We don’t eat out often, so when we get a craving for a sub we make a copycat of Jersey Mike’s sub at home.

The Keys To Discuss

The keys to making a good copycat of Jersey Mike’s sub are the right oil ratio (3 parts canola oil and 1 part olive oil) and the red wine vinegar (5% diluted). After that, you can do whatever you want, pretty much. We like ours “Mike’s Way”, with tomato, lettuce, onion, and of course oregano and salt. It’s a combination that always works.

Copycat Jersey Mike’s Sub

Ingredients

For the sandwich

  • 2 loaves French bread sliced horizontally
  • ½ head iceberg lettuce shredded
  • 1 pound deli sandwich meat sliced thin
  • 2 large tomatoes sliced
  • 1 large sweet onion sliced
  • 2 teaspoons dried oregano more or less, to taste, crushed
  • 2 teaspoons kosher salt more or less, to taste
  • red wine vinegar diluted to 5%, see note
  • 3 tablespoons canola oil
  • 1 tablespoon olive oil

Instructions

  • Assemble the sandwich by dividing the meat between the bread halves.
  • Add the tomato and onion slices. Top with a few good handfuls of the lettuce.
  • Sprinkle the sandwiches with the red wine vinegar. Don't be shy with it.
  • Combine the canola and olive oils and sprinkle over the sandwiches. More is better, in my opinion.
  • Finally, sprinkle tops with the oregano and salt. Add the top halves of the bread, slice in half in the middle. Serve.

Notes

Note: The red wine vinegar you use should be diluted to 5%. I checked a few of the bottles available at our local grocery store and all were 5%, so I did not need to dilute the vinegar any further.

Copycat Zax Sauce

It was one of those days where I just needed a bit of a kick of inspiration. It was cold out and I just wanted to eat something out of a box. I didn’t want it to be blah though, so I made a batch of this copycat Zax sauce from Zaxby’s. Sure, I just dipped chicken fingers in it at first, but after that I used the sauce on sandwich wraps and hamburgers. It’s great no matter what you slather it on. Or dip in it.

Great Just As It Is

I was going to add some heat, some kick to this copycat Zax sauce, but I talked myself out of it. And I’m glad I did, too. It’s really quite good just as it is. And it does get better as it sits in the fridge so let it have that time.

Great For Fries, Too!

Oh did I mention you can dip French fries in this too? Why aren’t mayonnaise-based dipping sauces for fries aren’t more popular in the US? It’s such a welcome change from ketchup. We need a campaign here to show people how great creamy sauces are for dipping fries!

Copycat Chipotle Honey Vinaigrette

Last week was salad week here. Every once-in-a-while I go on a one-week long campaign to make salads. Not little ole wimpy salads, but meal-sized salads that dreams are made of. To add a special touch I often make dressings from scratch, like this copycat Chipotle honey vinaigrette. This dressing checked all the boxes. Perfect consistency (very important!). Nice and creamy. A little sweet. And a little heat. Heck, I just realized that my favorite salad dressings are a lot like barbecue sauces! Huh!

One Great Dressing. And Marinade.

This copycat Chipotle honey vinaigrette is not only great on salads, it’s also great as a marinade for chicken. Just let chicken breasts (or whatever cuts you prefer) get happy in the dressing for an hour or so, then grill as desired. So make extra vinaigrette and enjoy!

Burger King recently came out with their Angry Whopper. It’s loaded with all darned near everything you can imagine, from jalapenos to onion petals to bacon. And angry sauce. Now, I didn’t set out to make the Angry Whopper at home. I was after the Angry Whopper sauce. And I found it. I wouldn’t hesitate to kick up the heat in this angry Whopper sauce. A little more hot sauce and a little more cayenne pepper isn’t gonna hurt anyone, so I say go for it. This is also a great sauce for a cookout. No one wants that old boring ketchup. They want a great burger sauce instead!

Both of the Cheeseburger in Paradise restaurants near us have closed. Thankfully, I picked up a copy of Margaritaville: The Cookbook, so I can make some of my restaurant favorites at home. And that starts with making the signature burgers, Cheeseburgers in Paradise.

Delicious old-school burgers with a few twists that make them unique and oh-so-yummy. These Cheeseburgers in Paradise are what burgers are supposed to be: moist, seasoned well, and topped with a sauce (and some juices) that drips down your arms with every bite. The messier the better, I’ve always said.

The Perfect Burger Seasoning

I do admit that I used slightly less cumin than the original recipe called for. My wife’s not a big fan of cumin. The seasoning was still out-of-this-world fantastic. I always keep some on hand in an air-tight container for those times when I’m throwing some burgers on the griddle, which is often.

You might think that the dressing looks a lot like Thousand Island dressing. The addition of lime really makes it special and different. That reminds me, you’ll also want to try my Thousand Island BBQ smash burgers.

For the burgers

  • 1 ½ pounds ground beef I prefer an 80/20 blend
  • 1 tablespoon house seasoning blend see below
  • 8 slices American cheese
  • ½ cup Paradise Island dressing see below
  • 4 buns split, lightly toasted
  • 2 cups iceberg lettuce shredded
  • 8 slices tomato
  • slices dill pickle chips

For the Margaritaville house seasoning

Instructions

For the Margaritaville house seasoning

  • Combine all ingredients. Store any leftovers in an air-tight container.

For the Paradise Island dressing

  • Whisk together all ingredients. Keep refrigerated until ready to use.

For the burgers

  • Divide and shape the beef into 4 equally-sized patties. Season liberally with the house seasoning.
  • Cook as desired. I prefer to cook mine on a griddle over a hot grill, but you can also make them in a skillet.
  • Top each patty with 2 slices of the cheese.
  • Slather the buns with the dressing. Add the lettuce, patty, tomato, pickles and top bun.

Notes

Give the sauce another stir before using.

Copycat Jason’s Deli California Club Sandwich

Back in my high school days I worked in a no-name sub shop. I made some mighty darned good sandwiches if I do say so myself. But honestly, nothing I made was as good as this copycat Jason’s Deli California Club sandwich. First, we didn’t make sandwiches on croissants, which give the sandwich such a nice light buttery flavor. And I had no idea then what alfalfa sprouts were. Now I love them on a sandwich, along with guacamole. This sandwich would’ve been a big seller at the sub shop where I worked.

Go Spicy

I used a spicy guacamole to offset some of the sweetness of the croissant in my copycat Jason’s Deli California club sandwich. You can use ‘normal’ guacamole instead, or try my copycat of Jimmy John’s avocado sandwich spread instead.

No Sprouts, No Worries

I also could not find alfalfa sprouts at any of the grocery stores near our house. None of them. In fact one doesn’t carry sprouts any more at all. Luckily I found some bean sprouts. They aren’t the same thing as alfalfa sprouts but they did add a similar texture.

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Fiery Beef-n-Cheddar

Although I don’t eat fast food any more (or at least, it’s been years since I have), that doesn’t mean I don’t get a hankerin’ for it every now and then. Here lately I’ve been jonesin’ for a beef-n-cheddar sandwich from Arby’s, with a side of curly fries. But I wanted something a bit different than the great sandwich I can get at the fast-food chain. I wanted some kick. Some spice. And oh boy, did I get it! Presenting my Fiery Beef-n-Cheddar. Ooey gooey cheese with just the right amount of kick. Thin-sliced roast beef. Ingredients

For the Fiery Beef-n-Cheddar sandwich

  • 4 onion buns
  • 1 pound roast beef thinly-sliced

For the Fiery Arby’s sauce

For the Fiery cheese sauce (you’ll have plenty leftover. It’s great for dipping curly fries!)

Instructions

For the Fiery Beef-n-Cheddar sandwich

  • Warm the buns in the oven.
  • Heat a large skillet over medium heat.
  • Add the roast beef, cover, and turn heat to low.
  • Slather the buns with the fiery Arby's sauce.
  • Top with the roast beef and fiery cheese sauce.

For the Fiery Arby’s sauce

  • Combine all ingredients.

For the Fiery cheese sauce

  • Melt the butter in a medium saucepan over medium heat.
  • Add the shallot, garlic, and jalapeños and sauté for 3 to 4 minutes, or until the shallot is softened
  • Add the chipotles and evaporated milk, stir.
  • Whisk in the corn starch until dissolved.
  • Reduce the heat to medium-low, and add the cream cheese and mustard.
  • Stir until the cream cheese is melted.
  • Stir in the cheddar and reduce heat to low until cheese is melted.

Notes

Have your deli person slice the roast beef as thin as possible.

Quick Fix Copycat McDonald’s Chicken Sandwich

I love cooking meals from scratch. But sometimes reality hits and I have to throw something together that doesn’t require a lot of preparation or ingredients. That’s where this quick fix copycat of McDonald’s chicken sandwich comes in. In less than 30 minutes I get to enjoy a rather tasty chicken sandwich. Heck it even has fresh toppings on it and a rather delicious(but incredibly simple) sauce. Hey, it’s not bad when you’re in a crunch, and I often find myself making little changes to mix things up a bit.

Quick Fix Copycat McDonald's Chicken Sandwich

Make It Spicy

Add a little kick to your quick fix copycat McDonald’s chicken sandwich by substituting Tyson’s spicy chicken patties, adding a slice of pepper jack cheese, and adding Sriracha instead of onion powder when making the sauce. You can make these somewhat chicken wing-like by adding Buffalo wing sauce to the buns.

We are not making 5 star sandwiches here, but that’s no reason for them not being tasty. Nothing fancy, just good.

Copycat Bubba Gump’s Dumb Luck Coconut Shrimp

My wife and I have had the joy of eating at several Bubba Gump Shrimp Company restaurants. We always end up ordering something shrimp-y. Hey, ‘shrimp’ is in their name! When we can’t make it a restaurant and get the real deal we make copycat versions at home. Like this copycat Bubba Gump’s Dumb Luck Coconut Shrimp. Crazy good coconut-crusted deep-fried shrimp with a fantastic Cajun marmalade sauce. Serve it as an appetizer or devour a batch for dinner. Either way, this is good shrimp!

Shrimp Cook Fast. Really Fast.

Keep an eye on your copycat Bubba Gump’s Dumb Luck Coconut Shrimp while they fry. Shrimp cook very, very quickly. Coconut can burn very, very quickly. Once you see golden brown colors, flip them and don’t cook them much longer.

To help prevent the coconut from turning too brown too quickly I did use unsweetened coconut. The sugars in sweetened coconut will burn quicker. You won’t notice a difference in the taste of the shrimp, so go with unsweetened.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

I highly recommend that you double the recipe for the sauce. It’s crazy good. I’d use it for any shrimp, any time, any where. Doesn’t have to be coconut shrimp, either.

  • In a shallow bowl or pie plate whisk together the Bisquick and beer.
  • In another shallow bowl or pie plate, whisk together the flour, seasoning salt, cayenne pepper, and garlic powder.
  • Place the coconut in a third shallow bowl. 
  • Working in batches, dip the shrimp into the wet batter. Then roll in the flour mixture. Lastly, roll in the coconut, pressing down slightly so that the coconut adheres.
  • Fry the shrimp for 1 minute. Flip and fry another minute, until golden brown. Remove to a paper towel-lined plate.

For the dipping sauce

  • Combine all ingredients. Note: I’m a dipping sauce lover, so I did end up doubling the amount of dipping sauce.

It’s a treat when I get to fire up my deep fryer. And because I’m a sucker for being influenced by cheesy ads on TV for fast food joints, I had to make a copycat of the popcorn chicken you can get at Popeyes. I couldn’t help myself. I was weak. Crunchy, spicy and addicting, I gobbled them up just like Annie (the lady on the Popeyes commercials) said I would.

All You Need Is A Good Dipping Sauce

I figured I needed a few dipping sauces for my copycat Popeyes popcorn chicken. I decided to pick up a few bottles of Sweet Baby Ray’s dipping sauces at the store. SBR makes great BBQ sauces (perfect as-is or as a base for your own creation), so I was pretty darn sure that their dipping sauces would be great too. And they were. Between the popcorn chicken and the dipping sauces and a few fries, it was a happy deep-frying kind of day!

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

  • Cut chicken into small pieces.
  • Heat 3″ of oil to 350 F in a deep fryer or Dutch oven.
  • Combine flour, salt, white and cayenne pepper and paprika in a shallow bowl or pie plate.
  • Whisk together the eggs in a separate shallow bowl or pie plate.
  • Working in batches, dip chicken pieces into the egg.
  • Shake off excess and transfer to the flour mixture, coating well.
  • Shake off excess and place into the hot oil.
  • Fry 3-4 minutes or until golden brown. Transfer to a cooling rack or paper towel-lines plate.
  • Serve with your favorite dipping sauces.

Notes

Serve along with some Popeye’s Delta Dipping sauce!
