Crispy Wings on the Char-Broil Big Easy

I have cooked a LOT of chicken wings on my Char-Broil Big Easy. It’s my favorite way to cook wings, other than deep frying. The Big Easy cooks wings so easily and quickly. I usually finish off the wings over a hot grill to get a bit of a crunch on the skin. Well, no more. Crispy wings on the Char-Broil Big Easy are fantastic!

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic. I won’t do wings any other way again, and that includes deep frying. This is it, the way to do wings.

Dry Skin Means Crispy Skin

The key to getting the wings crispy is to dry out the skin so that takes on a good crunch under the high heat of the Big Easy. If you don’t have a Big Easy, you should get one. Until then, you can also make these crispy wings in the oven.

I used my Wingin’ator 3000 basket when I cooked up these wings so that I can cook more at once than I could with the basket that comes with the Big Easy. You can also pick up a bunk bed basket (see the link below) that doubles the amount of room you’ll have for cooking wings. You don’t want to crowd the wings into the cooker or they won’t cook evenly.

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

Crispy Wings on the Char-Broil Big Easy

Now I can get delicious, tender, moist, crunchy wings on the Big Easy without grilling them afterwards. These crispy wings are fantastic.

Ingredients

  • 4 pounds chicken wings separated
  • 2 tablespoons baking powder
  • ¾ teaspoon kosher salt
  • Your favorite wing sauce and dipping sauce

Instructions

  • Rinse the wings and pat them very dry with paper towels.
  • Place on a sheet pan or plate and cover with more paper towels. Refrigerate for 2 hours to further dry out the skin.
  • Preheat oven to 250 F.
  • Transfer wings to a resealable baggie or container. Add in the baking powder and salt. Seal, and shake or toss to coat well.
  • Spray a baking rack with the non-stick spray and put it over a baking sheet that is lined with foil.
  • Place wings onto rack but do not crowd them.
  • Bake for 30 minutes. While baking, fire up your Big Easy.

Finishing in the Big Easy

  • Transfer wings to the Big Easy and cook another 10-20 minutes or until done.

Finishing in the oven (optional)

  • Increase the oven temperature to 425 F and continue baking for another 20 or so minutes or until done.

Serving

  • Toss wings in your favorite sauce and serve with your favorite dipping sauce.

Notes

You can only fit so many wings on a Big Easy, so I’ve included instructions on how to also finish the wings in the oven.

I love my Char-Broil Big Easy. It gets a workout on a regular basis. Usually, it’s loaded with poultry or on occasion, ribs. This time I set out to try something totally new: fire-roasted eggs. Why? Because I wanted to make a batch of egg salad, that’s why! Fire-Roasted Eggs on the Char-Broil Big Easy are a new and different way to use the oil-less fryer.

They’re Kinda Picky

Fire-Roasted Eggs on the Char-Broil Big Easy turned out to be pretty time-sensitive. I needed just 8 eggs for my egg salad, but I put a few extra into the basket to test as I went so I could get the timing down. It was a cloudy, breezy day, about 60 F out. Different weather conditions could cause your eggs to cook quicker… or slower.

Timing Is Everything

After 12 minutes I had the perfect soft-cooked egg. A little runny yolk. Perfect for dipping bread into.

After 15 minutes the eggs were the equivalent of soft-boiled. Almost on the edge of hard-boiled. If I’d gone much longer I suspect they’d either be way overcooked or explode. That’d be a mess.

I let the eggs rest for 5 minutes then put them into cold water and shelled them. Minutes later I’m enjoying a nice egg salad sandwich.

Fire-Roasted Eggs on the Char-Broil Big Easy

This time I set out to try something totally new: fire-roasted eggs. Why? Because I wanted to make a batch of egg salad, that’s why!

Ingredients

  • 10 eggs

Instructions

  • Fire up your Big Easy and let it get hot.
  • Place eggs in bottom of the Big Easy basket. Do not overcrowd. I do not recommend using the Big Easy Bunk Basket as the top of the cooker cooks at a different temperature than the bottom.
  • Insert basket into the Big Easy and cook eggs. You might want to test an egg after 12 minutes to get a feel for how long you’ll need to cook them.
  • When done, remove eggs and let rest 5 minutes then transfer to cold water to cool.
  • Remove shells and enjoy!

Notes

The eggs can cook quickly.

I was cooking a few Italian sausages and peppers for sandwiches on my Char-Broil Big Easy Oil-Less Fryer the other day, and lo and behold, I had two empty skewers remaining. No point in not using up all available space when grilling (er.. roasting in this case), I say. So I boiled a few red potatoes for a few minutes and carefully skewered them. Into the cooker for about 20 minutes and presto change-o… fantastic, tender, moist roasted red potatoes. Roasted red potatoes on the Char-Broil Big Easy are quick and fantastic!

It’s Just Easy

I put just a tad of butter and salt on the finished roasted red potatoes, and sprinkled them with a bit of smoked pepper. They’re great with my Cajun pork tenderloin, also cooked up perfectly on the Char-Broil Big Easy.

The bunk bed basket lets you double the amount of cooking space you have on your Big Easy. And it’s easy to take in and out of the cooker too!

Instructions

  • Fire up your Char-Broil Big Easy. If you don’t have one, you can make these potatoes in the oven instead. Just pre-heat your oven to 400 F.
  • Boil the potatoes for about 10 minutes until you can just slide a toothpick through them. You don’t want them too soft or they’ll fall apart when skewered.
  • Remove from water and let cool enough to handle, about 5 minutes.
  • Gently skewer potatoes (if using a Big Easy, otherwise, just arrange the potatoes on a sheet pan).
  • Place potatoes in the Big Easy for about 20 minutes, or cook in the oven for 20 minutes.
  • Remove and add salt, pepper, and butter, to taste.

Notes

You can use any potatoes you like, but try to get equally-sized ones so they cook evenly.

Copycat Famous Dave’s Country-Roasted Chicken

I’m a big fan of Famous Dave’s. I didn’t think I would be. I love my local BBQ joints, so I was skeptical of a big national chain, no matter how much I think Dave is a nice guy. Well, I’m not skeptical any more. Everything I’ve ever ordered there has been fantastic and the service has always been friendly. I highly recommend you stop in and get you some ribs (or pulled pork, or brisket, or country-roasted chicken) and don’t pass up on the wonderful sides. They have some of the best sides I’ve ever had at a BBQ joint. And, since I’m also a big fan of my Char-Broil Big Easy, I could not pass up making a copycat version of Famous Dave’s country-roasted chicken.

It Couldn’t Get Any Easier

I took bone-in split chicken breasts, marinated them overnight and then tossed them into a lit Big Easy until done. The result was tender, juicy, and oh so very flavorful. And nothing could be easier to make than this copycat Famous Dave’s Country-Roasted chicken. I left the skin on the chicken. You can remove it before marinating and applying the rub if you wish.

You can’t go wrong with poultry on the Big Easy. Also try my copycat of Kentucky Fried Chicken’s roasted chicken. And for an even easier, Famous Dave’s copycat, just grab some of the chain’s seasonings and make chicken in no time with no fuss!

Copycat Famous Dave’s Country-Roasted Chicken on the Char-Broil Big Easy

Ingredients

For the overnight marinade

For the pre-cook marinade

For the spice rub

For the chicken

  • 4 chicken breasts large bone-in

Instructions

For the overnight marinade

  • Place the chicken in a large resealable bag or container.
  • Add the Italian dressing and toss to coat.
  • Refrigerate overnight, turning occasionally.

For the pre-cook marinade

  • Three hours before you are ready to cook, add the lemon juice to the marinating chicken and toss to coat.

For the spice rub

  • Combine the ingredients.

For the chicken

  • Fire up your Big Easy. You’ll need a Bunk Bed basket (see below) to keep from overcrowding the chicken.
  • Shake any excess marinade from the chicken.
  • Dust with the rub. Use a little or a lot.
  • Place chicken in the Big Easy basket and lower into the cooker.
  • Cook until done and golden brown, about 10 minutes per pound.
  • Remove and let rest 10 minutes before serving.

Notes

You can skip the overnight marinade and just combine the Italian dressing and lemon and marinate for 3 hours just before cooking.

This was my first time making prime rib on my Char-Broil Big Easy. It will definitely not be the last time. Preparation and cooking were, as always with the Big Easy, easy. And the end result was just crazy good. Tender, beefy and just flat out delicious. Incredible. This ended up being one of the best meals I’ve ever had.

I started with an almost five-pound rib roast. All I did was salt and pepper it. Nothing fru-fru. Just rubbed it on and into the Big Easy. Like I said, prime rib on the Char-Broil Big Easy is easy!

About 2 hours later the meat hit 125 F (and a bit higher in spots, so next time I’ll keep a closer eye on it). The weather was chilly, mid 50s, with some pretty good winds. I had expected the cook time to be 15 minutes/pound, but it ended up closer to 20 minutes/pound.

After resting and slicing I served the prime rib with homemade au jus, Sriracha horseradish dipping sauce, cedar planked Cajun mashed potatoes, and grilled Cajun green beans.

I Can’t Recommend This Enough

Everything on the plate was fantastic. I highly recommend making prime rib in the Big Easy.

If you use a bunk bed basket, you’ll have space to cook a side dish for this delicious prime rib!

Prime Rib on the Char-Broil Big Easy

This was my first time making prime rib on my Char-Broil Big Easy. It will definitely not be the last time. Preparation and cooking were, as always with the Big Easy, easy. And the end result was just crazy good.

  • Fire up your Big Easy.
  • Combine the salt and pepper and rub over all sides of the rib roast.
  • Put the roast into a cooking basket and put into the Big Easy. Insert an cooking thermometer into the meatiest part of the roast.
  • Cook about 15 minutes/pound or until the meat reaches 125 F. Note: 125 F will give you a rare roast. If your guests prefer their meat done medium-well or well, slice and then finish on a grill instead of cooking the entire roast to a high temperature.
  • Once the desired doneness has been reached remove the roast to a baking pan and cover with foil and a kitchen towel. Let rest 20 minutes.
  • Slice and serve as desired.

Notes

Serve leftovers cold or warm.

I’m always looking for something new to make on my oil-less fryer. This time I roasted a few smoked sausage with sauerkraut on the Char-Broil Big Easy and made a fantastic dinner. I could’ve made this dish with fresh sausages, but I had a 3-pound pack of pre-cooked sausages on hand, so that’s what I used. You can use fresh too.

So, like I said, it’s easy… Just skewer the sausages…

Great Plump Juicy Sausages Every Time

You could just as easily leave out the carrots and just serve the smoked sausage with sauerkraut on the Char-Broil Big Easy on buns topped with kraut and mustard. Yum!

Smoked Sausage with Sauerkraut on the Char-Broil Big Easy

Ingredients

For the smoked sausage

  • 3 pounds sausage cooked or smoked. I used skinless Kielbasa.

For the sauerkraut

Instructions

For the smoked sausage

  • Fire up your Big Easy.
  • Place sausages on the Big Easy kabob holder.
  • Lower sausages into cooker and cook until desired color is achieved, 20-30 minutes.
  • Let cool slightly then cut as desired and use in the sauerkraut recipe below.

For the sauerkraut

  • Place kraut, onion carrots, and caraway seed in a large pan over medium heat. Cover and let simmer while the sausages cook.
  • Add cooked sausages and continue to simmer for a total of 1 1/2 hours.
  • Remove and serve with mustard for dipping if desired.

Notes

You can substitute fresh sausage, cooking the sausage until they reach 165 F.

I picked up a set of kabob holders for my Char-Broil Big Easy Oil-Less Fryer from Amazon the other day. I’m always excited to try something new in my Big Easy. Besides roasting some red potatoes (hiding in the background in the first picture below), I decided to use the kabobs to make some super-easy (and tasty) sausage sandwiches. I grabbed some fresh Italian sausages, a few bell peppers and a sweet onion, skewered them and lowered them into my Big Easy. About twenty minutes later my sausage sandwiches on the Char-Broil Big Easy were done.

Great Sandwiches, Ready In No Time

I chopped up the peppers and onion and mixed them with a bit of Zatarain’s Creole mustard and some brown mustard. The combination of the two mustards (I call it Spicy Breole mustard….) is fantastic. A serious kick with serious mustard flavor. Served on a toasted hoagie roll. Oh, and I also made these same sandwiches using smoked sausage (as shown below). Perfect!

If you don’t have a set of kabobs for the Big Easy, you can also make these great sandwiches using the standard basket along with the available bunk basket, which gives you a lot more cooking space.

Sausage Sandwiches from the Char-Broil Big Easy

Ingredients

  • 3 Italian sausages or your favorite sausage
  • 1 green bell pepper cut into wide strips
  • 1 red bell pepper cut into wide strips
  • 1 medium sweet onion quartered
  • 1 tablespoon Creole mustard
  • 1 tablespoon spicy brown mustard
  • 3 Hoagie rolls toasted if desired

Instructions

  • Fire up your Big Easy.
  • Thread the sausages, pepper strips, and onion onto the kabobs.
  • Lower into the Big Easy and cook for about 20 minutes or until the sausage reaches 150-155 F internal temperature and the peppers and onion have started to soften and char.
  • Remove from the Big Easy.
  • Chop the peppers and onion and place in a large bowl. Stir in the mustards.
  • Serve sausages on rolls topped with plenty of the veggie-mustard mix.

Notes

If you don’t have kabobs, just use the standard Big Easy basket with the available bunk basket.

Pizza on the Char-Broil Big Easy

I recently picked up a few stackable ovens for my oil-less fryer. For everything from pizza on the Char-Broil Big Easy to bread to pies, I knew I’d get a lot of use out of them. I actually bought a single oven to try and then after great success I ordered two more. The ovens fit together so that you can have up to 3 at a time in the Big Easy. Each has a lid, but of course I removed the lid for the picture below… otherwise you’d just see a black lid!

Perfect For Small Pizzas

I picked up some store-bought mini crusts (the insides of the ovens are about 9″ in diameter) and made some super-simple pizzas: homemade sauce, fried pepperoni (if you can fry pepperoni slices without sampling any, you are super human or from another world), mushrooms, and cheese. 10 or so minutes later we were enjoying a great little pizza hot off the Big Easy!

Note: When you first get your ovens I suggest you ‘season’ them a bit by first washing them with soap and water, and then put them into a hot Big Easy for 20 or so minutes to burn off the ‘new’. Let them cool completely before using. Also, stacking the ovens can be a challenge if they aren’t nice and round. Mine weren’t very round when I first received them. But with a little work you can get them to fit inside each other.

You can also use a bunk bed basket.

You can also bake cornbread in the Big Easy. It’s a very versatile cooker for sure!

It’s always a good idea to keep a few spare grease trays on hand for your Char-Broil Big Easy.

  • Fire up your Big Easy.
  • Slather crusts with the sauce and add your desired toppings.
  • Place pizzas into the Big Easy ovens and stack them if using more than 1.
  • Cook for 10-15 minutes or until the cheese is melted (well, assuming you’re using cheese) and has started to brown.

Use caution removing the pizza from the hot basket.

Roasted Brussels Sprouts on the Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

I use my Char-Broil Big Easy for a lot more than cooking ribs, chicken wings, turkey. I also use it to make side dishes, like these roasted Brussels sprouts. First, they’re very flavorful. Second, they’re easy (and second-and-a-half, they cook up fast). And third, they free up the oven in the house if I’m doing a large cook for the holidays. Cooking on the Big Easy is always a win-win, whether you’re cooking the main dish or a side.

Great Roasted Flavor In Every Bite

I didn’t pre-cook the sprouts at all. Just drizzled and seasoned them, skewered them, and then cooked them. Done. I used the kabob skewers available from Char-Broil but you could also just place the sprouts in the standard Big Easy basket (or get more on with the optional bunk basket). These roasted Brussels sprouts on the Char-Broil Big Easy came out great!

  • Wash sprouts. Remove any large stems and loose leaves.
  • Place sprouts into a bowl and drizzle with a bit of olive oil.
  • Season with salt and pepper.
  • Thread sprouts onto skewers and lower into a pre-lit Big Easy.
  • Cook for approximately 20 minutes or until sprouts begin to char and are mostly tender when poked with a toothpick (check the larger ones).
  • Sprinkled with a bit more salt and pepper if desired and serve immediately.

Notes

Add a little crunched cooked bacon over the sprouts for more yumminess!

Cajun-Injected Turkey Breast on the Char-Broil Big Easy

This bone-in Cajun-injected turkey breast came out absolutely fantastic. A bit spicy, unbelievably moist, and darned good. I made it in our Char-Broil Big Easy, and believe me, it can’t get any easier. Poultry in the Big Easy normally takes 10 minutes per pound and this was no exception. Just shoot up the breast with a simple, spicy marinade, drop it in a lit Big Easy, and 80 minutes later (for my 8 pound breast) you have a perfectly cooked turkey that is incredibly juicy. The skin on this bird does not crisp up thanks to the amount of liquid in the marinade. Fans of munching on crunchy skin will be disappointed with that, but the flavorful Cajun-Injected Turkey Breast on the Char-Broil Big Easy more than makes up for it.

Bone-In Or Boneless, Either will Do!

You could make this recipe using a boneless turkey breast, but you’ll probably have to adjust the cooking time, and you can probably get away with using half the amount of marinade.

For injecting my turkey (and anything else), I use a meat injector. It can handle absolutely anything you put into it.

Cajun-Injected Turkey Breast on the Char-Broil Big Easy

Instructions

  • Trim any excess skin from the breast. Rinse it and pat it dry.
  • Place marinade ingredients into a blender and puree for 5 minutes until smooth.
  • Inject turkey with the marinade in many places. Go crazy, but not so crazy that you create a turkey pin cushion (I try to slide the needle under the skin and inject in several spots so there aren’t as many holes).
  • Fire up your Big Easy.
  • Spray the Big Easy basket with non-stick spray.
  • Insert the turkey breast and lower the basket into the Big Easy.
  • Cover (see my note) and cook 10 minutes per pound.
  • Check temperature in multiple spots. Once the turkey reaches 165 F remove it from the Big Easy and cover it in foil and let it rest for 30 minutes.
  • Carve as desired.

Notes

I usually don’t cover my Big Easy with the lid until the last 30 minutes of cooking, otherwise the top part of the turkey gets too dark compared to the rest of the turkey.
