Mom’s Shrimp Dip

Even though I’m not the world’s biggest fan of horseradish, it is completely impossible for me to eat too much of my mom’s shrimp dip. It’s certainly one of the easiest appetizer recipes you’ll ever come across. And also most definitely one of the best. It’s almost reminiscent of shrimp cocktail, which not surprisingly is also one of my favorites.

Wonderful Shrimp Flavor

I strongly recommend that you at least double this recipe. It won’t last, even if you don’t have a big crowd to entertain. It just won’t last. I like a little texture to the shrimp, I want to know they’re in mom’s shrimp dip, so I don’t go crazy shredding or chopping them too much. This is a shrimp dip after all. Not a shrimp puree!

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Even though the recipe starts with four teaspoons of horseradish, I always end up adding more. I will caution you that the flavor becomes stronger the longer it sits in the fridge, so for your first batch I’d start with what the recipe calls for.

To shred the shrimp, use the end of a fork. It’s a bit tedious but worth it. You can chop them instead if you’re in a hurry, just don’t over-chop them.

Hot Holiday Broccoli Dip

This hot holiday broccoli dip is different, at least for me. I can’t recall ever making a dip with broccoli. Maybe I just don’t get out enough because the dip was fantastic. I wouldn’t say it was healthy, but maybe healthier than a lot of dips you’ll find during the holidays. Probably healthier than most dips I make! It’s deliciously creamy for sure, and has a great crunch from the broccoli!

Hearty And Good

Hot holiday broccoli dip is thick, so you can’t serve it with some wimpy chips or crackers. Get the thick, hearty stuff because you’ll want to dig deep and load up.

Oddly, or maybe not, this dip is really good just as it is as a side dish. You might want to leave the broccoli whole and not chop it.

I haven’t tried it, but I think you could make this dip with cauliflower too. Or instead. I’d make sure that the cauliflower pieces are chopped very small, like the broccoli.

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Get the real stuff.

  • 1 cup mayonnaise
  • 1 cup Mozzarella cheese shredded, divided
  • ½ cup Parmesan cheese grated
  • 1 10 ounce broccoli frozen, thawed, drained, lightly chopped
  • 2 ounce pimentos drained

Instructions

  • Preheat oven to 350 F
  • Spray a 9″ x 9″ baking dish with non-stick spray.
  • Combine the mayonnaise, 1/2 cup of the mozzarella, and all of the remaining ingredients.
  • Pour into the baking dish and spread out evenly.
  • Bake for 20 minutes.
  • Sprinkle with the remaining mozzarella cheese and bake another 5 minutes.

Notes

Stir before serving.

Pizza Dip

What it lacks in food sexiness this pizza dip more than makes up for with fantastic flavor. It’s seriously just like having a big bowl of pizza goodness, perfect for dipping big ole tortilla chips. I made a big ole batch of pizza dip and took it to a family get-together. Watched it disappear in no time (after I sneaked a bowl of it for myself). It’s crazy good and crazy easy.

Its Party Time!

You can make this pizza dip ahead of time and keep it warm in a slow cooker. Just set the heat to low. This is a perfect dip for a party. If you are going to warm it for a long period of time you may want to add a bit more marinara or pizza sauce to keep it from getting too thick. Warm the sauce just slightly before adding, then stir.

You can serve (but not cook!) this dip in a fondue pot!

Fried Green Tomatoes with Spicy Ranch Dipping Sauce

I must have had a bad fried green tomato experience as a child because I have not eaten them in years and years. My wife and I were in the produce section at the store and saw some really nice looking green tomatoes. My wife loves fried green tomatoes. So I grabbed a few to make fried green tomatoes with spicy Ranch dipping sauce.

Now I Get It

We headed home with the tomatoes. And I have to say, any bad memories I have of fried green tomatoes are now long gone. They were fantastic. Crunchy and tasty, and with a nice lightly spicy sauce for dipping.

Extra Crunchy

I used Panko breadcrumbs for an extra crunchy coating on these fried green tomatoes with spicy Ranch dipping sauce. If you like yours a little less crunchy, just substitute regular bread crumbs. For extra kick, mix a little cayenne (or my favorites, smoked paprika or chipotle powder) into the bread crumbs first.

I get out my big deep fryer when it’s time to fry a large batch of food. It comes to temperature quickly and it maintains that temperature perfectly. It has a built-in oil filter and storage unit so I can re-use the oil several times.

For the Fried Green Tomatoes

  • Heat a few inches of oil to 350 F in a deep fryer or Dutch oven.
  • Season the tomatoes with salt and pepper.
  • In 3 separate shallow bowls or pie pans place the flour, the buttermilk and Panko.
  • Working in batches, dip the tomatoes in the flour, covering on all sides.
  • Shake off the excess flour.
  • Next, submerse the tomatoes in the buttermilk.
  • Finally, coat the tomatoes in the bread crumbs.
  • Fry 2 minutes per side or until golden brown.

For the Spicy Ranch Dipping Sauce

  • Combine the ingredients.

Notes

The dipping sauce is great for all your favorite fried treats!

Smoked Hazelnuts

I’ve made the ‘usual’ smoked nuts a number of times. You know, peanuts. Walnuts. Pecans. Those things. This was my first time smoking Hazelnuts. In fact, I’d never even thought about making them until I ran across a picture someone posted of a big batch of smoked Hazelnuts. They looked so amazing I could almost smell and test them. I’ve always loved Hazelnuts, so I figured I’d love them smoked even more and I was right!

Just Nuts

You can shell and eat these nuts just as they are. And I certainly devoured a few handfuls. But, my main reason for smoking them was to use them in recipes. First up? A smoked Hazelnut butter for baked sweet potatoes!

As you can tell from the recipe, I didn’t add anything to the nuts before I put them on my smoker. They don’t need it. No oil, no salt and pepper. Just put them on ‘au naturale’ and let them smoke on the smoker for a while.

I used my Weber Smokey Mountain smoker for these nuts. It doesn’t get any easier than it for smoking nuts, ribs, chicken, pretty much anything you can think of.

Smoked pistachios are also amazing! Try them too!

Rotisserie Roasted Peanuts

For years I thought “Why in the world do I need a rotisserie for any of my grills?” Well, my 20 year old gas grill reached the end, and I decided to get a rotisserie with my new grill. And boy howdy am I so glad that I did! Besides making (of course) chicken and ham, I also get to make really cool treats, like these rotisserie roasted peanuts! These nuts are perfectly roasted, with just the right crunch and just the right grilled flavor.

The Perfect Snack

You can make rotisserie roasted peanuts on either a gas or charcoal grill. If you’re using a gas grill don’t be afraid to add a few chunks of wood to get a bit of a smoky flavor. Don’t go crazy with it, though. You can also use a smoke box loaded with wood pellets or wood shavings. You can soak the shavings in water for 30 minutes before to keep them smoking longer.

I have a Weber rotisserie. To make these peanuts I purchased a rotisserie basket. I’ve found it to be a must-have with a rotisserie. It’s perfect for potatoes, chiles and of course, peanuts! The link to the basket can be found below the recipe.

  • Fire up your grill with the rotisserie. You want the temperature at the rotisserie to be around 350 F.
  • Place the peanuts in your roasting basket and place onto the grill.
  • Roast for 20-25 minutes or until the shells start to turn darker in color. Do not let them get dark brown.
  • Remove and sprinkle with salt.
  • Let cool slightly then serve.

Notes

Use caution removing the peanuts from the rotisserie as the basket is very hot.

Smoked Pecans

My goodness, me, there went my self-control again. Good thing I made two big batches of these smoked pecans because a lot of them were sacrificed in the name of ‘quality control’. The nuts are smoked just enough. There is a such thing as too much smoke on nuts. You don’t want it to be overwhelming, but you do want to still taste smoke. Otherwise, you can’t call them smoked pecans!

Change Them Up

I used two different spice mixtures for the smoked pecans. The first batch I made a somewhat sweet, southwestern-inspired mix. It was a great balance of flavors, and one enjoyed by everyone. The second version I went a bit spicier (but not too spicy) route. It’s the same as the first mix, but with cayenne instead of cinnamon. People often shy away when they see ‘spicy’, but I found them to have just a hint of a kick and a little sweetness.

A grill basket makes getting these little yummies on and off my grill easy.

If you just finished smoking ribs, pork, whatever, on your smoker and still have some fire, smoked pecans are a great way to use up the rest of that smoke time. Never waste it, I say!

  • 2 cups shelled raw pecans
  • 1 tablespoon unsalted butter melted

Spice mixture

Instructions

  • Fire up your smoke for 250 F. Use a fruit wood, such as apple, or pecan. Since the smoking time is short compared to say, smoking ribs, I recommend using extra wood to generate more smoke than you might usually.
  • Place the nuts in a disposable aluminum pan. Drizzle with the melted butter and stir to coat.
  • Combine the spice mixture ingredients and sprinkle over the nuts. Stir to coat.
  • Place the pan onto the smoker and smoke 60 minutes. Stir the nuts every 15 minutes.
  • Remove the pan from the smoker and let the nuts cool completely before serving. On the off chance you have leftovers, store them in an airtight container.

Notes

For a spicy version, substitute cayenne pepper for the cinnamon.

Homemade Strawberry Ice Cream

I could not resist when I saw beautiful, ripe red strawberries at the grocery store. As many dishes as I could use them in, my mind instantly went to creamy, yummy, delicious homemade strawberry ice cream. This ice cream is so smooth, but it also has nice little bites of crazy good strawberry. It tastes so fresh, it’s hard to stop eating it.

This Is Not The Low-Calorie Version

I often change recipes when I make them. And I often cut back on things like, oh, cream or sugar. But not when I make homemade strawberry ice cream. This is not the time to be skimpy or try to make a dish super-duper healthy. This is decadent goodness. It’s supposed to be that way.

I don’t have a fancy fru-fru ice cream maker, but it more than does the job. It’s a real workhorse.

Homemade Strawberry Ice Cream

  • Place the diced strawberries into a large bowl.
  • Add the honey, sugar and lemon juice.
  • Stir to coat then let sit on the countertop for 15-20 minutes or until the juices from the strawberries has been released. There should be a good bit of juice in the bottom of the bowl.
  • Use a potato masher or fork to mash the strawberry mixture until all of the larger chunks have been mashed. But don't go crazy on it if you prefer some occasional strawberry pieces in your ice cream.
  • Stir in the heavy cream, half and half and vanilla extract.
  • Transfer to your ice cream maker and process per manufacturer's instructions.
  • Freeze overnight.
  • Let sit at room temperature for at least 10 minutes before serving.

Notes

Makes about 1 1/2 quarts.

Smoked Pistachios

This is how you make a huge pistachio fan out of me. I love smoked nuts, but until now I’d never smoked pistachios before. Well, let me tell you folks! Good doesn’t even come close to describing how yummy these nuts were! I set out to smoke nuts to use in ice cream (I know, right? You know that’ll be awesome!). I doubt that half of them survived for my ice cream plans… I couldn’t help myself.

Go Heavy On The Seasoning

For the seasoning on my smoked pistachios I went with Sweet Red from AlbuKirky Seasonings. It has a nice sweet heat flavor to it, the perfect contrasting flavors for the nuts. I seasoned the nuts pretty liberally with it, too. Since the nuts aren’t shelled a lot of that flavor does end up on the shell. So by adding more I increased the amount of seasoning that made its way inside… and oh, was I ever rewarded for my efforts!

Also try my smoked peanuts in the shell and my smoked pecans. And nothing is amazing as smoked hazelnuts!

  • Fire up your smoker for 250 F cooking. Use a light wood such as apple or peach.
  • Place the nuts in a large bowl and lightly (very lightly) drizzle with a little oil. For 1 pound of nuts I used less than 1/2 tablespoon of oil.
  • Toss the nuts to coat. Now, sprinkle them liberally with the seasoning. Now is not the time to be shy. Load up on it and toss to coat.
  • Transfer nuts to your smoker. I use a grill mat to keep the nuts from falling thru the grates. Smoke for 2 1/2 hours, stirring every 30 minutes or so.
  • Remove, shell and devour.

Notes

Store in an air-tight container until ready to serve.

Cherry Limeade

Ahhhh, the perfect drink on a hot day. This cherry limeade hit the spot and then some. A little tart and a little sweet, you can make this regular or diet. The diet version isn’t completely carbohydrate-free. For that, you can omit the lime juice and cherries and instead use diet syrups, like the ones available from Torani. They make a wide range of diet fruit (and other) flavored syrups. We love them on sno-cones too!

Refrigerating Any Leftover Drink

I recommend not storing this cherry limeade with the lime slices if you have any leftovers. The next day it’ll get mighty darned ‘limey’. Just drop the slices in when you are ready to serve, and remove them if you need to refrigerate the remainder overnight.

  • 2 liter Sprite diet is fine
  • 1 cup lime juice fresh squeezed
  • 10 ounces maraschino cherries not drained
  • 1 cup sugar artificial sweetener is fine
  • sliced lime for serving

Instructions

  • Place the soda, juice and cherries into the fridge for 1 hour.
  • Combine all ingredients except for the lime slices in a large pitcher. Refrigerate for at least 30 minutes.
  • Serve ladled into tall glasses, making sure to get some of the cherries. Add a few lime slices.

Notes

Substitute lemon juice and fresh lemon slices for a cherry lemonade.
