We love French fries. But we don’t like heating up the house on a hot day just to enjoy some fries. That’s where my Char-Broil Big Easy comes in. I can cook (reheat, technically) frozen fries in it just like I would indoors. I like to kick-up my fries, and these Italian herb fries on the Char-Broil Big Easy are definitely kicked-up. A little butter and a few tasty herbs and it’s time to devour some mighty tasty fries!

A Bunk Bed Makes For More Great Cooking

To make these Italian herb fries on the Char-Broil Big Easy I used a bunk bed basket. It lets me double or even triple the amount of cooking space I have. I originally used a similar basket that Char-Broil has since discontinued. The bunk bed is at least as good as it was if not better!

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Italian Herb Fries on the Char-Broil Big Easy

 I like to kick-up my fries, and these Italian herb fries are definitely kicked-up. A little butter and a few tasty herbs and it’s time to devour some mighty tasty fries!

Instructions

  • Fire up your Big Easy.
  • Add the fries to the cooking rack, or as I do, place them in 9" non-stick pie pans.
  • Place into the Big Easy and cook until golden brown, 20-30 minutes. Fries towards the bottom of the rack might get done sooner, so start checking them after 20 minutes.
  • Pour the fries into a large bowl.
  • Melt the butter in a small saucepan.
  • Stir in the spices.
  • Pour butter mixture over the fries and toss to coat. Note: It's completely optional, but you can also return the fries to the Big Easy, after coating them, for about 5 minutes to get a little extra crunch on them and kind of 'set' the spices and butter.
  • Serve.

Notes

You’ll need a Big Easy cooking rack or a Bunk Bed basket to cook these fries.

Jalapeno Poppers on the Char-Broil Big Easy

Ever since getting a cooking rack for my Char-Broil Big Easy (now replaced by the bunk bed basket) I’ve been making tons of dishes I would normally make on my grill or in the oven. Like these jalapeno poppers. In no time I can make a big batch of these little treats. Cream cheese, bacon, and jalapeno. The jalapenos tame down a lot while they cook, so don’t worry about them being super spicy. They’re very good, and my favorite part, you can taste that they are peppers but not have your mouth set on fire!

A Few Tips

The bacon around the jalapeno poppers won’t get super crispy on the Char-Broil Big Easy, but it does come out cooked perfectly. Some folks like to secure the bacon using toothpicks, but I’ve found if you use pieces that are long enough they tend to secure themselves. If you do use toothpicks, soak them in water for 15 minutes first to help prevent them from burning.

For a slightly different take on the classic jalapeno popper, try making scorpion tails on your Big Easy. Or my little more mellow pickle poppers.

Jalapeno Poppers on the Char-Broil Big Easy

Ever since getting a cooking rack for my Char-Broil Big Easy I’ve been making tons of dishes I would normally make on my grill or in the oven. Like these jalapeno poppers. In no time I can make a big batch of these little treats.

Instructions

  • Cut the jalapenos in half lengthwise and remove the seeds and membranes.
  • Spoon in enough cream cheese to fill the cavity.
  • Wrap bacon around jalapenos. Depending on the size of your peppers, you may want to cut the bacon in half first.
  • Season with BBQ rub.
  • Fire up your Big Easy.
  • Transfer jalapenos to the Big Easy cooking rack.
  • Lower basket into the cooker and cook until the bacon is sizzling hot and the cream cheese is melted.
  • Let cool slightly before serving.

Notes

Serve hot.

Sweet corn is in season and that makes me happy! One of the easiest ways to prepare it is to make corn-on-the-cob on the Char-Broil Big Easy. The corn comes out tender and sweet. Every kernel pops in your mouth as you bite into it. To make my corn extra special I wrapped it in bacon first! Oh yeah!

Add Bacon. Just Because.

I cut my corn-on-the-cob in half and then put them into the Char-Broil Big Easy, standing them on end. With the bunk bed basket I think I could easily fit 6 full ears on my Big Easy. You don’t want to crowd them, though, so they cook evenly and the bacon crisps up good. If you’re using bacon, that is. And really, why not?

Instructions

  • Fire up your Big Easy.
  • Season the corn.
  • If using bacon, wrap the slices around the cobs and secure with a toothpick. Add more seasoning if desired.
  • Place the corn into the Big Easy basket. I found it easiest to stand them on end.
  • Lower the basket into the cooker and cook 25-30 minutes or until the corn is done and starting to brown on the bottom and the bacon is done (if using).
  • Remove and devour!

Notes

You’ll want to use a Bunk Bed basket to double the capacity of your Big Easy.

These Sriracha bacon onion rings on the Char-Broil Big Easy give new meaning to kicked-up goodness. I mean, come on, what could be better than Sriracha and bacon? I have to tell you, these rings don’t get all super crispy like deep-fried, but they more than make up for that with flavor. You can’t possibly make enough of these to satisfy your guests!

Easy To Make. Fun To Eat.

Basically, you can serve the Sriracha Bacon Onion Rings on the Char-Broil Big Easy ‘as-is’. Or do as I did and mix a few squirts of Sriracha and Ranch dressing together and use that as a dipping sauce. The cool Ranch will help cool off the spicy goodness, but it doesn’t hide it. Heck, I added Sriracha to it so it’s not like it’s wimpy.

You can’t fit a whole bunch of Sriracha bacon onion rings on the standard basket that comes with your Big Easy. To really make a batch, you’ll need the bunk bed basket. It adds a lot of cooking room.

Sriracha Bacon Onion Rings on the Char-Broil Big Easy

These Sriracha bacon onion rings that I made on my Char-Broil Big Easy give new meaning to kicked-up goodness.

Ingredients

  • 2 large Vidalia onions
  • Sriracha
  • 12 slices bacon

Instructions

  • Fire up your Big Easy.
  • Slice the onion into thick ‘steaks’ about 1/2″ thick.
  • Push out the inner rings (save for another use), leaving the last two outer rings still together as one. Do not separate them. Note: If the rings are particularly thick then you can separate them as cook them as single rings.
  • Squeeze some Sriracha into a bowl that’s just big enough to fit an onion ring.
  • Place the ring into the sauce. Using your fingers, spread the sauce all over the ring. Flip the onion and repeat. Get it coated, but not drenched.
  • Wrap bacon around the rings. Don't wrap too tightly since the bacon will shrink. Don't wrap it too loosely or it will fall off.
  • Brush (or just use your fingers) more Sriracha on the outside of the bacon.
  • Place the rings on your Big Easy rack and lower into the Big Easy.
  • Cook the rings until the bacon just starts to crisp.
  • Gently flip them and cook another 10-15 minutes.
  • Remove to a wire rack and let firm up a bit.

Notes

Serve with Ranch dressing or ketchup.

Cajun Pork Tenderloin on the Char-Broil Big Easy

Well, heck yeah! If you follow this blog you know I’m a huge fan of the Char-Broil Big Easy. I’m not afraid to cook anything on it, from chicken to crab. But never pork tenderloin until now. And wow, what a great job my Big Easy did (again!)! I injected the pork tenderloin with a simple Cajun butter mixture (you could use store-bought), let it get happy in the fridge for a bit, then skewered it using one of the kabob add-ons (see my Char-Broil Big Easy Add-On page) and cooked it up. In no time (really) I had a perfectly cooked Cajun pork tenderloin, all ready for slicing and eating on sliders.

Go Tenderloin, Not Loin

I prefer pork tenderloin pork loin 9 times out of 10. It’s more tender and flavorful. It’s the pork equivalent of a beef tenderloin, so you know it’s the best. Like most cuts of pork it needs a little flavor boost, but I don’t go crazy with it.

Feed A Crowd

You’ll see that I had no problem fitting two 1 1/2 pound pork tenderloins into the Big Easy. I did have to cut them in half, but it was close… I probably could’ve made them fit without cutting. That means I could probably easily fit 4 (or maybe even 6) tenderloins on the Big Easy at once… enough for a crowd and then some! Note that you might want to trim the ends just a bit if they are much thinner than the rest of the tenderloin or they will be done cooking well before the rest of the meat.

For a great side dish, roast up a few red potatoes in your Big Easy.

Cajun Pork Tenderloin on the Char-Broil Big Easy

Well, heck yeah! If you follow this blog you know I’m a huge fan of the Char-Broil Big Easy. I’m not afraid to cook anything on it, from chicken to crab. But never pork tenderloin until now.

Ingredients

  • 2 pork tenderloins about 3 pounds total

For the Cajun injection

Instructions

  • Remove tenderloins from packaging.
  • Cut tenderloins in half in the middle if necessary to get them to fit into the Big Easy.
  • Trim and thin ends as they will cook too quickly.
  • Inject with the Cajun injection and cover.
  • Place in the fridge for 4 hours.
  • Fire up your Big Easy.
  • Thread the tenderloins onto the Big Easy skewers.
  • Lower into the cooker and cook until the pork is medium, 155-160 F. Plan on 10-15 minutes per pound cook time.
  • Remove and let rest 10 minutes before slicing.

For the Cajun injection

  • Melt the butter in a small saucepan.
  • Add the Cajun seasoning and garlic powder. Stir and let simmer until the spices are completely dissolved.
  • Load into an injector with a large needle (I used the one for minced marinades).

I love cooking on my Char-Broil Big Easy. So much that I even put together a free eCookbook containing some of my favorite Big Easy recipes. Like most people, I bought my Big Easy for cooking turkey at Thanksgiving. I quickly realized that I can cook just about anything in it. Even jumbo hot dogs! Yep! Very few things are as addictive as chorizo-stuffed Fritos made on the Char-Broil Big Easy. These little bite-sized snacks disappear in no time. As an added bonus, they are incredibly easy to make. You can fit a whole bunch of stuffed Fritos on the Big Easy, making it perfect for cooking for a crowd, if you have the available cooking rack.

Spicy Chorizo

Just about anything you put in the Fritos is going to taste great. I used Mexican chorizo because I love the spiciness that is brings to dishes, but ground breakfast sausage would also be fantastic.

Caution! Hot!

Be careful when pulling these chorizo-stuffed Fritos off your Big Easy. In no time the chips get mighty hot, so use tongs or let them cool a bit first before handling and eating. You can also make these great Fritos on your grill.

Chorizo-Stuffed Fritos on the Char-Broil Big Easy

Chorizo-Stuffed Fritos on the Char-Broil Big Easy

Very few things are as addicting as chorizo-stuffed Fritos. These little bite-sized snacks disappear in no time. As an added bonus, they are incredibly easy to make.

Ingredients

  • 2 bags Fritos Scoops grab 2 bags in case it’s hard to find the perfectly-shaped chips
  • 1 pound Mexican chorizo cooked, finely crumbled (Note: If you cannot crumble the sausage well enough, toss the slightly-cooled cooked chorizo into a food processor and pulse a few times)
  • 2 cups shredded cheese extra sharp cheddar or pepperjack work great!
  • 1 cup Ranch salad dressing
  • 2 tablespoons chipotle peppers in Adobo sauce or more, to taste, chopped, along with some of the adobo sauce
  • 4 green onions sliced thin, for garnish

Instructions

  • Fire up your Big Easy.
  • Open the bag of chips and place in a large bowl. Go through them and grab the biggest, best scooping chips you can find.
  • Combine the crumbled chorizo and cheese. Press lightly into the chips and transfer to the cooking rack.
  • Lower rack into the Big Easy and cook until the cheese is melted on all levels, about 5 minutes.
  • Remove the rack and let cool slightly.
  • While the chips are cooling whisk together the dressing and chipotle with adobo.
  • Serve chips drizzled with the sauce and garnished with green onions.

Notes

You’ll need the 6-level cooking rack from Char-Broil to heat up a bunch of these treats at once.

I’m a huge fan of Nashville Hot chicken. You can get it as hot (or not) as you want. Crispy fried chicken, spicy coating. What’s not to love? I’ve made in the deep fryer, now I’ve taken on making Nashville Hot Chicken on the Char-Broil Big Easy. And I won. Nashville Hot chicken on the Big Easy is crazy good. Again, crispy skin. And again, spicy coating. Perfect!

The Big Easy Comes Through As Always

I also have a great recipe for deep-frying Nashville hot chicken. It’s a little more traditional than this Nashville Hot Chicken on the Char-Broil Big Easy version, but both are super tasty! Since my Big Easy version doesn’t require deep-frying you don’t have oil from the fryer to use for the spicy coating. That’s why you’ll have to just make your own spicy coating using oil from your pantry. It’s still fantastic, and hey, you don’t have to mess with deep-frying the chicken!

You can use this same approach for making Nashville hot chicken wings, thighs, legs, and even boneless chicken breasts!

Also try my downtown roasted chicken on the Big Easy. There’s nothing that the Big Easy doesn’t do great.

Nashville Hot Chicken on the Char-Broil Big Easy

I’m a huge fan of Nashville Hot chicken. You can get it as hot (or not) as you want. Crispy fried chicken, spicy coating. What’s not to love?

For the chicken

For the spicy coating

Instructions

  • Rinse chicken and pat dry.
  • Brush the chicken on all sides with the hot sauce.
  • Season well and refrigerate for at least 1 hour before cooking.
  • Fire up your Big Easy.
  • Place the chicken into the basket and lower into the cooker.
  • Cook chicken until it reaches 165 F as measured in several locations, 10-15 minutes per pound.
  • Remove chicken and brush with the spicy coating. Use a little or a lot depending on how hot you want the chicken.
  • Serve with dill pickles and white bread.

For the spicy coating

  • Place all ingredients in a medium saucepan over medium heat.
  • Whisk until well combined.
  • Keep warm on low until ready to use.
  • Stir before brushing onto the chicken.

Notes

You can also serve the coating on the side, for dipping!

Char-Broil Big Easy Cooking Rack

Update 12/18/2016: I can no longer find the Big Easy cooking rack on Char-Broil’s website, so it doesn’t appear to be available at this time. I asked Char-Broil and there doesn’t seem to be a plan to bring the rack back. Please ask them to offer it again on their Facebook page or website. In the meantime, just grab some extra baskets and get to cooking!

I cook on my Char-Broil Big Easy practically every day. Everything from nachos to turkeys and anything in between. But, it does lack space for cooking things like chicken wings, which is why I came up with the Wingin’ator 3000 a few years back. To make things easier, Char-Broil recently came out with a cooking rack for the Big Easy. It’s a little different than my Wingin’ator, but it has more space. I’ve been using it for a whole bunch of foods that I couldn’t cook before.

The Design

The rack consists of a cage, or frame, that is rectangular in shape. It has a simple handle at the top. It’s very easy to assemble. Two of the sides of the cage have little indentations where you can rest individual grates, up to 6 in total. The grates do not attach to the cage, they sit there, so they can move around a bit. You do need to be careful loading them with food as you don’t want to get one side much heavier than the other or it’ll tip. You’ll also want to be careful carrying the rack. The grates are approximately 2″ apart, giving you more than enough room to insert chicken or whatever you are cooking.

Easy Cooking, Easy Clean Up

The rack by itself is perfect for cooking things like wings or chicken breasts. And it’s pretty easy to clean up. Just toss the grates into the dishwasher. If you do handwash them, do so with care as the grates are thin and might break or bend under a lot of pressure.

A Whole Lot Of Cooking Space

One of the really great things about the rack is that you can also add 9″ pie plates on top of each grate. Well, you might be able to get 6 in, but 3-5 is more like it. You have to angle the pans just a bit to slide them in, so you have to be careful if you’re cooking something runny, like a frittata for example. I picked up some el cheapo 9″ pie pans at the grocery store for less than $3 a piece. They are non-stick and have worked absolutely fantastic on the Big Easy for nachos, fries…. you name it!

Potato Skins on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

For me, the best part of these potato skins on the Char-Broil Big Easy isn’t so much the toppings, though let’s face it, I do love bacon and cheese and sour cream and jalapenos. No, it’s actually the crispy potato skins. Brushing them with melted butter mixed with smoky chipotle powder really sets these skins apart from the usual. It’s not all about the toppings. Every bite is fantastic.

Load ‘Em Up!

Depending on how big they are, you can fit at least 8 of them on the Big Easy at once if you use the additional bunk bed basket. Potato skins on the Char-Broil Big Easy are a magical thing, and you’ll want to make as many as you possibly can at once.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Get the real stuff.

You can also cook French fries and hash brown patties on the Big Easy.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Potato Skins on the Char-Broil Big Easy

For me, the best part of these potato skins isn’t so much the toppings, though let’s face it, I do love bacon and cheese and sour cream and jalapenos. No, it’s actually the crispy potato skins.

Ingredients

  • 2 large Russet potatoes
  • 2 tablespoons butter melted
  • 1 teaspoon chipotle powder
  • 1 cup extra sharp cheddar cheese shredded
  • 3 strips bacon cooked, crumbled
  • 2 green onions chopped
  • sour cream
  • jalapenos diced or sliced, optional

Instructions

  • Fire up your Big Easy.
  • Cut each potato lengthwise into four wedges. Don’t make the wedges too thick. If you are using very large potatoes you might have a center portion leftover for other uses.
  • Using a spoon or melon baller, scrape out the potato insides, leaving 1/4″ or so left.
  • Place on a microwave-safe plate and microwave on high for 6-10 minutes or until tender.
  • Combine the butter and chipotle powder and brush on all sides of the potatoes.
  • Place the potatoes on a rack and lower into the cooker and cook for 5 minutes until hot and starting to get crispy.
  • Remove the basket from the Big Easy and let cool for a minute or two.
  • CAREFULLY top the potatoes with the cheese (be careful to not touch the still-hot basket) and return to the Big Easy for a few more minutes or until the cheese is melted.
  • Serve topped with the bacon, green onions, sour cream and diced or sliced jalapenos as desired.
