Cedar-Plank Hasselback Potatoes

I’m a big fan of Hasselback potatoes. They’re like a cross between scalloped potatoes and baked potatoes. They look cool and are actually pretty easy to make. This time I took my classic favorite Hasselback potato recipe and threw in a twist: I baked the potatoes on my grill on a cedar plank. The plank added a wonderful aroma and flavor to the potatoes. Not too much, but just enough to make me say “Wow, that’s great and different!”.

Cedar-Plank Hasselback Potatoes

Don’t Fear The Hasselback

Cutting a potato Hasselback-style is actually pretty easy. In no time you too can be enjoying some cedar-plank Hasselback potatoes. You can just put a wooden spoon along the potato and slice them manually. The spoon will stop you from going all the way through the potato. Or you can ‘cheat’ like I do and get a Hasselback potato slicer (see below). It holds the potato in place. It also makes sure that each cut is the same thickness. And of course, it prevents you from cutting the potato too far. Hey, who doesn’t need another kitchen gadget!

Instructions

  • Soak cedar planks in water for at least 1 hour.
  • Cut the potatoes in Hasselback fashion. I use a tool to do this (link above). You can also lay wooden spoons alongside the potato. As you cut the potato into slices, the spoons will prevent you from cutting all the way through.
  • Gently and carefully lightly spread the potato segments apart.
  • Brush the tops of the potatoes with the oil. Try to get some down inside the segments, but don't over-oil them. You want just a light coating.
  • Generously salt and pepper the potatoes.
  • Fire up your grill for direct cooking. Remove the plank from the water and place over the fire. Char on both sides then remove the plank to indirect cooking. You want a cook temperature of around 400 F.
  • Transfer the potatoes to the plank and cook for 30-40 minutes until a toothpick (I use a thin skewer) inserts easily into the potato. I find it's easier to poke it from the side, into the ends.
  • Remove and serve.

Notes

If you wish to serve with cheese melted over the top, just sprinkle the potatoes with the cheese and cook another 5 minutes.

Marinated Grilled Shrimp

These marinated grilled shrimp were beyond tasty. Beyond fantastic. The marinade adds so much flavor to each and every bite. And the dipping sauce? Perfect. This dish reminded me of an amped-up peel-and-eat shrimp boil. We both enjoyed these shrimp tremendously. I’m a major shrimp-aholic. But that doesn’t mean I’m not a little bit picky about them. These passed all of my tests with flying colors.

Marinated Grilled Shrimp

Amazing Flavor In Every Bite

It’s hard to think of anything I’d change when making these marinated grilled shrimp. Maybe I’d just say it makes one serving, because I certainly could’ve eaten more. I grilled up a few pieces of bread for soppin’ because I knew that the dipping sauce was going to be great long before I even made it.

I used my grill basket when I made this dish. It’s great for anything I need to flip that I might worry about falling thru the grates. And it makes for easy cleanup.

Grilled BBQ Shrimp in Oyster Shells

It’s not that I needed any more cookware (or grillware). But I couldn’t help myself when I came across stainless steel oyster shells. I love seafood, and I figured hey, I really need to learn more seafood recipes, so why not get some shells and get to it?! Well, by golly these shells are just fun to cook in and I’ve found myself making super-awesome dishes, like these grilled BBQ shrimp in oyster shells. The shrimp cook up perfectly. And oh, the sauce. The sauce is just insane. The shrimp soak up some of that great buttery herby flavor. The rest of the soakin’ is up to you. Pick up the shell and drink it up, or dip a piece of nice crusty bread in it for a few seconds to sop it up. Man, it’s great!

Grilled BBQ Shrimp in Oyster Shells

Add Some Kick (Optional)

If you like a bit of a kick, add just a pinch (a small pinch) of red pepper flake on top of the shrimp just before grilling (I use my trusty Weber grill!). Don’t go crazy with it, the stars of the show are the perfectly cooked shrimp and fantastic sauce.

I Should’ve Bought More Shells

Don’t make the mistake I made and only purchase 12 stainless steel oyster shells. Everything I’ve made in them has been so yummy that I’ve always found myself craving more. And for more I’d need more shells. So get extra and you won’t be in the same boat.

SPAM Burnt Ends

I’ve smoked SPAM. I’ve grilled SPAM. But I’d never made SPAM burnt ends until now. I can say without hesitation that my life is now complete. No, these aren’t beef brisket burned ends. You can’t beat brisket burned ends. But believe me, these are still really good. My first bite was an ‘oh, dang!’ moment for me. Like “oh, dang, give me some more of these!”.

SPAM Burnt Ends

Be Heavy-Handed

SPAM needs a bit of seasoning in my opinion. Though it’ll pick up some flavor from the smoke, it’s up to you to add the rest. You want your SPAM burnt ends to be super yummy! I decided to take a sweet heat approach with mine. I used a spicy BBQ rub for the seasoning. And for the sauce I used a sweet tomato-based BBQ sauce. You want a sauce that will caramelize, giving you a bit of a crust to the SPAM. The sweetness of the sauce contrasted perfectly with the spiciness of the rub.

You can experiment too. If you have multiple seasonings you’d like to try, go for it. I like to use toothpicks to distinguish my SPAM on the smoker. For example, I might use a single toothpick for my sweet BBQ seasoning. And two toothpicks indicates that it’s a spicy-seasoned SPAM. That way it’s easy to tell them apart. Just make sure you make a note. Otherwise, if you’re forgetful like me, you’ll get to the end of the smoke and think “Now, which one is which?”. It happens.

SPAM Burnt Ends

Incredibly Easy.

You really can’t get any easier than SPAM burnt ends. You can try other flavors of SPAM, too. As a note, you might want to change up which seasoning and sauce you use for each different variety.

This is a great way to use extra space on your smoker, too! If you have a fire going, why waste it?

  • Remove the SPAM from the tin and season heavily with the BBQ seasoning. Rub it in good, and get it everywhere. The more, the better, but don't put it on so thick that it cakes.
  • Smoke for about 1 hour or until the SPAM gets a bit of a crust on it and has turned a little darker in color.
  • Remove from the smoker and cut into 1" cubes. Brush all sides liberally with the sauce. Sprinkle lightly with more of the rub.
  • Transfer SPAM cubes to a disposable pan and return to the smoker.
  • Smoke another 30 minutes or until the sauce has started to caramelize.

Best Smoked Pulled Pork

This is how I make smoked pulled pork. After trying many, many different (great) methods and seasonings and injections, I consider this the best. I’m always happy with the results. Tender, moist, flavorful pork that always satisfies. I like mine served simple. On a bun, with a bit of sauce (sometimes, or dry sometimes) and a slice of onion or some crunchy slaw. That’s it.

  • Combine the rub ingredients and rub enough onto the outside of pork shoulder to season it well. You'll have leftover rub.
  • Transfer the shoulder to the smoker and smoke until it reaches 160 F, about 7 hours. Spritz the pork with the reserved injection liquid every 30 minutes.
  • Wrap the pork tightly in foil and continue smoking until it reaches 195-200 F, another 2-3 hours.

Spicy Bacon-Wrapped Shrimp

You know those eating contests you see on TV sometimes? Like the one with the hot dogs, where they eat 200 hot dogs in 5 minutes or something? Why hot dogs? Why not these much-better can’t-stop-eating crazy-good spicy bacon-wrapped shrimp instead? Heck, I’m up to an eating challenge with these little delicious morsels. You sit down with a plate of these and 5 minutes later you’re thinking… where’d they go? And… do we have more?

Spicy Bacon-Wrapped Shrimp

Not That Spicy. But Crazy Delicious.

Don’t let the ‘spicy’ in spicy bacon-wrapped shrimp scare you off. They aren’t scary spicy, not by any stretch. They have just the right amount of kick to them. And a bit of smokiness from the bacon and even a bit from the chipotle powder (it is made from smoked dried jalapenos after all). And a tad bit of sweetness thanks to the brown sugar. If you want to skip the chipotle powder you can, but you might want a bit of color so add a little paprika in its place.

I recommend that you use a grill basket when making this dish. It makes cooking easier and you don’t have to worry about anything falling through the grates. And cleanup is easier too!

Cajun Shrimp in Oyster Shells

Think shrimp cocktail. Cooked and served in oyster shells, these are quite possibly the perfect grilled (or baked) appetizer. I used stainless steel reusable oyster shells when I made these Cajun shrimp in oyster shells, which have quickly become my go-to servers for seafood and well, just about anything I can fit into them. I can fit two (or even three) large Cajun shrimp into each shell. Even though they go onto a grill or in the oven, they cool off quickly so you can handle them. Just pick them up and slurp them down, just like you were eating oysters. Fun!

Cedar-Plank Green Beans

Cedar-plank green beans are so good I think I could actually just have them by themselves for dinner. That perfect crispy crunch. Fresh green bean flavor. A light hint of cedar flavor and aroma. And toasted nuts. This is my kind of grilled side dish. Easy to make, ready in no time, and absolutely delicious. The cedar planks add just a hint of smoke. A little something different than if I’d made these beans in a pan on the stovetop, and that’s all I was looking for!

Cedar-Plank Green Beans

Great Every Time

You can easily change the flavor of your cedar-plank green beans by changing the seasonings or using infused olive oil instead. I sometimes like to add a good pinch of red pepper flake for a bit of heat. Lemon-infused oil adds a great citrus flavor. You can’t mess these up. Just don’t overcook them.

Deluxe Rotisserie Chicken Wings

I recently posted my very successful chicken wing cookout using a Napoleon basket on my Weber S670 gas grill. I was very happy with the results. But, I did notice that I lost a little bit of my wing seasoning as the wings went around and around, bouncing from one side of the basket to the other. I thought, maybe, just maybe, there’s another way. Another way where I don’t lose all of that flavor. And here it is, my deluxe rotisserie chicken wings! Same recipe, different basket, and awesome results again, without the loss of a bit of the seasonings! Win!

Deluxe Rotisserie Chicken Wings

The No-Bouncing-Around Zone!

The Only Fire basket clamps the wings in so they don’t roll around so much. Now, cheap, thin, skinny wings are still gonna roll a bit. I buy big, meaty wings. They definitely weren’t bouncing around. These deluxe rotisserie chicken wings deserve big, quality wings. You do have to be mindful of how you put your wings in. Flats are… flat. So the basket won’t close on them if you put them next to drumettes. I get around that by separating them row-by-row. A row of flats. A row of drumettes.

This basket is great for other things too, like pork chops, pork loin, chicken breasts, and fish!

  • Seal and toss to coat.
  • Refrigerate for 1 hour.
  • Fire up your grill with a rotisserie attachment. You do not want any direct fire beneath the basket.
  • I put a disposable pan under the basket to catch and drippings. On a charcoal grill you'll want to keep the lit coals in front of and behind the rotisserie. For a gas grill you want any burner(s) to the left and right of the basket to be lit if your burners run from-to-back. If your burners run from left-to-right you want to have the burner(s) in front of and behind the basket to be lit. If you have an infrared burner above your basket, light it also and turn it to medium-high. All other burners should be on high.
  • Transfer the wings to the basket and place on your grill.
  • Turn on the rotisserie and close the lid. You want high heat, so no peeking.
  • Let the wings cook for 20 minutes before checking them. They should start to crisp and the meat will start to pull back from the bones. Mine ended up taking 25-30 minutes until they got how I liked them.
  • Carefully remove the wings from the basket and sauce and serve.

Notes

Use caution removing the wings from the basket as it gets quite hot!

Simple ingredients, nothing hides that great crab flavor. I really enjoyed my crabmeat stuffed oyster shells… except that I should’ve made more! This has quickly become a favorite in our house. They’re easy to make and delicious to boot!

I was already a big crab addict. These just made that worse. Must worse.

Fun Shells Make For Fun Food!

I used stainless steel reusable oyster shells, which have quickly become my go-to servers for seafood and well, just about anything I can fit into them. Even though they go onto a grill or in the oven, they cool off quickly so you can handle them. Just pick them up and slurp them down, just like you were eating oysters. Fun! It also means I can devour a whole bunch of these crabmeat stuffed oyster shells in no time!

Kickin’ It Up

Old Bay seasoning adds wonderful flavor to darned near everything. But if you’re looking for a little heat, a little kick… well, it doesn’t really have that. So if you’re looking for that extra something, add a pinch or two of cayenne pepper. Or Cajun seasoning. The hot version. I wouldn’t go crazy trying to amp it up, though. The last thing you want to do is to bury the flavor of the crab so much that you lose it.

No Fakin’ It

If you’re a fan of ‘fake’ crabmeat, leave it in the fridge. Don’t use it in this recipe. You know the stuff. It’s made from fish. It has it’s place, in my opinion, in some dishes. But this is definitely not one of them. You got to go 100% real in this one.
