I keep a few packages of instant chicken Ramen on hand at all times. Not to make Ramen, but to use the noodles and seasoning in various recipes. I’ve made Ramen-seasoned chicken wings (one of my favorites). A Ramen broccoli slaw. And now, quick fix Ramen-seasoned chips. In just minutes I’m enjoying an almost-criminal indulgence: that salty chicken Ramen seasoning over warm potato chips.

Ingredients

  • 4   cups wavy potato chips A few good handfuls worth. I recommend ruffled chips, and no need to get the expensive stuff, store brand is fine
  • 2 packets Ramen seasoning chicken flavor, leftover from a package of Ramen Noodle Soup, or more, to taste

Instructions

  • Preheat your oven to 275 F.
  • Spread chips out onto a baking sheet. Bake for 5 minutes. You should see that the oils in the chips have come to the surface.
  • Gently transfer chips to a large bowl and sprinkle with the seasoning. Use a spatula to carefully stir to coat.
  • Serve immediately.

Notes

Be gentle when stirring to avoid breaking the chips.

Quick Fix Nashville Hot Chicken Potato Chips

I find myself being un-impressed with most store-bought ‘spicy’ potato chips. Yeah, some are spicy, but they don’t taste good. And some taste great, but they sure aren’t spicy. The solution? Quick Fix Lemon Pepper Potato Chips

Because I’m a chicken wing nut, I have a lot of various wing seasonings on hand at all times. And I do mean a lot. But, you know those seasonings (and any other of my favorites) are great on potato chips? No reason to be locked into only a handful of flavored chips at the store when you can make them taste however you want! Today I made a batch of my quick fix lemon pepper potato chips. Chips. Lemon pepper seasoning. That’s it! And oh-so-good!

Cheap Chips For The Win

You don’t need to grab the expensive chips when you make quick fix lemon pepper potato chips. The key here is to warm up the chips just enough that the oils they were cooked in come back to the surface of the chips. That gives the seasoning something to cling to. No big pile of seasoning at the bottom of the bowl with these chips, nope. Nothing but flavor.

Of course, you can make homemade potato chips in a deep-fryer and then toss them in the seasoning too! Just don’t over-drain the chips as they come out of the hot oil or the flavors won’t have anything to adhere to. Make sure you get them good and coated.

It seems like any time I pick up a bag of salt and vinegar potato chips at the store I end up unhappy. Some are way, way, way too salt and vinegar-y. You know, open the bag, breathe in, pass out. Others, I swear the bag was mis-labelled because I don’t get even a hint of salt and vinegar. The solution? Quick fix chips that have just the right amount of salt, and just the right amount of vinegar! Score!

Trailer Park Hot Dog

This is my take on the Trailer Park hot dog. It’s another great dog from the Dougie Dog food truck from Vancouver, Canada. I’ve been watching the show Eat Street on the Cooking Channel. They recently had an episode where they visited Dougie Dog. After seeing all the great dogs they have, I decided to make my own versions. Of course, if they had a truck here in Indianapolis, I’d be camped outside their door right now.

Simple. But Oh So Good.

Is there an easier hot dog recipe? Probably, but not a good one. Don’t laugh at the simplicity of these hot dogs. They’re actually quite tasty. You get a crunch from the chips and a nice creamy cheesiness from… well, the cheese.

I was going to serve these trailer park hot dogs on some fru-fru fancy hot dog rolls I picked up from Taylor’s Bakery, but that just didn’t seem right. Grab yourself a pack of the cheapest buns you can find and enjoy some good dogs.

Smoked Potato Chips

I had my Weber Smokey Mountain smoker set up for a cold smoke the other day. I was making a batch of smoked cheeses. Since I already had everything in place, I decided to throw on a bag of cheap, plain potato chips. In a short time I had a batch of fantastic tasting smoked potato chips! How easy is that?

Cold smoking can be a tricky endeavor. The key is to not get above 90 F. Though chips aren’t as picky as cheeses, you still don’t want to cook them over high heat or get too much smoke on them. They can definitely get overpowering.

Smoked Potato Chips

It’s Actually Very Easy

My cold smoke setup for smoked potato chips is easy. I put 4 lit charcoal briquettes topped with a piece of apple wood. Once the wood starts to smoke I put on the chips or cheeses or whatever I am cold smoking. I monitor the temperature in the smoker, making any damper adjustments needed to maintain 90 F. It’s easier to do on a cloudy, cool day. I taste as I go, until I get the amount of smoky flavor I want.

You can also cold smoke with a smoke tube.

Serve up even more smoky goodness by making some smoked onion dip. And don’t forget these chips go great with a pulled pork BBQ sandwich.

For cold smoking

  • 4 lit charcoal briquettes
  • 1 small chunk apple wood

For the smoked potato chips

Instructions

For cold smoking

  • Place the 4 lit briquettes in the bottom of your smoker.
  • Add the wood chunk.
  • Once the wood is smoking, you can add the potato chips.

For the smoked potato chips

  • Place the chips in an aluminum pan over a cold smoke setup at 90 F.
  • Smoke 20-30 minutes, gently tossing once or twice, until the desired smoke taste is achieved.

Notes

You can store the chips in an air-tight container until ready to serve.
