What is it about grilled Teriyaki chicken fried rice that makes it soooo good? Well, sure the chicken is absolutely great. But I think it’s the peas. And the green onions. Oh, and definitely the egg. Ok, so the answer is all of the ingredients come together to make a fantastically-flavored dish that is easy to prepare and disappears in no time at all.

A Plate Of Deliciousness

Instead of the ‘usual’ cooked chicken, we grilled some marinated chicken that came out absolutely fantastic. It is the same marinade we used on some grilled Teriyaki pork kabobs the other night. It is definitely our favorite and it makes dishes like this grilled Teriyaki chicken fried rice so great. The marinade not only gives the chicken an amazing flavor, it tenderizes too. With only a few ingredients, it’s a staple on our menu.

A Grill Basket Makes It Even Easier

You can cook the chicken directly on the grill, on skewers, or my favorite, in a grill basket. Clean-up couldn’t get any easier when you use a basket. You don’t have to spend the time poking skewers through the meat. And you don’t have to worry about the meat accidentally falling through the grill grates. It’s an all-around win for me!

For the marinade

For the fried rice

  • ¾ cup white onion minced
  • 2 ½ tablespoons oil
  • 1 egg lightly beaten
  • 3 drops light soy sauce
  • 3 drops sesame oil
  • ½ cup carrot shredded
  • ½ cup peas frozen, thawed
  • 4 cups rice cooked, cooled
  • 4 green onions chopped
  • 2 cups bean sprouts
  • 2 tablespoons soy sauce

Instructions

For the chicken

  • Combine all of the marinade ingredients.
  • Place into a large resealable baggie or container and refrigerate for at least 3 hours.
  • Set up your grill for indirect and direct cooking.
  • Thread meat and vegetables onto skewers.
  • Sear over direct heat then move to indirect heat and cook until the chicken reaches 165 F.
  • Remove and cover with foil while making the fried rice.

For the fried rice

  • Heat 1 tablespoon of oil in a wok or large skillet.
  • Add the onion and stir-fry until they brown, 8-10 minutes.
  • Remove.
  • Allow wok to cool slightly.
  • In a small cup, mix the egg with the 3 drops of soy and sesame oil.
  • Add 1/2 tablespoon of oil to the wok, coating well.
  • Add the egg mixture and quickly swirl it around. Once it puffs flip the egg.
  • Remove from wok to a plate and chop.
  • Heat 1 tablespoon oil in the wok.
  • Add the carrots, peas, and cooked onion and stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well, and stir-fry for 3 more minutes.
  • Add 2 tablespoons of light soy sauce and the egg to the wok and fold to incorporate;
  • Remove from heat.
  • Serve rice topped with chicken.

Notes

Serve along with more soy sauce if desired.

Grilled Hasselback Potatoes

This is not my first time making grilled Hasselback potatoes. I have had a love-hate relationship with them in the past. I have always loved the presentation and the flavor, but I hated them when they would fall apart. I’d either cut them too deep, or handle them too roughly, and they would just fall to pieces. This time I got them just right.

The Keys To Success

For me, there are two keys to making these grilled Hasselback potatoes. The first is to not cut too deeply into the potatoes. The way to do that is to put two wooden spoons alongside the potatoes (after cutting a small piece off the bottoms of the potatoes so that they do not roll around). When you slice them vertically, the spoons will stop the knife at the same point for each cut, well above the bottom, preventing you from cutting too far.

Second, when adding ingredients in between the slices, grab the ends of the potatoes. This will keep you from spreading the slices open too far, causing them to tear and fall apart. Follow those two simple steps and you’ll end up with great potatoes, too.

Instructions

  • Cut a small piece off the bottoms of the potatoes so they do not roll around.
  • Place two wooden spoons alongside the potatoes and slice them vertically every 1/8″ down to the spoons.
  • Microwave potatoes for 5 minutes.
  • Flip and microwave another 5 minutes.
  • Let cool until you can handle them.
  • Grabbing the ends of the potatoes, brush them with oil, getting some oil between the slices.
  • Sprinkle garlic into the slices.
  • Sprinkle tops of potatoes with the Parmesan, thyme, and salt and pepper.
  • Cover loosely with foil.
  • Place over indirect heat in a preheated grill until tender, about 20 minutes.
  • Serve sprinkled with the remaining mozzarella cheese.

Notes

Also great made using cheddar.

We had our grilled cheesy chicken over egg noodles, but you could serve it over rice, pasta… or just eat it all by itself! The cream cheese sauce is so good that it is perfect just over noodles as a side dish. Any good white melting cheese will work great in the sauce. Our favorites are Gruyere or Fontina. A combination of your favorites will also be excellent!

  • Brine the chicken per instructions.
  • Fire up a grill for direct and indirect cooking.
  • Sear the chicken over direct heat then move to indirect heat to continue cooking to 165 F. Remove from heat.
  • Heat chicken stock in a medium saucepan. Do not boil.
  • Reduce heat and slowly stir in the cream and mustard. Stir well and continue cooking until thick, about 5 minutes.
  • Remove pan from heat and add in the cheese. Stir until melted.
  • Serve chicken over noodles with cheese sauce on top.

Notes

I used an Italian blend, but mozzarella, Swiss, fontina, or any good melting cheese will work.

Sweet Corn Cob Pops

It is sweet corn season here in Indiana. We recently put up over 100 ears of corn for next winter. Sweet corn is a mighty good thing, whether in a chowder, in salsa, or my favorite, right off the grill. I just love the charred sweetness of corn off a charcoal fire. And you’ll find that these little corn cob pops make eating corn even more fun.

We get our sweet corn from My Dad’s Sweet Corn, in Tipton, Indiana. Their corn is available at many of the farmer’s markets in and around Indianapolis.

  • cup Italian salad dressing zesty!
  • cup fresh cilantro roughly chopped
  • 1 shallot roughly chopped
  • 1 jalapeno seeded and roughly chopped
  • 6 ears corn on the cob cut into 2″ wide pieces

Instructions

  • Soak bamboo skewers in water for 30 minutes.
  • Place dressing, cilantro, shallot and jalapeno in a blender and blend until smooth. Add salt and pepper, to taste, if needed.
  • Thread corn onto skewers and grill over medium-high heat until lightly charred and cooked.
  • Serve corn with the dipping sauce.

Notes

Leave out the jalapeno for a non-spicy dipping sauce.

We grill pork tenderloins with great regularity. They are so tender (if you don’t overcook them), and like chicken breasts or most white fish, they take on other flavors very well. This recipe for grilled pork tenderloin sliders with chipotle lime mayonnaise combines a great southwest-inspired rub with a mayonnaise that is kicked up with some smoky chipotle and citrusy lime. Served as sliders, these little yummy bites are sure to disappear in no time.

Great Tastes In Every Bite

The grilled green onions really add a nice dimension to these grilled pork tenderloin sliders with chipotle lime mayonnaise. The mayonnaise is also great on deli meat sandwiches and grilled chicken sandwiches. Ok, it’s great on any sandwich. I’ve also found myself using it on hot-off-the-grill hamburgers.

I had no clue that you could buy chipotle lime mayonnaise online or in stores. I need to get out more. But it’s easy enough to make it yourself too.

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

  • Rub both tenderloins with the oil.
  • In a bowl, combine the chili powder, cumin, salt and pepper.
  • Sprinkle over the tenderloins.
  • Place tenderloins into a large resealable baggie.
  • Add green onions and seal.
  • Shake gently to also coat the onions.
  • Refrigerate for 1 hour.
  • Meanwhile, make the mayonnaise by combining the mayo, chipotle, and lime juice. Refrigerate until needed.
  • Fire up your grill for direct and indirect cooking.
  • Sear the tenderloins on all sides and remove to indirect heat to continue cooking to an internal temperature of 160 F.
  • Remove, cover with foil, and let cool slightly.
  • Place the green onions over direct heat and grill for 3 minutes, turning often.
  • Remove and chop into 1" long pieces.
  • Slice the tenderloins.
  • Slather sliders bun with the mayonnaise.
  • Add the pork, 2 quarters of cheese, and onions.
  • Serve.

Notes

Substitute Swiss or Monterey Jack if you don’t want the pepper jack.

Zesty Grilled Ham Steak

The glaze on this zesty grilled ham steak is easy to throw together. It combines the sweetness of brown sugar, the tartness of lemon, and the kick of horseradish. It really wakes up a good piece of grilled ham. It’s not overly sweet, which sometimes ham glazes are for me.

This ham steak makes for a great side for breakfast-for-dinner.

Great Glaze For Not Just Ham

The glaze on this zesty grilled ham steak would be great on other pork dishes… such as grilled pork loin or tenderloin. And bacon. Just brush the glaze on the meat a few minutes before it’s done. Ham heats quickly so you can put it on early. You don’t want to glaze pork loin, tenderloin or even bacon early. The brown sugar in the glaze might burn, ruining your dish. Save it for near the end.

I love cooking up breakfast on the grill, even if it’s just a side dish or an ingredient I’ll use as part of a bigger dish, like my smoked crumbled breakfast sausage.

Zesty Ham Steak

  • Fire up a grill for medium-heat cooking.
  • In a small saucepan, combine the brown sugar, horseradish, lemon, and Cajun seasoning (if desired). Stir.
  • Bring to a boil and reduce the heat to a simmer.
  • Stir, and continue simmering until thickened. Remove from heat.
  • Place the ham steak over the medium heat on the grill.
  • Brush with the glaze.
  • Grill for about 5 minutes, then rotate to get those great grill marks.
  • Add more glaze and cook another 5 minutes.
  • Flip, glaze, and cook another 10 or so minutes.
  • Add more glaze just before removing.

Notes

Remember the ham steak is already cooked, you’re just reheating it and adding flavor.

BBQ Hobo Packets

I’ve made a few variations on hobo packets. They’re easy to make, tasty, and make for easy cleanup. This BBQ hobo packets version uses BBQ sauce and has quickly become one of my favorites. Cheesy goodness, with potatoes and onion, all cooked with sausage in a BBQ sauce. All of the ingredients get all steamy happy inside the packet while they cook and the flavors melds perfectly.

BBQ Hobo Packets

These BBQ hobo packets have quickly become one of my favorites.

Ingredients

  • 8 small red potatoes
  • 2 teaspoons vegetable oil divided
  • ½ sweet onion cut into thin wedges
  • ½ pound smoked sausage cut into bite-sized pieces (or chicken tenderloins)
  • 3 tablespoons your favorite BBQ sauce spicy works best
  • cup shredded cheese

Instructions

  • Bring a small pot of water to a boil. Add potatoes and boil until just starting to get tender, 15-20 minutes. Remove from water and let cool slightly then cut into wedges.
  • Spread out foil pieces and drizzle with 1 teaspoon of oil each.
  • Add the remaining ingredients, splitting them between the two pieces of foil, drizzling with however much BBQ sauce you prefer (a tablespoon or so each should be enough). Also add half of the potatoes to each.
  • Seal foil into tight packets and place on a grill over indirect heat for about 10-15 minutes or until the onion has started to soften.
  • Remove from grill and open to let cool before serving.

Notes

If you aren’t careful the bottoms of the packets can get very hot. Let them cool before serving!

Well, who would’ve thought about marinating hot dogs? Sure, I marinate pork and beef all of the time. But it never occurred to me to make marinated hot dogs. Well, trust me, these hot dogs are delicious! They’re packed with flavor, and super moist!

  • Place dogs in a resealable baggie.
  • Add Worcestershire sauce and Cajun seasoning.
  • Seal and shake to combine and cover the dogs.
  • Marinate for 1 hour before grilling.

Notes

Cut a long narrow slit in your dogs before cooking to give the toppings a great place to go!

Bratwurst Bath

I made up this idea for a bratwurst bath. I have no idea who or what influenced the idea, but I use this technique any time I grill bratwursts. Other than the beer, butter and onions I have no real recipe for this. Bell peppers? Sure! Serrano peppers? Heck yeah! Whatever!

I should add that the vegetables from the bratwurst bath are also really great on top of hot dogs or hamburgers. I also like to toss them on the grill real quick to get some color. A cast iron skillet works great for this. Or a griddle pan.

I leave in or take out whatever vegetables I have on hand… you don’t have to make this exactly as it is written. I also like adding jalapeno, but I’ll leave it out depending on the crowd.

Always make sure you support the bottom of the pan you use for your bath if you are using a disposable one.

Bratwurst Bath

  • Combine all but the sausages, rolls and mustard in a large saucepan or disposable aluminum pan.
  • Place over medium heat (I prefer to do this on the grill) and let simmer for at least 30 minutes or until the vegetables start to get tender. You want them to still have a little bite.
  • Add the sausages and simmer for another 8-10 minutes or until done.
  • Remove sausages to a grill over medium-high heat. Sear on all sides.
  • Serve brats on rolls slathered with mustard.

Notes

A few jalapenos add a nice bit of heat to your bratwurst bath!

Grilled Green Beans

These grilled green beans are the easiest side to make on the grill. I try to make everything I can outside on the grill, specially when it is hot out. But that doesn’t mean I’m going to sacrifice flavor for ease. This dish brings the flavors and takes only minutes to make. Charcoal grill or gas grill, it doesn’t matter.

No More Boring Green Beans

Add some diced white onion to these grilled green beans for extra flavor. You may want to sauté or grill the onion a little bit first to soften it. It takes longer to grill than the beans do.

I like to serve beans in a small glass jar. It just looks a little spiffier. I got the idea when we stopped by Firehouse BBQ and Blues, a great BBQ joint in downtown Richmond, Indiana. Why is it that things taste better out of jars? Iced tea is that way. I swear it just tastes better out of a big ole mason jar.

I recommend that you use a grill basket when making this dish. It makes cooking easier and you don’t have to worry about anything falling through the grates. And cleanup is easier too!

  • Preheat grill for indirect cooking.
  • Tear off a large piece of aluminum foil.
  • Combine beans, oil, garlic, red pepper and salt and pepper in a large bowl.
  • Place in center of foil.
  • Add 2 tablespoons of water and seal the packet tight.
  • Place over indirect heat and cook until the beans are just tender, 10-15 minutes.

Notes

You may want to add more salt and pepper before serving.
