Spicy Ground Beef Chili

This is a super-easy to make spicy ground beef chili, yet it is very tasty. I like to freeze it in batches so I have an easy-to-heat-and-eat lunch on hand. It is meant to be spicy and it is. A big bowl of this chili will chase away winter weather, no matter how bad it is outside. I find it particularly hits the spot after shoveling snow!

This isn’t anything fancy. It’s not complicated. But that doesn’t mean it’s lacking in flavor. It’s the perfect bowl of chili happiness. No excuses needed.

A Few Changes. Optional Of Course.

Although this recipes for spicy ground beef chili calls for using only ground beef, you could substitute some ground pork or my favorite, ground Italian sausage. Or go for a half-beef, half-sausage mixture.

I sometimes use a poblano pepper in place of the bell pepper. I’ll roast it in the oven or on the grill first.

  • Brown the ground beef in a large pot or Dutch oven or medium-high heat. Drain all but 1 tablespoon of the drippings.
  • Add the onion and cook until the onion starts to soften.
  • Add garlic and bell peppers and cook another 2-3 minutes.
  • Add the remaining ingredients. Stir.
  • Bring to a boil, then reduce to a simmer and simmer uncovered for at least 30 minutes or until the sauce is the desired thickness.
  • Cover and simmer another 20 minutes.
  • Serve with your favorite toppings.

Roasted Spicy Chicken Breasts

I was very pleasantly surprised with this recipe for roasted spicy chicken breasts. I’ll definitely make them again. Despite being baked the chicken does not dry out or become tough. Nope. The sauce is just slightly spicy. It has just enough kick that you’ll notice it. But don’t fear the heat. It isn’t meant to be overpowering and it’s not.

  • Preheat oven to 425 F.
  • Spray a glass baking dish with non-stick spray.
  • Whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne in a bowl.
  • Season the chicken on all sides with additional salt and pepper.
  • Slather the chicken with the mayo mixture. I found it easiest to just use my hands, making sure to coat the chicken completely.
  • Transfer the chicken to the baking dish.
  • Bake until the chicken is at 165 F internal temperature, 20-25 minutes. Remove from oven.
  • Let the chicken rest for a few minutes then slice thinly and serve.

I served up some mashed potatoes, made a nice ‘bowl’ in the middle of them, and loaded up on the gravy. Absolutely delicious. This makes a good sized batch of Cajun gravy. You can’t have too much gravy, though. There’s absolutely nothing worse than still having mashed potatoes on your plate but no more gravy.

I like to use my good ole trusty Dutch oven to make this gravy and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

Spicy Roasted Olives

We absolutely loved this recipe for spicy roasted olives. It combines a little heat, some herbs, and great roasted flavor. These are fantastic. They are salty, briney, hot, and herby. They disappear in seconds! With it just being us I kept the jalapeno slices in the bowl with the olives. For a party I might take them out. Or maybe not. They do let people know that they are in for some heat. I wouldn’t want grandma to accidentally grab an olive expecting the ‘usual’.

Use Dried Herbs In A Pinch

You can substitute dried rosemary if you don’t have any fresh on hand. Make sure you grind it up well in a mortal and pestle or blender before adding it to these spicy roasted olives. You want to make sure that there aren’t any large pieces of rosemary. They’ll be difficult to bite into.

Smoked olives are also out-of-this-world great. Try them and grilled bacon-wrapped olives too!

  • Squeeze juice from the tangerines into the bowl. Add the tangerines halves in also.

Spicy Creole Remoulade

This spicy Creole remoulade is fantastic on crab cakes, or slather it on a bun for a great po’ boy! There’s some kick from the horseradish and mustard … and hot sauce! This is not some light, laid-back, weak remoulade at all! It packs a lot of flavor. It’s my go-to sauce when I want something ‘lively’.

This spicy Creole remoulade is also great on my crab cakes with shrimp! The creaminess and spiciness works fantastic with crab. And shrimp. Or put it on a hoagie next time you make a big ole cold-cut sandwich or burgers. It’s so much better than adding a plain-old sauce. Just slather it on the insides of the bread or buns!

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Spicy Home Fries

These kicked-up spicy home fries hit the spot with breakfast-for-dinner the other night. Ancho chile powder gives them a nice, rich flavor, with just enough heat. If you grind up dried polano peppers you end up with Ancho chile powder. Tamales are often heavily seasoned with ancho chilies. Not sure why I mentioned that. But the chiles add a great flavor to anything. They’re what make these fries so great.

Spicy home fries need a little crunch to them for them to be just right to me. Soggy fries make for a sad meal for sure! Sometimes I like to add a little something else in. Crumbled cooked Mexican chorizo is a favorite, specially since it adds even more kick to an already spicy dish.

I made these potatoes in my cast iron skillet. No other pans does such a great job getting that wonderful potato crunch.

Ingredients

  • 3 large Idaho potatoes brushed, chopped into 1/2″ cubes
  • 1 stick unsalted butter
  • ½ medium white onion diced
  • 2 cloves garlic minced
  • 2 tablespoons ancho chile powder
  • 1 teaspoon cayenne pepper
  • ¼ cup fresh cilantro leaves chopped

Instructions

  • Place potatoes in a large saucepan (cast iron works best).
  • Cover the potatoes with water. Add 1 teaspoon salt.
  • Bring to a boil then reduce heat to a low boil.
  • Cook until potatoes are just tender, 20-25 minutes.
  • Drain potatoes and reserve in a bowl.
  • Add the butter to the pan and melt over medium heat.
  • Add onion and cook until softened.
  • Add the garlic and saute for another 30 seconds.
  • Add the chile powder and cayenne, stir.
  • Add the potatoes. Season with salt and pepper. Toss to coat.
  • Lightly mash the potatoes down into the skillet. Cook until golden brown and the edges are a tad crispy.
  • Flip over, mash again, and cook until golden brown and edges are crispy on the bottom.
  • Remove from the heat and stir in the cilantro. Serve.

Spicy Oyster Crackers

Oyster crackers are a favorite snack in our household. No, not right out of the bag. Those are rather boring. No, we flavor them up! They’re easy to make, inexpensive, and there are a lot of ways to flavor them. And they’re crunchy. Good-n-crunchy. And since we both like a little kick, spicy oyster crackers are a recurring favorite.

Spicy Garlic Ranch Pretzel Bites

These yummy spicy garlic Ranch pretzel bites are a different take on our bacon cheddar bites. I wanted to try something with a little more kick, and these have it. You really cannot stop eating them. They’re dangerous.

You can make these with regular Hidden Valley Ranch dressing mix if you don’t want a little spice. But even the spicy version is not that spicy. Everyone at my wife’s office loved these!

Sweet Spicy and Salty Candied Pecans

We recently returned from my parent’s home, where we spent Thanksgiving. My dad has 8 or so very large pecan trees (4 are commercial and the others are ‘volunteers’). This year, one of the trees that hasn’t produced nuts for over 8 years really put out a crop. My dad had over 10 paper grocery bags already picked by the time we arrived. He picked 3 more paper bags in just a few days. Time to make sweet spicy and salty candied pecans.
