Worth A Mess

I confess that I made a big ole mess in the kitchen when I made this copycat Panda Express SweetFire chicken. Apparently, I was cornstarch-dredging challenged that night, because I had cornstarch all over the place. It was well worth it, though. This dish is definitely worth any kind of mess you might make, too.

It might seem like there’s a lot of ingredients in this recipe. There are a few, for sure. But it’s actually pretty easy to make. The end result is the best reward you could ask for.

Ingredients

Instructions

  • Place chicken pieces in a large resealable baggie or container and add the flour along with salt and pepper to taste. Seal and shake to coat.
  • Place beaten eggs in a shallow bowl.
  • Place 1 cup of the cornstarch into another shallow bowl.
  • Heat oil in a large skillet or wok.
  • Working in batches, remove chicken pieces from the baggie and shake off the excess flour.
  • Dip into egg and coat, shaking off excess.
  • Next, dip into cornstarch and coat, shaking off the excess.
  • Fry until golden and crispy on all sides. Remove to a paper towel-lined plate. Finish cooking remaining chicken.
  • Combine the 4 tablespoons of water and remaining 3 tablespoons of cornstarch in a cup or glass.
  • In a small pan, combine the red pepper flakes, garlic, sugar, and vinegar. Bring to a boil then reduce the heat. Whisk in the cornstarch mixture and keep warm.
  • Add a little more oil to the skillet or wok and add the bell pepper and onion and cook for 3 minutes.
  • Add the pineapple and cook another minute.
  • Add the sauce mixture in and stir.
  • Add the cooked chicken and gently stir to coat and combine.
  • Serve over rice or noodles, if desired, and garnished with green onions.

Notes

You can substitute chicken tenderloins for the breasts.

You don’t need to go out to have a great sandwich. This copycat of the Subway Italian BMT sandwich is outstandingly simply and good. Good meats, fresh toppings and a delicious dressing. I used my copycat of Subway’s sub bread to keep it authentic and yummy! This sandwich was just as much fun to make as it was to eat. And the best part is that I got to customize it just like I want it. For me that means extra. Extra meat. Extra cheese.

People will think you went the extra mile when you made this copycat Subway Italian BMT Sandwich. Granted, your meat doesn’t come rolled when you hit up the chain restaurant for a sandwich. Maybe it should! Or maybe you can smile and ask the sandwich professional to roll it for you. Just make sure you say ‘please’ and ‘thank you’! It’s worth a shot!

Ingredients

For the sandwich

  • 1 loaf French bread
  • 1 ounce pepperoni sliced (use sandwich pepperoni)
  • 1 ounce prosciutto thinly sliced, see note
  • 1 ounce salami see note
  • 1 ounce capocollo see note
  • 1 ounce mortadella see note
  • 4 slices provolone cheese see note
  • 1 tomato sliced thin
  • 3-4 leaves green leaf lettuce
  • Hoagie dressing see below

  • Whisk together all ingredients.

For the sandwich

  • Slice the bread in half length-wise.
  • Drizzle both sides with the dressing.
  • Add the meats, cheeses, tomato, and lettuce.
  • Secure the bread with toothpicks and cut into four or six equally-sized sandwiches.

As you can see in the comment section below, someone pointed out that I did not use the exact meats and cheeses available at Subway. That’s quite true, I was looking for a bit of my own twist on the sandwich. If you want to stick to the real deal, use the meats and cheeses below as you wish: Genoa salami, spicy pepperoni, Black Forest ham, pepper jack, provolone, smoked cheddar and white American.

Copycat Arby’s Beef-n-Cheddar with Curly Fries

Although I don’t eat fast food any more (or at least, it’s been years since I have), that doesn’t mean I don’t get a hankerin’ for it every now and then. Here lately I’ve been jonesin’ for a sandwich from Arby’s. In no time I was enjoying a copycat Arby’s Beef-n-Cheddar sandwich with a side of curly fries. It was just like I went to the fast food restaurant. Only better because I made it. And making it yourself is so much more rewarding than getting food from a drive-thru or having a GrubHub driver deliver it! At least, that’s my thinking!

For the curly fries

Instructions

  • Make the Arby’s sauce by combining the ketchup, water, salt, and garlic and onion powders.
  • Warm the buns in the oven.
  • Heat a large skillet over medium heat. Add the roast beef, cover, and turn heat to low.
  • Meanwhile, place the cheese in a bowl with the milk. Microwave in 20 second intervals, stirring, until the cheese melts and becomes a creamy sauce.
  • Slather the buns with the Arby’s sauce. Top with the roast beef and cheese sauce.

For the curly fries

  • Bake fries per package instructions.
  • Combine the seasonings.
  • Remove the fries from the oven and place in a large bowl. Sprinkle with seasoning and toss to coat.

Notes

You can buy Arby’s curly fries in many grocery stores. They’re actually quite tasty and are a great alternative to these homemade fries.

For years (years ago), a co-worker and I would go grab lunch at a Pizza Hut near our office almost every day. Back then, Pizza Hut always had a lunch special that consisted of a personal pan pizza and a trip to the salad bar. It was always the highlight of our day. The crust on the pizzas was fantastic. So, I was eager to make this copycat Pizza Hut Pan pizza. That’s one of the special things about food. It can bring back such fond memories.

For the dough

For the pizza

  • 1 cup Pizza sauce
  • ½ cup Italian sausage crumbled, cooked, and drained
  • ½ cup Mozzarella cheese shredded
  • ¼ cup Fresh mushrooms sliced, sauteed in Italian seasoning

Instructions

  • Combine the yeast, sugar, salt, and dry milk in a large bowl.
  • Slowly stir in the warm water.
  • Let sit for two minutes.
  • Stir in the 2 tablespoons of oil.
  • Add the flour and stir until a dough starts to form. Continue stirring until the flour is absorbed.
  • Remove the dough to a very lightly floured surface and knead for 10 minutes. The dough will form a wonderful consistency and smooth texture.
  • Add 2 ounces of oil to each of 3 9″ cake pans. Make sure the oil is spread out evenly in the pan.
  • Divide the dough into 3 equally-sized balls. Roll each ball out to a 9″ circle and place in the pans. Spray edges of dough with the non-stick spray.
  • Cover the pans with a dish towel or a plate and place in a warm area (around 78° F) and let the dough rise until doubled, 1 to 1 1/2 hours.
  • Preheat oven to 475° F.
  • Divide sauce between pans. Add sausage, cheese, and mushrooms, or whatever toppings you desire.
  • Bake pizzas for about 15 minutes or until the crust is golden brown and hardened and the cheese is melted.

Notes

You’ll need 3 9″ cake pans for this recipe. You can also make the pizzas in 10″ pans, but of course the crush won’t be as deep. Or, you can make a single pizza in a large deep pizza pan.

Yep, it tastes just like the stuff you get for your nuggets at the fast food chain. We made a batch of this copycat of McDonald’s sweet and sour sauce for dipping some homemade chicken nuggets. Just like everyone else is going to do. That’s what this sauce is for. You want to dip other things in it, go right ahead. For me, though, this is all about nuggets getting happy in a delicious sauce.

As a teen, and when I was in college, I ate my share of McDonald’s chicken nuggets. I always had them with the sweet and sour sauce, and I wasn’t shy about dipping either. Times have changed. Now I make my own nuggets and sauce.

Italian Dressing Mix

This Italian dressing mix is just like the stuff you buy in packets at the store. Now you can make your own at home for much less. I make a big batch and keep it in an airtight container in the pantry. This seasoning also makes for a great substitute when a recipe calls for Italian seasoning.

This dressing is great on my Mason jar salad. Anything in a Mason jar is good. Sometimes I like to make it a little different. I might add a bit of red pepper flake to give the dressing a little bit of a kick. Not too much though. You still want your Italian dressing mix to taste like the original. At least, mostly.

Oh wow these homemade Cheezit crackers were great! And what fun to make! This was the perfect project on a very cold winter’s day. What’s better than something that’s fun to make and has the added bonus of being fun to eat?

These homemade Cheezit crackers taste just like the ones you buy in the store. Next time, I’m going to add some Creole seasoning to give them some kick! Or, maybe I’ll make my Cheez-It-alianos!

You’ll want to use a pastry wheel when cutting the crackers. I picked one up for cheap off Amazon. It’s a fun little toy!

I highly recommend that you shred or grate your own cheese at home. Don’t buy the pre-shredded or pre-grated stuff. It has stuff added to it to keep it from sticking together. That ‘stuff’ affects how the cheese melts. Shred it yourself and use the good stuff.

Ingredients

  • 8 ounces sharp cheddar shredded (I used Tillamook)
  • 2 tablespoons Parmesan cheese freshly grated
  • 2 teaspoons garlic powder
  • ½ stick butter softened and cut into 4 pieces
  • ½ teaspoon kosher salt plus more for sprinkling
  • 1 cup all-purpose flour
  • 2 tablespoons water ice cold

Instructions

  • Combine the cheeses, garlic powder, butter, and salt in a mixer using the dough paddle. The dough will be very crumbly.
  • Mix in the flour and slowly add in the water (make sure you use very cold water!) until the dough is the consistency of a pie dough.
  • Divide the dough into halves and form into discs.
  • Wrap in plastic wrap and place in the fridge for at least 30 minutes.
  • Preheat oven to 375 F.
  • Place dough on parchment paper or silicon mat and roll out to a 1/8" thickness. Try to make the dough as square as possible.
  • Using a pastry wheel, cut the dough into 1" squares.
  • Poke a hole in the center of each square with a toothpick and transfer to un-greased baking sheets.
  • Bake 10-15 minutes or until puffed up and golden brown.
  • Remove to cooling racks and sprinkle with additional salt if desired.

Notes

Try other cheeses for great flavor variations.

Wow, who would’ve thought something so simple could be so good? My wife absolutely loves this copycat Olive Garden Italian sausage soup. It’s very easy to make. Bonus! The ingredient list is not long at all, using mostly package ingredients that you might already have in your pantry and freezer.

Great Just Like It Is

I was thinking I was going to have to add some kick, like maybe red pepper flakes or substitute spicy sausage instead, but this copycat Olive Garden Italian sausage soup can hold its own just like it is. I served it with some homemade cheddar oyster crackers for a little crunchy contrast. A couple of pieces of toasted French bread would be great too. Perfect for soaking up some of the delicious broth.

If you can’t find Pecorino Romano cheese you can use a good Parmesan cheese instead. In a pinch, a shredded Mozzarella can be used.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • 1 pound sweet Italian sausage
  • 1 cup white rice
  • 6 cups beef broth
  • 10 ¾ ounce diced tomatoes undrained
  • 10 ounce frozen chopped spinach thawed, drained
  • Pecorino Romano cheese freshly grated

Instructions

  • Remove sausage from casings and crumble into a large pot over medium-high heat. Cook until done.
  • Add the rice, broth, tomatoes, and a pinch or two of freshly ground black pepper. Bring to a boil then reduce to a simmer and continue cooking until the rice is tender.
  • Add the spinach and stir. Cook another 3-5 minutes.
  • Serve topped with cheese.

Notes

For a kicked up version, use hot Italian sausage!
