Slow Cooker Cream Cheese Chicken Taquitos

I made a batch of tremendously good baked smothered chicken burritos the other day. The chicken was cooked slow all day. This resulted in the perfect tender meaty filling for anything from tacos to subs to… yeah, you guessed it, taquitos. I was still flashing back to them when I came across this idea for slow cooker cream cheese chicken taquitos. Just like the burritos, they are stuffed with fantastically tasty chicken that just falls apart as it cooks. These are some mighty tasty taquitos and they’re very easy to make to boot.

The creamy chicken and melted smooth cheese needed a little kick in my opinion. So I topped the taquitos with diced jalapenos and spicy salsa. I do mean, spicy too! Then all was right in the world again! These slow cooker cream cheese chicken taquitos are amazingly good, with or without the added heat. They made for a great dinner dish, that’s for sure!

You can use any cheese you want. I went with a Mexican mix. Monterrey Jack, cheddar and queso blanco all would be perfect substitutions. Just shred and add!

Pico de gallo also makes a great topping!

For the cream cheese chicken

For the taquitos

  • ½ cup Mexican blend cheese shredded, or combine shredded extra sharp cheddar with taco seasoning
  • 12 6 inch flour tortillas
  • Your favorite toppings extra cheese, chopped fresh cilantro, salsa, jalapenos, green onions, etc

Instructions

For the cream cheese chicken

  • Add all of the chicken ingredients to a slow cooker.
  • Cook on low for 8 hours or until the chicken is fall-apart tender, stirring occasionally.
  • Remove the chicken and shred or chop as desired.
  • Return chicken to the slow cooker, stir, and cook another 15 minutes.

For the taquitos

  • Preheat oven to 400 F.
  • Spray a 9″ x 13″ baking dish with non-stick spray.
  • Lay tortillas out onto a flat surface.
  • Spoon 2-4 tablespoons of chicken into the middle of each tortilla.
  • Top with 1-2 tablespoons of cheese.
  • Roll tortillas up tightly and place seam-side down into the baking dish.
  • Bake for 10 minutes or until cheese is melted and the tortillas are lightly browned and hardened.
  • Serve with your favorite toppings.

Fowl Play Chicken on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Fowl Play marinade by The Shed BBQ adds tremendous flavor to any cut of chicken. As soon as I opened it I knew that I was in for nothing but goodness. I detected soy sauce. Apple juice. Citrus. It’s tangy with a slight hint of vinegar. Fowl Play Chicken cooked on the Char-Broil Big Easy comes out incredibly flavorful all the way through.

I used split bone-in chicken breasts, marinating them for 4 hours before placing them into the Big Easy. The skin doesn’t get crispy because of all that time in the marinade, but the meat… oh my goodness. So tender and juicy and good! Incredible. If you’re looking for a quick, painless way to make masterful chicken on the Big Easy this is it.

I was a bit worried that maybe some of the spices in Fowl Play might burn from the high heat in the Big Easy but they did not. You have to watch for that if you’re using anything with large chunks of things like minced garlic.

I’m a big fan of store-bought marinated chicken like this Fowl Play chicken or Chiavetta’s chicken cooked on the Big Easy. It’s as simple as it gets.

BBQ Chicken Pizza

Oh me how happy was I with this pizza? Darned happy, that’s how happy! All of my favorite things. Crunchy pizza crust. Moist, tender chicken, cheese, smoky BBQ sauce, and of course, some heat! BBQ chicken pizza was a big hit in our household, that’s for sure! BBQ chicken pizza is also the easiest, tastiest way to use up leftover cooked chicken. You can also make this same recipe using leftover pulled pork or smoked brisket.

BBQ Chicken Pizza

I used a smoky, hickory-flavored BBQ sauce since the chicken I used was roasted and didn’t have that much smoky flavor. If I was going to use smoked pork or beef I’d use a sauce without a smoky flavor since there’s already enough of that in the meat.

If I’m reaching for a bottled BBQ sauce, I often go for Sweet Baby Ray’s.

  • 1 large pizza crust
  • ½ cup your favorite BBQ sauce use hickory-flavored sauce for the best results
  • 10 ounces chicken cooked, chopped or shredded
  • ¼ cup red onion sliced
  • cup smoked mozzarella cheese shredded

Spicy White Chicken Chili

Whew, oh boy! This spicy white chili chicken isn’t some boring, barely-seasoned, overly-tame, put-you-to-sleep white chicken chili, no sir! You pretty much open your pantry and grab everything in it that is spicy and throw it in a pot with some chicken, some beans, some roasted peppers, and some broth. Done! Not too much later you get rewarded with something you’ll want to make again and again. I didn’t used to be a fan of chicken chili. But I sure am now.

Spicy White Chicken Chili

I really enjoyed the smokiness of this spicy white chicken chili. There are so many different flavors coming together in every spoonful. I’m thinking you could easily make this a beef chili by substituting cooked crumbled ground beef (or small pieces of chuck) along with beef broth. Or you can easily go the turkey route, using crumbled cooked ground turkey.

I like to use my good ole trusty Dutch oven to make this chili and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Add onion and cook for 5 minutes.
  • Add the garlic and cook for another minute.
  • Add cumin, chili powder, cayenne, chipotle powder and salt and pepper and stir.
  • Add roasted poblanos, roasted jalapeno, green chiles, cilantro, 3 1/2 cups of the chicken broth, chicken, lime zest and juice.
  • Bring to a boil then reduce to a simmer. Cover and cook 30 minutes.

I’ve been using seasonings from Dizzy Pig for years. Dizzy Pig has a wide variety of spice mixes available. Raging River seasoning is perfect on a chicken roasted in the Char-Broil Big Easy. I made a beer-can version, but you can skip that step and just season the chicken and cook it as-is in the Big Easy. Every bite is has great maple-infused herby flavor. And just a slight spicy kick that is out-of-this-world great.

  • Fire up your Big Easy.
  • Rinse the chicken and pat dry.
  • Lightly brush the chicken with olive oil.
  • Generously sprinkle the chicken with the seasoning.
  • If opting to make beer can chicken open the can and drain (er… drink) about 1/4th of the beer. Add a heaping teaspoon of seasoning to the beer. Insert beer can into the bottom of the chicken.
  • Place chicken into the basket and insert into the Big Easy.
  • Cook for 15 minutes per pound or until the chicken has hit 165 F as measured in several locations.
  • Let rest 15 minutes before removing the beer can (if using) and carving.

Notes

I use the Char-Broil folding chicken roaster Raging River chicken tastes (and looks!) fantastic! The skin is crispy and, well, addicting. Very addicting. to hold the beer or soda cans securely. If the beer you’re using is only available in a bottle, just empty the contents into an empty beer or soda can.

When I saw that AlbuKirky Seasonings was having a sale, I jumped on it. I knew that Kirk’s Green Chile rub was going to be amazing on a chicken. So I cooked green chile rubbed chicken on the Char-Broil Big Easy. It had that perfect hint of green chile peppers in each bite. You’re not talking spicy here, just wonderful pepper flavor. No need to add anything else.

There’s no denying that the Char-Broil Big Easy makes mighty fine chicken. Mighty tasty, mighty moist and mighty pretty. This Colombian-style chicken on the Char-Broil Big Easy sets the bar really high when it comes to poultry. This chicken is so flavorful, packed with a fantastic combination of spices and vegetables. I remember being able to buy roast chicken on the streets of the cities in South America, and this dish reminded me of those experiences.

Whenever I make a perfect chicken like this Colombian-style chicken on my Char-Broil Big Easy I laughingly ask myself: should I hire security to guard the patio? It’s just so good. I wouldn’t be surprised if some passerby jumped the fence to grab a taste! The aroma alone while the chicken is cooking is enough to drive you crazy!

I (obviously) used a whole chicken for this recipe, but pieces would work just as fine. Just don’t overlap them in the Big Easy or they won’t cook evenly.

Colombian-Style Chicken on the Char-Broil Big Easy

  • Rub the paste all over the chicken, inside and out.
  • Place in a large resealable bag or container and let marinade overnight.

  • Transfer the chicken to the Big Easy basket and lower into the cooker.

Nashville Hot Chicken using the Vortex

I recently made ‘fried’ chicken on my Weber Performer grill using the Vortex insert. The chicken came out fantastic, which inspired me to then try making Nashville hot chicken also using the Vortex. Wow, oh wow, was it absolutely great chicken. Lightly crunchy, and a little spicy, it was a dish to remember. This method is definitely a great substitute for the traditional way of making Nashville hot chicken in a deep fryer.

I used split bone-in chicken breasts when I made this Nashville hot chicken using the Vortex. It’s our preferred cut of chicken, but you can use any cut you like. Just keep in mind that if you mix pieces that are greatly different in size some may be done before others. Smaller pieces can be checked for doneness after the 45 minutes cooking time.

  • 1 cup milk I used buttermilk Note: If you have pickle juice on hand, use 1/2 cup milk and 1/2 cup pickle juice instead

  • 1 tablespoon hot sauce

  • Season chicken and place into a baggie or resealable container.
  • Seal and refrigerate overnight or up to 24 hours.

For the dip

  • Whisk together the milk, eggs and hot sauce in a pie pan or shallow bowl.

For the dredge

  • Whisk together the flour and salt in a pie pan or shallow bowl.

For cooking

  • Fire up your grill with the Vortex insert full of charcoal.
  • Let the coals get good and ashed over.
  • Working in batches, dredge the chicken in the flour. Shake off excess.
  • Dip chicken into the milk mixture. Shake off excess.
  • Return the chicken to the flour and dredge again. Shake off excess.
  • Transfer chicken to the grill, placing it along the edges of the grill.
  • Cover and cook for 15 minutes.
  • Rotate the lid 90 degrees and cook another 15 minutes.
  • Brush the chicken with the spicy coating. Rotate the lid 90 degrees and cook another 15 minutes
  • Brush the chicken with the spicy coating. Rotate the lid 90 degrees and cook another 15 minutes
  • Check for doneness. Remove when done and let rest 10-15 minutes before serving.

For the spicy coating

  • Heat the oil in a small saute pan.
  • Whisk in the remaining ingredients.
  • Keep warm until ready to use.

For serving

  • Serve garnished with dill pickle and white bread slices, if desired.

‘Fried’ Chicken using the Vortex

This is the first time I tried making ‘fried’ chicken using the Vortex insert on my Weber charcoal grill. I use my Vortex a lot for making chicken wings, which are always fantastic, but I wasn’t sure how mimicking that great fried flavor would come out.

My worries were completely unfounded since the chicken came out absolutely fantastic. I swore I was eating chicken right out of a deep-fryer. Great Southern-inspired coating, tender meat and yes, very, very crunchy skin.

Since this was my first time I didn’t want to over-crowd my Performer with chicken. But now that I’ve got the process down, I could’ve easily added a few more pieces. And you don’t have to just use split bone-in chicken breasts like I did. Wings, legs, thighs… you name it, all will come out great ‘fried’ using the Vortex. Just don’t let the pieces overlap, because wherever they touch, they won’t get crispy.

  • Fire up your Kettle grill with the Vortex loaded with charcoal. Don’t start cooking until the coals are all lit and starting to ash over.
  • Rinse the chicken and pat dry.
  • Mix the remaining ingredients in a large baggie.
  • Lightly brush the chicken with vegetable oil.
  • Working in batches, place chicken pieces in the bag. Seal and shake. Shake off excess.
  • Transfer chicken to the grill along the edges, skin-side up.
  • Cover and cook for 40 minutes, turning the lid 90 degrees every 15 minutes.
  • Lightly brush the chicken with more vegetable oil. Use caution as the grill will be hot. Note: If you are using pieces other than split chicken breasts, you’ll want to rotate the pieces at this time.
  • Cover and cook another 5 minutes or until the chicken hits 160 F.
  • Remove and let rest and come to 165 F before serving.

Daddy’s BBQ Chicken on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I’m not one to rename other folk’s recipes, so when I came across Daddy’s BBQ chicken I couldn’t call it something else even though it’s not my daddy’s BBQ chicken. If it was though, I’d say “Dad, that’s amazingly great chicken!”. Like any other poultry made on the Char-Broil Big Easy it’s tender, juicy and of course, there’s crispy crazy yummy skin. The marinade is the perfect combination of Worcestershire sauce and steak sauce with just a hint of citrus.

I would make Daddy’s BBQ chicken on my Char-Broil Big Easy again. And again. People might look at it first and expect a fairly simple chicken but that’s not what they’ll get. Packed with flavor it’s a nice change from your standard roasted chicken or chicken that has been covered in a traditional BBQ sauce.

Daddy’s BBQ Chicken on the Char-Broil Big Easy

The marinade is the perfect combination of Worcestershire sauce and steak sauce with just a hint of citrus.

Instructions

  • Place the chicken into a large resealable bag or container.
  • Whisk together the lemon juice, Worcestershire, steak sauce and butter.
  • Pour the marinade over the chicken.
  • Cover and refrigerate for 2-4 hours, turning the chicken every 30 minutes.
  • When ready to cook, fire up your Big Easy.
  • Remove the chicken from the marinade and shake off any excess.
  • Season the chicken liberally with salt and pepper and transfer to the Big Easy basket.
  • Cook until the chicken measures 165 F as measured in several places, generally 20 minutes per pound.
  • Let rest for 10 minutes before serving.

Notes

Depending on the side of your chicken breasts you might need a Bunk Bed basket to fit all of the chicken into your Big Easy.
