Well, my goodness me! There’s good and then there’s crazy good. These Fire-Eater Saltines are definitely crazy good. A good healthy amount of spicy kick on a crunchy yummy cracker. That’s all you’ll need, trust me. Yes, you could slather a bit of cream cheese on them too, but I found them addicting enough just as they are.

And if you don’t like the heat, just substitute your favorite (milder) seasoning. But hey, the title of this post is ‘Fire-Eater’. So you know there’s gonna be some kick somewhere. You found it.

Instructions

  • Place crackers in a large resealable bag or container.
  • Pour in the oil.
  • Sprinkle with the seasoning.
  • Seal and gently toss to coat.
  • Let sit (on the counter) for 12 hours to get ‘happy’, tossing gently every once-in-a-while.
  • Serve as-is or with cream cheese for topping.

Notes

Also great served with cubed smoked cheddar or mozzarella!

Slow Cooker Spicy Corned Beef

I’ve done that corned beef and cabbage thing. Loved it. I’ve done the corned beef sliders thing. Definitely loved it. There’s nothing wrong with tradition, but it’s time for something new. Time for slow cooker spicy corned beef. Oh yes. Tender, sliced, and the best part, topped with a simple glaze that doesn’t remind you of the usual corned beef ‘thing’. You can tell that just by looking at the list of ingredients! Oranges and corned beef? Yes. Cloves, you bet! And lots and lots of other great things that end up packing the corned beef with crazy good flavor. This isn’t a boring dish by any stretch of the imagination.

This Isn’t Your Usual Corned Beef

I sliced this slow cooker spicy corned beef thinly and served it on rye bread with just a bit more of the glaze drizzled over the top. Piled high. Big time high. That’s it. That’s all it needed. No kraut, Swiss cheese, or anything else. Yeah, you can add those things. But, wow the glaze is so good I just wanted to enjoy it and the crazy delicious corned beef. At most I’d add a slice or two of cheese and put the sandwich under the broiler for a few seconds to get it hot and melted.

Ingredients

For the corned beef

  • 4-5 pound corned beef rinsed, lightly trimmed
  • ¼ teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon dried dill
  • 6 cloves whole
  • 1 stick cinnamon
  • 1 clove garlic
  • 1 medium onion cut in chunks
  • 2 ribs celery cut in chunks
  • ½ orange unpeeled, sliced thin

For the glaze (double to have extra for drizzling over the meat after slicing)

Instructions

For the corned beef

  • Place all of the corned beef ingredients into a slow cooker.
  • Cook for 8 hours until tender, but not falling apart.
  • Remove the beef from the slow cooker and let cool slightly.
  • Wrap tightly in foil and refrigerate overnight.
  • Preheat your oven to 350 F.
  • Unwrap the beef and place in a 9″ x 13″ baking dish that has been sprayed with non-stick spray.
  • Combine the glaze ingredients and pour over the top of the corned beef.
  • Bake for 30 minutes.
  • Remove and slice. Drizzle with any glaze left in the baking dish or double the glaze and warm the remaining before pouring over the beef.

Notes

Makes for the best, different Reuben sandwiches!

Fire-Eater Green Beans

I don’t even know where to start. I guess I’ll just start with ‘these Fire-eater green beans are absolutely incredible’. They are not mild, wimpy, beans. They have kick. Lots of kick. They have creamy cheese goodness. And smoky, crispy bacon. These beans are serious about flavor. And heat. If you’re making a batch of them (and this recipe does make a big batch so you’ll need two baking dishes) you might want to warn those that don’t like a little kick in their beans. They’re just flat-out good.

This Is Not Grandma’s Bean Casserole

If you want to amp these Fire-Eater green beans up even further, substitute Mexican-style Velveeta for regular. You could actually leave out the cheese and still have really great beans, but the cheese takes these beans to bean paradise. I’ve never run across cheese in a baked green bean dish before. I wish I had.

  • Preheat oven to 350 F.
  • In a very large bowl, combine the green beans, bacon, seasoning, jalapenos, onions and the soup.
  • Spray 2 9″ x 13″ baking dishes with non-stick spray.
  • Divide the beans between the two pans and bake for 1 1/2 hours or until the onions are tender. Remove from the oven.
  • Divide cheese cubes between the two pans. Cover and let stand for 5 minutes, letting the cheese melt.

Fire-Eater Campfire Beans

Who doesn’t love a big pot of beans? Even on a hot summer day, give me some spicy beans and cornbread and I’m set. These fire-eater campfire beans combine a simple, straight-forward bean recipe with the kick from Steven Raichlen’s fire-eater rub. I started out using the rub just on chicken (and mainly chicken wings, for a seriously good hot wing!), but now I find myself using it in a lot of dishes.

Add Meat And Call It Dinner

If you have a few spare chunks of smoked pulled pork or brisket, toss them in the pot with these Fire-Eater Campfire beans. They’ll add even more great smoky flavor, plus also a nice texture. Heck, it’s a meal-in-a-bowl! I’ve also enjoyed a big bowl of these beans with a grilled hot dog, sliced, thrown in. Smoked sausage is great too. It makes for a great quick lunch!

I like to use my good ole trusty Dutch oven to make these beans and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Check beans for any rocks or bad beans. Rinse well.
  • Transfer beans to a large pot and cover with water by 2 inches.
  • Add the ham hock and cover.
  • Bring to a boil, then reduce to a simmer and simmer for 2 hours. Add more water as needed.
  • Add the garlic, peppers, and onion.
  • Cover again and cook another hour or two. The beans should be starting to soften.
  • Add the rub.
  • Cover and cook another 20-30 minutes or until the beans are tender. The liquid should be nice and thick.
  • Serve hot.

Notes

Best served with cornbread.

Slow Cooker Fire-Eater Pulled Pork

There’s no reason to make so-so pulled pork in your slow cooker. Give it some kick. Like my slow cooker fire-eater pulled pork. It’s got some kick. Fire-eater rub and hot sauce will wake up your taste buds, that’s for sure. Tender, moist pork makes for the perfect sandwich on a cold day.

Not Just For Sandwiches

I also ended up using this slow cooker fire-eater pulled pork in homemade hot pockets and on nachos. It’s great stuff, and can be used as just about any dish. Also try it on baked potatoes! Yummy! And baked potatoes? One of my favorites. Just heap on some of pork. Add sour cream. Black olives. Maybe a little chopped onion. A couple of jalapeno slices. Now that’s a baked potato!

I prefer Cholula original hot sauce in dishes like this fire-eater pulled pork. It’s spicy, but it’s not so overwhelmingly hot that you can’t still taste the dish.

  • Sprinkle 1 tablespoon of rub around all sides of the pork.
  • Heat oil in a large skillet over medium-high heat.
  • Add pork and brown on all sides. Remove to a plate.
  • Turn off the heat to the skillet and let cool slightly.
  • Slowly (keep your arms, hands and face back as it may splatter!) add 3/4 cup of water to the skillet and whisk.
  • Pour mixture into a slow cooker on low.
  • Add the vinegar, tomato paste, remaining 3 tablespoons of the Fire-Eater rub, and 2 cups of water to the slow cooker and whisk to combine.
  • Add the meat and cover.
  • Cook for at least 8 hours or until the meat is falling apart. If the liquid does not completely cover the pork you may want to turn it every few hours.
  • Remove the pork to a cutting board and chop.
  • Transfer the slow cooker liquid to a saucepan over medium-high heat and bring to a boil. Stir in the hot sauce. Reduce heat to a simmer and simmer until reduced by half, stirring occasionally.
  • Return the meat to the slow cooker and add the reduced liquid.

Notes

Serve on buns, on nachos, on baked potatoes… however you prefer!

Slow Cooker Mexican Chicken

Incredible flavor. Incredibly tender. Fantastic aroma. This slow cooker Mexican chicken has knocked my long-time easy go-to beef taco mixture off the podium and replaced it at #1. And rightfully so.

This is the perfect mixture for tacos, nachos, burritos, chimichangas, you name it. Anything. Heck you can throw it on a bun and serve it as a sandwich. Or add it to a grilled cheese sandwich for something totally different.

Tender Juicy Deliciousness

I prefer using fire-roasted green chiles and tomatoes in dishes like this slow cooker Mexican chicken. The roasting adds so much more flavor to the vegetables. I leave it up to you if you want to drain the tomatoes. I added the juices in since I wanted to make sure the chicken stayed very moist. You can keep the juices and actually eat this as a soup. Just add some cheese and tortilla strips, and maybe a dollop of sour cream.

It was one of those days. Too much to do, and just not enough time to put together a complicated meal. And worse, it was mighty cold out. Crazy bad cold And snowing. Crazy bad snowing. The best solution to my problems? This slow cooker spicy kielbasa cabbage soup. Yes, three ingredients. That’s it. Great Campbell’s spicy V8 flavor (you could substitute any V8 flavor that you love!), with yummy kielbasa sausage. Oh, and cabbage. It’s deceptively good, actually, and not what you might expect from something so easy. It’s perfect for a busy day.

Oh, That Delicious Broth!

I prefer to brown most meats before adding them to the slow cooker. It adds a bit of texture and color and better flavor, in my opinion. But you don’t have to brown the kielbasa for this slow cooker spicy kielbasa cabbage soup first. No matter how you do the sausage, the broth is going to make it taste great.

Don’t let the ‘spicy’ part of the recipe name scare you. For us, at least, this soup did not come out overly spicy at all. The flavors mellow a bit as the soup cooks throughout the day. But one man’s mellow might be another man’s spicy.

Slow Cooker Spicy Spaghetti and Meatball Soup

I have a slow cooker (er, crockpot) for the same reasons everyone else does. I on occasion like a great, easy meal that I can toss into the pot and not have to fuss with. A Dutch oven over low heats works just as well, specially if you need to brown something first. For this slow cooker spicy spaghetti and meatball soup it doesn’t matter whether you go low-and-slow in the crockpot or Dutch oven, the end result is great. It’s like having Campbell’s SpaghettiOs™ but with much better, richer flavor, and a nice kick. And really big meatballs. Who didn’t want more meatballs in their SpaghettiOs™ when they were a kid? I sure did. I probably threw fits about it, too! Well, problem solved!

A Great Meal For A Crowd

I used packaged frozen meatballs for this slow cooker spicy spaghetti meatball soup. Our homemade Italian meatballs (made on the stovetop or in the Char-Broil Big Easy) would be great too. Outstanding, even. Either way, this makes a good batch of soup. Plenty for a small crowd.

You can leave out the red pepper flake, but I think you’ll want to add at least a little. And don’t be shy with the basil either.

I was looking for something a little different for an appetizer to serve for the Super Bowl. I’ve done the beef and pork meatballs, and those are great, but I wanted something new. I thought, let’s try chicken and turkey meatballs instead. But let’s make sure they aren’t bland. These fire-eater chicken meatballs are definitely not bland. They are tender and tasty by themselves, but made even more perfect with a kicked-up dipping sauce that also has a bit of sweetness to it.

Meatball Sandwiches, Anyone?

I am definitely going to use the meatballs in other dishes. I’m already planning to make meatball sandwiches with them. A hoagie bun, a few fire-eater chicken meatballs, a little of the sauce and some melted habanero cheese and I’m happy! Or, serve them over pasta with a spicy Alfredo sauce (made spicy by adding it a bit of the sauce).

Did you know you can buy a tool to help you make a big ole batch of meatballs in just minutes? People think of everything!

I used my fire-eater spice rub to give the meatballs and the sauce a great kick. You can substitute any spicy mix you like. Just don’t be shy with it. Also try my sweet-and-spicy meatballs.

For the meatballs

  • Preheat oven to 400 F.
  • Line two large baking sheets with parchment paper.
  • Place the meatball ingredients into a large bowl and mix well.
  • Form into balls. Depending on how you want to serve them, make smaller or bigger balls. The cook time is for balls that are golf ball-sized so you might want to adjust the cook time depending on how large you make yours.
  • Place balls onto the baking sheets. Do not crowd them.
  • Bake for 20-25 minutes or until they reach 165 F internal temperature.
  • Brush the meatballs with a bit of the sauce and return to the oven for 2-3 more minutes to ‘set’ the sauce.
  • Serve with more sauce on the side for dipping if serving as appetizers.

For the sauce

  • While the meatballs are cooking, place all of the sauce ingredients into a medium saucepan.
  • Bring to boil then reduce to a simmer, whisking often, until the sauce thickens.
  • Remove from heat until ready to use.

Three-Meat Spicy Chili

I’m pretty much in cold weather cooking mode this week. Time-to-hunker-down, it’s-brrrr-cold-outside cooking mode. Anything I make is gonna have to warm me up and keep me warm. Time to make three-meat spicy chili! Great meaty flavor, beans, and of course, a spicy kick. I know it’s not ‘traditional’ but I love Italian sausage in chili. Love it! It adds so much more flavor than using boring ground beef!

Spicy Smoky Greatness

This chili also is full of one of my other favorite flavors: chipotles in adobo. Chipotles add that great smoky flavor, and just enough heat that you’re going to notice it. The chili comes out rich and flavorful, absolutely perfect for a cool fall day. I make sure to make a big batch of three-meat spicy chili and freeze some of the extra in single-portion containers for easy lunches throughout the week.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Crumble the meats into a large Dutch oven or pot over high heat.
  • Cook, breaking up with a wooden spoon, until the meat is browned.
  • Drain any fat that accumulates, if desired.
  • Reduce heat to medium-high.
  • Add the minced garlic, bell peppers, chipotles, onion, chili powder, cumin, cayenne, 1 teaspoon salt and 1 teaspoon pepper.
  • Stir, and cook for 8-10 minutes or until the peppers and onion have started to soften.
  • Add the tomatoes and beer.
  • Bring to boil, then reduce heat to a simmer and let simmer for 1-2 hours, stirring occasionally.
  • Add more salt and pepper, to taste.
  • Add the beans and heat through, about 10 minutes.

Notes

Serve with cornbread.
