Grilled Potato Wedges

Anything off the grill is a good thing, I always say, and these grilled potato wedges are no exception. The nice thing about them is that you can toss in whatever you like. If you want some heat, use more chile flake. Like Cajun? Add some Cajun seasoning. Herbs? Use fresh rosemary or thyme.

Grilled Potato Wedges

Easy tasty grilled taters. Great on their own without ketchup.

  • Place potatoes in a large pot and cover with water. Add in two tablespoons of salt. Bring to a boil and cook until the potatoes are starting to soften, but still hold their shape, about 20 minutes depending on the size of the potatoes. Drain and cut into wedges.
  • Fire up a grill for direct cooking.
  • Brush the potatoes with some of the olive oil (about 1/4 cup) and sprinkle with salt and pepper. Place on grill and grill until lightly charred. Flip and grill another 2-3 minutes. Remove to a bowl.
  • Heat remaining oil in a small skillet. Once hot, remove from heat and add the garlic, chili flakes, and parsley. Let set for 1 minute.
  • Pour oil over potatoes and toss gently.
  • Serve topped with freshly grated cheese.

Grilled Stuffed Fritos

I’m always on the lookout for something new and different to grill. One of my favorite blogs, Nibble Me This, is a great place to go for inspiration or new ideas, like these completely awesome grilled Fritos stuffed with a ground beef mixture and topped with cheese and a Southwestern sauce.

The biggest challenge to making grilled stuffed Fritos is finding enough pretty Fritos. The best way is to pour the bag out onto a few baking sheets and start searching! It took me two bags to find enough perfect ones to make a batch.

  • Setup your grill for indirect cooking at 350 F.
  • Mix all ingredients except the Southwestern sauce in a large bowl.
  • Find 48 or so (you might need a few more) perfect Frito Scoop chips. You want ones with a nice scoop that will stand up without rolling over.
  • Spoon 1 tablespoon (more or less, depending on the size of the chips) of the meat mixture into each chip.
  • Grill chips about 20 minutes or until the meat hits 165 F with an instant-read thermometer.
  • Serve drizzled with the Southwestern sauce.

Grilled Smoked Sausage Po Boy

This grilled smoked sausage po boy is one of those perfect po boys. The kind that drip yummy sauces down onto your plate. The kind of yummy sauces you slop up with the last bites of the bread.

Everything about this sandwich is delicious, but the really great part is the Kaw-Cajun Comeback sauce. It has a nice spicy kick, and is great on absolutely every sandwich you could ever make. I make a big batch of Kaw-Cajun Comeback sauce and keep it on hand for great po boys. Chez John from Fat Johnny’s Front Porch is the creator of the sauce. Pay his site a visit. He makes amazing food.

Grilled Scallion Sweet Potatoes

You could always make these fantastic sweet potatoes in the oven, but if you have it full of food (such as a Thanksgiving turkey), just toss them on the grill like these grilled scallion sweet potatoes. I often cook sides on the grill, specially if I’m cooking them at a family get-together (you never know if there will be room in the oven when you get there!).

  • 1 ½ pounds sweet potatoes peeled and cut into cubes
  • 1 bunch scallions cut into 2″ pieces
  • 6 cloves garlic minced
  • 1 teaspoon dried thyme
  • ¼ cup olive oil

  • Place all ingredients into a large bowl and toss to combine.
  • Pour onto a large sheet of aluminum foil. Fold up and close.
  • Place over indirect heat on your grill and cook until the potatoes are soft, 20-25 minutes.

Grilled Chicago Hot Dog

This is my take on a grilled Chicago hot dog. Now, don’t email me telling me I’ve broken some cardinal rule by grilling these (on my Weber grill!). I’ve had “real” Chicago dogs and love them, but if it’s not -45 F outside, I’m going to fire up a grill when I make hot dogs.

Southwestern Hot Dog

Mayonnaise on a hot dog can be a beautiful thing. Though, I can honestly say that it’s not anything I had growing up. I was a ketchup-on-a-hot-dog kid. I didn’t like the tang of mustard. This southwestern hot dog is one of the hot dogs that keeps me believing in keeping an open mind when it comes to topping dogs. Or anything else for that matter.

Times have changed, and I’ll put just about anything on a hot dog. Including mayonnaise. These southwestern hot dogs are awesome. If you don’t have (or want to make) fresh pico de gallo, use jarred or substitute salsa instead.
