Roasted Turkey on the Char-Broil Big Easy

I love my Big Easy Oil-less Turkey Fryer. I originally bought it just for turkey, but now use it for whole chickens and wings… regularly. It cooks all things perfectly, like this roasted turkey on the Char-Broil Big Easy.

To make a turkey I inject it with a simple injection sauce (see below). Then I mix a few tablespoons of Todd’s Original Dirt with a little olive oil and rub the bird down good. I fire up the cooker and lower the turkey inside. Exactly two hours (10 minutes/pound) later, the turkey is done perfectly and has a great crispy skin! You don’t have to check on it, adjust the temperature, baste it, turn it, talk to it, hover over it…. nothing! And the meat is soooo tasty and soooo tender and juicy!

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Roasted Turkey on the Char-Broil Big Easy

Perfect Turkey, Every Time

This is definitely the way I’m doing all future turkeys! Did I mention the easy cleanup? And the fact that it frees up your oven for making sides?  You can fit up to a 16 pound turkey in this cooker. If you have a really big get-together, you’ll want to buy 2 of them! Actually I already own three. I keep one at my parents for the times we spend the holidays with them and I keep two here at home for those times when I need to cook more than just a single turkey at a time. One of my favorite things to cook is and always will be this roasted turkey on the Char-Broil Big Easy!

Smoke-Roasted Potatoes

Potatoes are a magical thing. You can top them so many ways. From simple, like this one, with just a little butter and sour cream. To the big time, with everything from mushrooms to cheese sauce to broccoli. Smoke-roasted potatoes have even more potato flavor than just regular old baked potatoes. The potato flesh come out tender, moist and creamy. The potato skin is crunchy, my absolute favorite. I love that pop of a great crunchy potato skin.

Breakfast Hobo Packets

Good morning! Time to enjoy some breakfast hobo packets. I love making things in foil packets and just tossing them onto the grill to cook. They’re easy to put together, easy to cook, they taste great and clean up is a breeze! They’re also great for cooking for a crowd. You can (in most cases) assemble them ahead of time, then just toss them on the grill when your guests arrive.

Blackberry Jalapeno Glazed Pork Tenderloin

I can’t get over just how good this pork tenderloin was. The brine made the meat tender and juicy. And the blackberry jalapeno glaze was out of this world. Not hot and spicy, just a nice berry flavor. The sauce is mildly tart. You are eating blackberries, after all. It’s a deep, satisfying flavor that makes for one big time winning dish.

Blackberry Jalapeno Glazed Pork Tenderloin

Rich Flavors without too much Heat

The wine adds such a great richness to the glaze. I’m quite sure I’ll find other dishes that will really shine by adding some of this same glaze. We both found this blackberry jalapeno glazed pork tenderloin to be something rich and delightful. We both love a little kiss of heat and that’s what this brought. Perfectly.

Tenderloin is my favorite cut of meat to grill. Treated right, it comes out so tender and juicy. The key is to just don’t overcook it. Pork tenderloin is a wonderful cut that loves to be grilled and glazed.

Spicy Hobo Sausage Packet Sandwiches

Hobo packets are a great thing when you’re in a hurry to make dinner. Usually you can make them ahead and just toss them onto the grill (or into the oven). These spicy Hobo sausage packet sandwiches combine smoked sausage, sweet onions and kicked-up BBQ sauce. Served on top of hoagie rolls with melted cheese for a really quick and easy lunch or dinner dish. Grab a few napkins, you’re going to need them!

Spicy Hobo Sausage Packet Sandwiches

Easy And Delicious

If you prefer to make your spicy hobo sausage packet sandwiches not so spicy, just substitute regular ole BBQ sauce. I like a nice hickory smoked BBQ sauce. The smoke flavor kind of ups the cooked-outdoors feel. These are great sandwiches for that campout dinner or lunch. There’s nothing fancy in them. When you’re done, just toss the foil into the trash.

For a little more crunch, add fresh-made coleslaw. The onions are cooked down so they won’t really add any crunch. You could add a bit of extra onion to the sandwiches instead.

Onion Burgers

I have to admit, I can eat more than one of these delicious onion burgers without even blinking. There’s something about the sautéed onions and American cheese that just screams hamburger greatness! Simple, cheesy, dripping, messy. Just what a hamburger should be! These are the burgers dreams are made of. It’s how they should be!

Onion Burgers

Crazy-Good Burgers

These onion burgers remind me a bit of the old diner-style ones I used to get as a child, except that then the onions were sliced. They were cooked quickly on a flat-top griddle. Incredibly good, and dripping with flavor. Instead, these onions are caramelized, bringing an almost sweetness to the burgers. Add some cheese and I’m one happy guy!

I like to use a burger press when I make burgers. It, in combination with some patty papers, enables me to crank out a whole bunch of equally-sized burger patties in no time at all with little cleanup.

Grilled Pork Tenderloins with Garlic Mustard Compound Butter

I make grilled pork tenderloins with garlic mustard compound butter often. Whether in the skillet or on the grill, they’re easy to make. They are tender, tasty, and moist. They are the pork equivalent of filet mignon, and for a lot less money. And like filet mignon, I am careful to not overcook them. Nice thing too is that they are like little blank canvases just waiting to be flavored. This butter has an amazing combination of garlic and mustard. I knew garlic and pork were great together. Ditto mustard and pork. But put all three together and you’ve got an amazing dish.

Grilled Pork Tenderloins with Garlic Mustard Compound Butter

Tenderloins Elevated

Usually, I just salt and pepper the medallions, wrap them in bacon, and cook them. These grilled pork tenderloins with garlic mustard compound butter variation from Griffin’s Grub steps it up even further by topping the medallions with a fantastic garlic and Dijon compound butter that pairs perfectly with the pork. The pork stays crazy moist and tender. And it’s oh so delicious!

Smoked Maple Chicken

This wonderful smoked maple chicken ended up on some great smoked chicken sandwiches, and also on Cobb salads. I used a spicy rub to offset the sweetness of the glaze. Sure I could just sit down with a nice smoked maple chicken breast for dinner. My rule is that if there’s extra room on the smoker I always fill it. With dishes like this chicken for example. You can always freeze whatever you make for later.

Smoked Maple Chicken

A High Heat Smoke

I smoked the chicken using my Weber Smokey Mountain Cooker. I did not put any water into the water pan so I could obtain the 325 degrees needed for chicken. You won’t get crispy skin at that temperature but you’ll still get delicious chicken. You’ll want to smoke at a higher temperature versus what you might use for say ribs or pork shoulder, which is often around 225 F.

Cuban Burgers

Wow, these Cuban burgers were great. I put two things I love into one and I got … lots more love! This simple idea combines the great flavors of a burger with a Cuban sandwich. You’ll need a panini press to flatten these, but it’s ok if you don’t have one. Instead, place the burgers (wrapped in foil) into a large heated skillet then place another, smaller, skillet on top. Weigh it down with a few unopened cans you have on hand to press it down a bit. Voila! Instant panini press!

Griddled To Perfection

Smoked and Glazed Spiral-Sliced Ham

Spiral-cut hams from the grocery store are already cooked, and often smoked. That doesn’t mean that they can’t get even more awesome with a little more time on a smoker. A sweet glaze doesn’t hurt either. The end result is a lightly smoky flavored ham with a deliciously sweet crust. Like this smoked and glazed spiral-sliced ham that disappeared in no time.

This smoked and glazed spiral-sliced ham was perfect for sandwiches, salads, and just eaten as-is. It has the perfect smoky flavor without being overpowering.

I prefer to use fruit or nut woods when I smoke unless I want a heavier smoke flavor. Pecan, apple or cherry are my favorites. I used apple for this ham.

Smoked and Glazed Spiral-Sliced Ham

Spiral-cut hams from the grocery store are already cooked, and often smoked. That doesn’t mean that they can’t get even more awesome with a little more time on a smoker.

Ingredients

For the basting sauce

Instructions

  • Fire up a smoker for cooking at 225 F. You can also make this in an oven or on a grill over indirect heat, but be careful to not dry out the ham – keep the temperature low and baste it often.
  • Add 2 small chunks of cherry or apple wood. Do not add very much wood or it will over-power the ham, since it is already smoked.
  • Sprinkle the ham with the rub and massage it into the meat. Transfer the ham to the smoker.
  • Combine the syrup and butter.
  • Every 1 hour, baste the ham with the basting sauce.
  • Continue cooking for about 5 hours or until the internal temperature of the ham reaches 140 F. Remember, the ham is already cooked. You’re just warming it and adding flavor.
  • Let the ham rest for 20-30 minutes before carving.

Notes

Makes for great sandwiches, too!
