Buffa-Que Shrimp

If you look around Life’s A Tomato you’ll quickly find that I love chicken wings, from hot-and-spicy Buffalo wings to sweet Bourbon wings. I’ll never burn out on wings, but when I ran across this recipe for making Buffalo wing-like shrimp from Steven Raichlen, I knew I’d have to make it. The recipe for Buffa-Que Shrimp comes from Mr. Raichlen’s book, The Barbecue Bible, which you can find on every BBQ enthusiasts bookshelf.

Buffa-Que Shrimp

Buffa-Que shrimp definitely have that Buffalo flavor. You can serve them with a blue cheese or ranch dipping sauce, or do I like I did and just eat them right off the plate as-is. I cooked the shrimp on a griddle on my gas grill, but you can also cook them directly on your grill grates. Just don’t over-cook them!

  • Place shrimp into a resealable baggie or container.
  • Whisk together the remaining shrimp ingredients. Add to the bag, seal, and toss to coat.
  • Refrigerate for 30 minutes.
  • Fire up your grill for indirect cooking.
  • Remove the shrimp from the marinade and place onto the grill over indirect heat.
  • Cook 10-15 minutes or until the shrimp is pink and done.
  • Transfer shrimp to a bowl and toss with the sauce, below.

For the sauce

  • Melt the butter in a medium saucepan.
  • Add hot sauce, stir. Keep warm until ready to use.

Grilled Shrimp Cobb Salad

When it comes to salads, Cobb salads are by far my favorite. It’s like having a mini salad buffet, with everything I love all on one plate. This grilled shrimp Cobb salad came out tasting as fantastic as it looked. The grilled shrimp have a really nice spicy kick. The spicy avocado dressing also has a kick, but it also has a cool, creamy consistency. The rest of the ingredients are up to you, but cold artichoke hearts are always a big hit in our house.

Since I had the grill going to cook the shrimp (I actually cooked them on cedar planks, which really adds a totally different great flavor to the shrimp), I also grilled the corn and bacon for this Cobb salad. Next time, if I have my smoker going, I’ll smoke the boiled eggs. Smoked boiled eggs are a great addition to any salad.

These little sauce dipping cups are great for serving salad dressings. They keep me from over-dressing my salads, which is something I’m prone to do since I’m a dressing-aholic. They’re easy to clean up, too. And they’re also great for dipping nuggets, tenders or even chicken wings.

Pecan Smoked Shrimp

II had my Weber Smokey Mountain smoker fired up the other day, cooking a bunch of turkey breasts. After they were done, the fire was still nice and hot, so I grabbed a pound of gulf shrimp, seasoned them, skewered them, and put them over the smoke. Shrimp don’t take long at all to be cooked, so in about 30 minutes they were done. I let them cool slightly and served them in a great Cobb salad. These pecan smoked shrimp were only lightly seasoned. I didn’t want the shrimp to be particularly spicy so they didn’t overpower my salad. And I didn’t want to bury the shrimp so I didn’t even notice them any more! If I was going to use them in shrimp cocktail I would’ve increased the cayenne just a little more, and used cocktail sauce to cool off the heat.

Pecan Smoked Shrimp

I used 21-25 count shrimp, which are a little big for a salad, but still quite ok. Of course, bigger shrimp are easier to skewer. There are fewer of them in a pound so they shell and devein quicker. Small or large, pecan smoked shrimp are delicious!

  • Place bamboo skewers in water and let soak.
  • Place the shrimp in a medium bowl.
  • Drizzle with the oil.
  • Add remaining ingredients except the wood. Stir, cover, and refrigerate until ready to cook.
  • Fire up your smoker for low-and-slow cooking, 225 F. Add a few chunks of pecan wood.
  • After the smoker is ready, place shrimp on skewers.
  • Transfer to smoker and smoke for 30-35 minutes or until cooked through.

Bubba Gump Shrimp on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

We eat at the Bubba Gump Shrimp Company in Gatlinburg, Tennessee, whenever we can. Not only is the food and service great, they also have trivia contests where you have to answer questions about the movie, which we’ve seen a thousand times. Hey, it’s fun! What’s my favorite thing to eat at Bubba Gump’s? Shrimper’s Heaven. It’s not called that for no reason either!

Bubba Gump Shrimp on the Char-Broil Big Easy

When I get to hankerin’ for shrimp, I make up a basket of these shrimp on the Char-Broil Big Easy. They take absolutely no time at all to cook and they come out tender and tasty. You can eat them lots of ways, from chilled with shrimp cocktail sauce, to warm with various dipping sauces, to hot-off-the-grill on a po boy sandwich. Or cook unpeeled shrimp and peel-and-eat them all by themselves.

The picture above shows one pound of 21-24 count shrimp. That’s about all you can get in the standard basket with the bunk bed. You might could get 1 1/2 pounds, but you don’t want to crowd them or they won’t cook evenly. For more shrimp, you’ll need a skewer insert (you’ll have to peel the shrimp first of course) or the Wingin’ator 3000 modification.

Cedar-Planked Spicy Grilled Shrimp

I’ve been on a cedar-planking cooking theme lately. I rather enjoy the flavor and aroma that grilled cedar produces. Cooking on cedar planks takes not much longer than cooking directly on the grill grates, and well, it looks cool. To mix things up, I have also been known to cook on maple planks. I needed some spicy shrimp for a Cobb salad I was going to serve for dinner the other night. Shrimp are so easy and fast to grill. These cedar-planked spicy grilled shrimp came out perfect, with plenty of spice (I added much more cayenne than the recipe states. If you like heat like I do, you should add more too!) and a beautiful color.

You can chill these cedar-planked spicy grilled shrimp for salads or shrimp cocktail, or serve them hot off the grill as a great main dish.

Cooking on cedar planks (I use my Weber grills!) can really change the ordinary into something special, which is why I do it often.   • Refrigerate for 2 hours.
  • Soak the cedar plank in water for 30 minutes.
  • Fire up your grill for medium-high cooking.
  • Add the cedar plank and leave it on the grill until it starts to smoke.
  • Add the shrimp and cook for 3-4 minutes.
  • Flip the shrimp and cook until done, another 3-4 minutes.
  • Serve drizzled with the lime juice and garnished with chopped cilantro.

Crispy Shrimp in Tasso Sauce

I have always enjoyed Tasso, but I admit I have never eaten it that often. It’s sometimes hard to find here in Indiana. But after making my own Tasso on my smoker, I have so fallen in love with the spicy Cajun ham. It’s normally used to flavor dishes. Like this one, which combines a simple cream sauce loaded with Tasso with one of my other favorites, crispy quick-fried Louisiana shrimp, all served over fettuccine.

Although Tasso by itself is a bit spicy, it really is a fantastic addition to the cream sauce, where it is tamed down, but can definitely still be tasted. You can’t beat the flavors in this crispy shrimp in Tasso sauce. I use this same cream sauce over biscuits for a twist on the traditional biscuits-and-gravy.

If you can’t find Tasso, you can substitute good smoked ham.

Ingredients

For the shrimp

  • 1 ½ pounds shrimp large, shelled, deveined
  • kosher salt freshly ground pepper and all-purpose flour
  • olive oil

For the Tasso sauce

For the shrimp

  • Place the shrimp into a large bowl. Sprinkle generously with salt and pepper.
  • Start adding flour. Toss the shrimp. Keep adding flour a little at a time until the shrimp no longer stick together.
  • Pour enough oil into a large skillet to lightly coat the bottom. Heat over medium-high heat.
  • Add the shrimp. Arrange in the skillet without overlapping. If you have to, work in batches.
  • Cook the shrimp about 2 minutes per side until they are pink and the coating has started to crust. Flip and cook the other side until pink and the coating crusts. Remove to a plate.

For the Tasso sauce

  • Melt the butter in a large sauce pan over medium-high heat.
  • Add the Tasso. Saute until the Tasso starts to brown.
  • Stir in the flour and continue stirring for two minutes.
  • Add the half and half. Bring to a boil, then reduce to a simmer and simmer for 5 minutes or until thickened.
  • Add the salt, lemon juice, hot sauce, and Worcestershire sauce. Stir well.
  • Stir in the creme fraiche.

For the pasta

  • Cook according to package instructions.

Bringing it all together

  • After draining the pasta, return it to the pot you cooked it in.
  • Add in the Tasso cream sauce and toss to coat.
  • Serve pasta on plates, topped with the crispy shrimp and garnished with parsley.

Garlic Shrimp Packets

These garlic shrimp packets is the easiest way to cook a big batch of great shrimp quick. Perfectly garlicky, with a little red pepper kick. I made extra shrimp and had them the next day as shrimp cocktail. Fantastic! I could’ve eaten them all day long.

Copycat Joe’s Crab Shack Popcorn Shrimp

I love shrimp. Cooked any way, any time. Like the guy in Forrest Gump who listed off the many ways to enjoy shrimp. They’re all good. This copycat version of Joe’s Crab Shack popcorn shrimp is crazy good. There’s a nice crunchy breading. Tender tasty shrimp inside.

I made up a batch of these copycat Joe’s Crab Shack popcorn shrimp and served them easy style, with two bottled sauces, both from Louisiana Fish Fry Products. The remoulade sauce has a hit of horseradish. It’s almost salad dressing-like, but with a kick. The seafood sauce definitely has a kick to it. Like grown-up cocktail sauce. Of course you can just serve them with good ole store-bought cocktail sauce, spicy or regular. I like to get mine good and cold so I put it into the fridge the night before I make the shrimp.

If I’m cooking for a crowd, I’ll break out my big deep fryer. But, if it’s just the two of us, I’ll fire up my Fry Daddy fryer. It’s the perfect size for both of us. It fries everything perfectly. And as an added bonus, it doesn’t use a lot of oil, which saves me money.

Also try my copycat of Applebee’s Sriracha shrimp. Either shrimp recipe would also be delicious in my fiesta shrimp tacos.

  • Put the shrimp into a resealable baggie or container.
  • Add the garlic powder, brown sugar and hot sauce. Seal and shake gently to coat. Marinate in fridge for 30 minutes.
  • Set up three large bowls (I used pie pans).
  • In the first bowl place the corn starch.
  • In the second bowl, beat the eggs with the water.
  • In the third bow,l mix together the cracker meal, breadcrumbs, Creole seasoning, flour and paprika.
  • Heat oil to 350 F in a deep fryer or Dutch oven. You’ll need at least 2″ of oil.
  • Working in batches, coat shrimp in corn starch.
  • Shake off excess then coat in egg wash.
  • Shake off excess then coat in breadcrumb mixture.
  • Fry until golden brown (the shrimp will float to the top of the oil when done).
  • Remove to a paper towel-lined plate to drain and cool slightly.
  • Serve with your favorite dipping sauce.

Copycat Bang Bang Shrimp

These little yummy bites are a copycat version of the Bang Bang Shrimp appetizer available at the Bonefish Grill. These shrimp have a fantastic crunch to them. The batter is not too thick or overpowering – you can still taste the shrimp. A little kicked-up dipping sauce and you have a great dish.

Copycat Bang Bang Shrimp

I used 18-22 count US wild-caught shrimp, which were the perfect size for an appetizer version of this copycat Bang Bang shrimp. For me, at least. I love shrimp. No reason to use the dinky sized ones in something as good as this.

Also try my copycat of Applebee’s Sriracha shrimp, Bayou fried shrimp, coconut fried shrimp, and southern fried shrimp. Did I mention how much I love fried shrimp?

  • Vegetable oil for frying
  • 16 medium shrimp peeled, deveined
  • 1 green onion green part only, chopped

Instructions

For the dipping sauce

  • Whisk together all ingredients.

For breading

  • In a shallow bowl, place 1/2 cup of flour.
  • In another shallow bowl, whisk together the eggs and milk.
  • In another shallow bowl, stir together the remaining 3/4 cup flour, panko, salt, pepper, sage, onion and garlic powders, and basil.

For the shrimp

  • Working in batches, roll shrimp in the flour.
  • Next, place shrimp in the egg and milk mixture and roll to coat. Shake off any excess.
  • Finally, coat shrimp in the breading.
  • Transfer to a large plate and refrigerate for 20 minutes.
  • Heat 2″ of oil in a deep fryer or Dutch oven to 350.
  • Working in batches, fry shrimp 3-4 minutes or until golden brown. Transfer to a paper towel-lined plate.
  • Serve shrimp garnished with green onion, with dipping sauce on the side. Note: The Bonefish grill lightly coats the shrimp in the dipping sauce. I found it easier (and less messy) to serve the shrimp with the sauce on the side.

Copycat Longhorn Steakhouse Wild West Shrimp

These little copycats of Longhorn Steakhouse’s Wild West shrimp were incredible. The Prairie Dust mix had a great flavor and kick to it. And Peppadew peppers? I could eat them out of the jar. Sure, I “cheated” and used frozen precooked shrimp, but that makes these all the easier to make, perfect for feeding a small crowd in a hurry.
