery flavor kissed with a bit of citrus. Although I’m usually a split chicken breast guy, the Big Easy cooks any cut, such as legs, absolutely perfect.

Perfectly Spicy

Even if you like spicy, go easy on the cayenne first as you add it to the butter. Don’t go crazy with it. Add some and give it a taste. You can add more. It’s really hard to take it back out!

No matter what, these spicy roasted chicken legs are a treat that cook up in no time on your Char-Broil Big Easy.

Having a bunk bed basket makes it easier to cook just about anything on the oil-less fryer. It doubles the amount of cooking space.

Spicy Roasted Chicken Legs on the Char-Broil Big Easy

 These spicy roasted chicken legs have a nice little kick to them. And they also have a wonderful buttery flavor kissed with a bit of citrus. Although I’m usually a split chicken breast guy, the Big Easy cooks any cut, such as legs, absolutely perfect.

Ingredients

Instructions

  • Fire up your Big Easy.
  • Place the legs into the Big Easy baskets. Try to not crowd them.
  • Melt the butter in a small saucepan.
  • Add the remaining ingredients and stir. Brush 1/3rd of the mixture over the legs and transfer to the Big Easy.
  • Cook for 30 minutes then brush with another 1/3rd of the butter mixture.
  • Cook another 15 minutes or until the chicken temperature reaches 165 F as measured in several places, making sure to not touch the bone.
  • Brush with the remaining butter mixture and cook 5 more minutes.
  • Remove and serve.

Note: You’ll need a Bunk Bed Basket for your Big Easy to cook more than 4 legs at a time.

Perhaps ‘carrot candy’ would be a better name for these maple bacon carrots, done up right using the Char-Broil Big Easy. Who knew that carrots could be so addictingly good? Slightly sweet, slightly smoky with a little crispy bacon, these maple bacon carrots on the Char-Broil Big Easy disappeared in no time. Fortunately you can fit up to two bunk bed baskets into a Big Easy so you can actually make a pretty good sized batch at once. You’ll want to make as many as you can.

Get The Best Results

I used baby carrots, but you can also use full-sized carrots. Try to pick ones that are all roughly the same size or your cook times will vary. That’s why I went with the baby version. They’re all roughly the same size so they all got done at the same time.

For a little kick, sprinkle the carrots with a little bit of cayenne pepper or chipotle pepper powder just before serving.

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Maple Bacon Carrots on the Char-Broil Big Easy

Perhaps ‘carrot candy’ would be a better name for these maple bacon carrots, done up right using the Char-Broil Big Easy. Who knew that carrots could be so addictingly good?

Ingredients

  • 1 pound carrots baby carrots or equally-sized big carrots, peeled and cut down to fit into a Big Easy
  • 8 slices bacon cut into thirds for baby carrots, use full-sized pieces if using large carrots
  • freshly ground black pepper
  • Maple syrup

Instructions

  • Fire up your Big Easy.
  • Wrap carrots in bacon and sprinkle with pepper.
  • Transfer carrots to the Big Easy basket, bacon seam side down.
  • Place into the Big Easy and cook until the bacon starts to brown and shrink and the larger of the carrots is slightly tender, 25-30 minutes. I lifted the basket out and poked them with a long bamboo skewer.
  • Brush the carrots with maple syrup. I use a long brush for this. Just lift the basket up, holding it with one hand, and brush with the other.
  • Return to the cooker and cook another 3 minutes.
  • Remove the basket from the Big Easy and remove the carrots to a platter to cool a bit.
  • The bacon will crisp while they cool.

Notes

Use a bunk bed basket or two to be able to cook more carrots at once.

Garlic and Herb Marinated Chicken on the Char-Broil Big Easy

Weber has a line of marinade mixes that you add juice to that are really, really good. And they’re perfect for flavoring chicken before cooking it on the Char-Broil Big Easy. I picked up a package of each and used them to marinate my favorite, split chicken breasts. The garlic and herb marinade is mixed with lemon juice to produce wonderfully seasoned chicken. A hint of garlic, a hint of lemon, and a mix of earthy herbs, this Garlic and Herb marinated chicken on the Char-Broil Big Easy is fantastic!

Keep An Eye On Your Big Easy

Since the Big Easy cooks at a high temperature you do have to watch that your chicken doesn’t char. One way to help prevent that is to not use marinades containing substances that might burn, like sugar or honey. The other is to rinse the chicken before cooking. Now, you’re going to lose a bit of flavor doing that, but if like me you’re going to remove the skin before eating, it really doesn’t make that big of a difference. Garlic and Herb marinated chicken on the Char-Broil Big Easy is still going to be great.

Weber makes all sorts of great flavored Just Add Juice marinades. I’ve also made chicken marinated in their fantastic citrus herb and lemon pepper marinades.

  • Place the chicken into a resealable bag or container.
  • Add marinade to taste. Toss to coat.
  • Seal and refrigerate for at least 4 hours, turning occasionally.
  • Fire up your Big Easy.
  • Transfer the chicken to the Big Easy basket.
  • Cook for approximately 20 minutes per pound or until it reaches 165 F as checked in several places.
  • Remove and let rest 10 minutes before serving.

Notes

I prefer to rinse the marinade off the outside of the chicken since it will tend to burn. The meat has already absorbed the flavors of the marinade.

How to Stir-Fry on the Char-Broil Big Easy

I don’t know when the idea of how to stir-fry on the Char-Broil Big Easy first occurred to me. Probably late at night. Probably around the same time I came up with the idea of cooking bacon in the Big Easy. I wasn’t optimistic when I started, but boy was I ever happy when I tasted the final product.

How to Stir-Fry on the Char-Broil Big Easy

Note: I doubt that using a wok on the Big Easy was something the original designers thought of. Doing so might violate your warranty.

Get a wok…

So obviously you’ll need a wok (otherwise how could you stir-fry on the Char-Broil Big Easy!). A wok big enough so it doesn’t fall into the Big Easy. In my case, I used one with a nice long handle and a good sturdy short handle. No fear of it falling in or sliding off. I took a paper towel and wiped down the inside of the wok with a little vegetable oil as I lit the Big Easy. It took no time at all for the wok to get super-crazy hot.

How to Stir-Fry on the Char-Broil Big Easy

Start simple…

This being my first time trying this I decided to go the simple route. I wanted to prove the concept, and I did that and then some. A few tablespoons of oil into the bottom of the wok along with a head of cut broccoli and two sliced shallots was all I used. I gave it a good stir and let it cook. It was easy and oh what an aroma.

In no time at all…

In about 6 minutes or so the broccoli was crisp-tender. I sprinkled a little red pepper flake over the top and served it up. A great side in under 10 minutes!

Sizzling hot…

My only concern during my cook was that the Big Easy seemed to get pretty hot. My suspicion is that the wok is trapping most of the heat inside the unit (and hence my disclaimer at the top of this post). That’s great for cooking, but only time will tell if it’s a negative for the lifespan of my Big Easy.

Honey-Butter Corn on the Char-Broil Big Easy

Corn, glorious corn! Fresh sweet corn is everywhere and that means time to fire up and make some honey-butter corn on the Char-Broil Big Easy. A little added sweetness and ready in no time at all. I actually made this honey-butter corn (on the left) along with my Buffalo blue cheese corn (on the right) so that I’d have a nice mix of sweet and savory corn-on-the-cob for dinner.

A Great Side For Any Meal

You can cook the honey-butter corn at the same time you’re cooking something else in the Char-Broil Big Easy. Just place the corn in a Bunk Bed basket above your other food. Depending on what all you are cooking you can squeeze two bunk bed baskets into the Big Easy at once.

  • 4 ears corn husks and silks removed, cut in half
  • 4 tablespoons unsalted butter
  • 1 tablespoon honey
  • 1 pinch kosher salt

Instructions

  • Fire up your Big Easy.
  • Place the 8 pieces of corn onto pieces of foil.
  • Place the butter, honey and salt in a small saucepan over medium heat and stir until the butter is melted and the honey is dissolved. B
  • rush over the tops of the corn.
  • Rotate and brush the other side of the corn.
  • Seal tightly in the foil and place into the Big Easy basket.
  • Cook in the Big Easy for 20-25 minutes or until the corn is tender.

I absolutely love cooking corn on my Big Easy. It comes out perfect every single time. Juicy, hot and ready for whatever toppings suit my fancy. This time my topping of choice was inspired by Buffalo wings so I made Buffalo blue cheese corn on the Char-Broil Big Easy.

A little Buffalo wing sauce, a little blue cheese and a little bit of butter and I’ve got a delicious side dish (the three pieces you see on the right in the picture below). The three pieces on the left are my honey-butter corn-on-the-cob.

Blue Cheese Funk

The Char-Broil Big Easy is a fantastic all-around cooker. And as much as I use it to cook poultry, that’s not all it does perfectly. This Cajun corn-on-the-cob on the Char-Broil Big Easy is just another great side dish. As with just about anything on the Big Easy, it’s no-fuss and as easy as can be. The corn comes out packed with spicy buttery goodness, cooked perfectly.

Light On Heat, Heavy On Flavor

There is a nice little kick to Cajun corn-on-the-cob on the Char-Broil Big Easy. If you’re worried it might be too spicy (it’s really perfect to me), cut back on the cayenne and red pepper flake. I wouldn’t eliminate them completely. That little heat balances well with the sweetness of the corn. This corn goes great with my Cajun Creole chicken on the Big Easy.

Chili-Stuffed Mushrooms on the Char-Broil Big Easy

Well now, these were different! I’d never thought of making chili-stuffed mushrooms on the Char-Broil Big Easy. Not even in my dreams, where sometimes odd food things can happen. I have to say, they’re quite the addicting little bites. Further proof that the Char-Broil Big Easy isn’t just for poultry (but let’s face it, it does one heck of a good job at that!).

Chili-Stuffed Mushrooms on the Char-Broil Big Easy

Kick ‘Em Up!

You could definitely spice up your version of chili-stuffed mushrooms on the Char-Broil Big Easy. Use a spicy chili (you probably saw that coming) and shredded habanero jack cheese. Top the mushrooms with jalapeno just before serving. That’ll get the party going!

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Chili-Stuffed Mushrooms on the Char-Broil Big Easy

Well now, these were different! I’d never thought of making chili-stuffed mushrooms on my Char-Broil Big Easy.

Instructions

  • Fire up your Big Easy.
  • Combine the chili, cream cheese, and 1/4 cup of cheddar. Season with salt and pepper, to taste.
  • Spoon mixture into the center of the mushrooms. Push it in (gently) to fill the cavity. It’s ok to mound it up a good bit too.
  • Transfer the mushrooms to the Big Easy basket and the Bunk Bed Basket.
  • Place into the Big Easy and cook until the mushrooms are starting to soften, about 15 minutes.
  • You can add the cheese now and return the mushrooms to the Big Easy to melt it, or remove them, transfer to a platter and sprinkle with more cheese.

Notes

Add in a little pepper jack cheese for a nice little kick.

Chiavetta’s Chicken on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I’ve been reading about Chiavetta’s BBQ marinade on various online forums for a while now. It’s out of Buffalo, NY, which sadly means that it’s not in our local grocery store. But, of course you can order it online, which I did. I got a big ole jug of Chiavetta’s and quickly got busy marinating a few split chicken breasts. My Chiavetta’s chicken on the Char-Broil Big Easy had a wonderful garlicky, vinegary flavor with wonderfully crunchy skin.

That Great Vinegar Tartness

Chiavetta’s is quite vinegary. I love that because I’ve always been a fan of vinegary things like eastern North Carolina BBQ sauces or Buffalo wing sauce. If you’re not as big a fan of vinegar as I am, you’ll still love Chiavetta’s. Just shorten the time the chicken spends marinating.

I’m a big fan of store-bought marinated chicken like this Chiavetta’s chicken cooked on the Big Easy. Also try my Fowl Play, Sesame Ginger or Fireman’s Field Day chicken. They’re as easy and as tasty as it gets.

Chiavetta’s Chicken on the Char-Broil Big Easy

  • Place the chicken into a resealable bag or container.
  • Add marinade to taste. Toss to coat.
  • Seal and refrigerate for 1-4 hours, turning occasionally.
  • Fire up your Big Easy.
  • Transfer the chicken to the Big Easy basket.
  • Cook for approximately 20 minutes per pound or until it reaches 165 F as checked in several places.
  • Remove and let rest 10 minutes before serving.

Notes

I prefer bone-in cuts but you can use boneless skinless chicken breasts if you wish.
