My wife and I both agreed that these slow cooker spicy Italian beef sandwiches were absolutely fantastic. And besides tender, juicy beef, you also get great Italian spice flavors. All served on a sub bun with plenty of smoky provolone cheese. Every bite of this sandwich is perfect.

Kick it Up Even More

To really kick up your slow cooker spicy Italian beef sandwiches use hot pepperoncini and Giardiniera, and substitute habanero jack cheese for the provolone. You’ll have the perfect game-time sandwich.

You may or may not need all of the peppers and Giardiniera I listed for the sandwich build. It all depends on how much you like on your sandwiches. Me, I like pepperoncini, and lots of it, on top. I only used the Giardiniera in the slow cooker and didn’t add any to the sandwich. To each his own!

For the Italian beef

For the sandwiches

  • 10 Hoagie buns or steak sandwich rolls
  • 10 slices Provolone cheese sliced
  • 1 12 ounce peperoncini slices, drained
  • 1 12 ounce Giardiniera drained, lightly chopped

Instructions

For the Italian beef

  • Add beef broth to slow cooker set to high.
  • Stir in the dressing seasoning and red pepper.
  • Add the peppers and Giardiniera.
  • Add meat and cover.
  • Cook on high for 6-8 hours or low for 10-11 hours until the meat can be shredded.
  • Remove meat, shred, and return to the slow cooker and cook another hour.

For the sandwiches

  • Open buns and add cheese slices. Make sure to cover the bread with the cheese – it’ll help keep the buns from getting overly soggy.
  • Add shredded meat.
  • Top with pepperoncini and chopped Giardiniera as desired.

Have plenty of napkins nearby.

Southwestern Stuffed Peppers on the Char-Broil Big Easy

Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill you should cook with the lid open and the temperature set to High. You might also need to adjust the cooking time.

Wow. When I set out to make these southwestern stuffed peppers on the Char-Broil Big Easy (you can make them just as easily in the oven) I admit, I had high expectations. The recipe came from Chile Pepper magazine, and past experience has shown that everything I’ve made from the magazine has been outstanding.

These peppers were no exception. They were just unbelievably good. Spicy salsa, hot cheese, roasted peppers and southwestern spices all came together in one of the best dishes I’ve made (or had).

A Great Easy Side Dish

I served our southwestern stuffed peppers as a side dish, but you could easily change this recipe to add some browned ground beef (or better, Mexican chorizo!) and serve them as a main dish. You can’t go wrong with these peppers. They are great.

Don’t let the fact that the recipe for these peppers came from a magazine geared towards chileheads scare you off. Chile Pepper magazine isn’t just about scary hot dishes, not by any stretch. It’s about flavorful foods.

You can always (easily) modify the recipes to tone down the spice. For these stuffed peppers, use mozzarella cheese instead of habanero jack, leave out the hot peppers, and use a mild salsa.

Ingredients

  • 2 cups salsa divided, if cooking in the oven, 1 cup if cooking in a Char-Broil Big Easy
  • 2 hot peppers minced
  • ½ cup mushrooms diced
  • ½ cup spinach chopped
  • 1 cup habanero jack cheese shredded, plus more for garnish
  • 3 tablespoons sour cream
  • 1 15 1/2 ounce dark red kidney beans rinsed and drained
  • 3 eggs beaten
  • kosher salt
  • ground black pepper
  • 3 bell peppers halved lengthwise, seeded, with membranes removed
  • cilantro chopped, for garnish

Instructions

Cooking in the oven

  • Preheat oven to 400 F if cooking in the oven
  • Evenly spread out half of the salsa in the bottom of a casserole dish.

Cooking in the Big Easy

  • Fire up your Char-Broil Big Easy.

Then…

  • In large bowl, combine remaining (all if cooking on the Big Easy) salsa with the hot pepper, mushrooms, spinach, cheese, sour cream and beans.
  • Add the beaten eggs and season with salt and pepper. Mix well.
  • Fill pepper halves with egg mixture. Place in casserole or Big Easy and bake/cool for 35 minutes.
  • Serve garnished with more cheese and chopped fresh cilantro, if desired

Notes

If you are cooking these peppers in a Char-Broil Big Easy you’ll need a bunk bed basket to be able to cook all 6 pepper halves at once.

Spicy Tomato Soup

Wow. Talk about the perfect bowl of soup for a cold day. This spicy tomato soup is just fantastic. Super tomato flavor, with a hint of basil, and a really, really nice spicy kick. Perfect by itself and beyond perfect when paired with a simple grilled cheese sandwich. This combination warmed me up and kept me warm for hours. It gave me enough energy to go outside and shovel the driveway!

The Perfect Bowl Of Happiness

I used a few cans of San Marzano tomatoes to make this spicy tomato soup, which I’ve heard about before as being great tomatoes. Apparently they are a favorite of many a pizza joint for making top-notch sauce. Well, they truly are great tomatoes. They aren’t cheap, but now I understand why. You can use ‘regular’ canned tomatoes and you’ll still be very, very pleased with this soup. But if you can find San Marzano tomatoes, I definitely recommend them.

I like to use my good ole trusty Dutch oven to make this soup and pretty much darned near anything like it on my stovetop. It’s nice and big and sturdy. That extra weight helps it maintain and distribute heat perfectly. As an added bonus, it’s actually pretty easy to clean up too!

  • Heat oil in large saucepan.
  • Add the onion and pepper flakes and cook until translucent, about 10 minutes.
  • Add the tomatoes and their juices along with the water.
  • Stir and bring to a boil then reduce heat to a simmer and simmer for 30 minutes.
  • Add the basil and salt and pepper to taste.
  • Remove from heat and let cool slightly.
  • Transfer to a blender and puree until smooth. Alternatively, use a stick blender to blend the soup.
  • Pour blended soup through a sieve to remove any solids. Push liquid through as best you can, but remove any large chunks in the liquid.
  • Return liquid to the saucepan and warm through.
  • Serve garnished with Crème fraîche if desired.

Notes

Store leftover soup in the fridge. Reheat on the stovetop.

Barb’s Royal Brownies

I had my Weber Smokey Mountain smoker going the other day to make some Tasso ham and to smoke some beans. After the cooking was done, I decided to whip up this great recipe for Barb’s royal brownies. I found the recipe in the most recent copy of Chile Pepper magazine (sadly, no longer around!).

Since this came from a magazine devoted to all things zesty, I knew that the brownies would have some great kick. And they did. They were fantastic! Chewy, chocolatey, a hint of smokiness, and just a bit of kickin’ spice. Absolutely great with some of my homemade Neapolitan ice cream.

  • Fire up your smoker for 275 F. You can also use a grill, cooking over indirect heat.
  • Melt the butter and chocolate in a small saucepan over medium heat. Pour into the bowl of a mixer.
  • Add the sugar, flour and cayenne.
  • Turn mixer on medium and add the eggs, one at a time.
  • Add the vanilla and continue blending until well blended.
  • Spray a 9″ x 13″ aluminum pan with non-stick spray.
  • Pour in the brownie mixture.
  • Smoke for 1 hour or until a toothpick inserted into the brownies comes out clean.

Notes

Make sure your smoker is sitting on level ground so that your brownies cook consistently throughout.

Old Bay Peel ‘N Eat Shrimp

If you are within 500 miles of Augusta, Georgia, do not make these Old Bay peel ‘N eat shrimp. Instead, get in your car and drive to Rhinehart’s Oyster Bar and order a batch of their spicy boiled shrimp. If you’re like me and a drive to Rhinehart’s is a bit out of the question, make these shrimp. They’re mighty close to tasting like the ones at Rhinehart’s, but for the real deal, you need to make the journey.

Old Bay Peel N Eat Shrimp

Perfect For My Shrimp Addiction

I could eat these Old Bay Peel ‘N Eat Shrimp all day long. Hot or cold, it doesn’t matter to me. With cocktail sauce. With clarified butter. Or by themselves. I don’t care, just get me a basket of shrimp.

I recommend that you not be shy with the Old Bay when you sprinkle the cooked shrimp just before serving. If you’re a big fan of Old Bay like I am you’ll want as much of that great flavor on your shrimp as you can get. I go nuts with it. There’s no such thing as too much of it for me.

  • Combine the vinegar, water, 1/3 cup of the Old Bay seasoning, garlic and peppercorns in a large pot.
  • Bring to a rapid boil over medium high heat.

  • Drain shrimp but do not rinse.
  • Transfer shrimp to a large bowl.
  • Sprinkle with the remaining 1 1/2 tablespoons (or more) of Old Bay and toss gently to coat.

Spicy Tasso and Corn Casserole

Fresh corn season continues to wind down here in Indiana. Time for my end-of-summer push to devour as much sweet corn as I can! And what better way to make corn than to add in some spicy Tasso ham and make a spicy Tasso and corn casserole! I so love Tasso ham. So tender, so tasty, and definitely so spicy. I made my own Tasso on my smoker, and it came out fantastic. It was so easy to make!

This creamy corn casserole is sweet and also spicy. I found the original recipe in Louisiana Cookin’, one of my favorite Louisiana-themed magazines. Not only is each issue full of great Creole and Cajun dishes, there are also articles about the food and happenings in the area.

Spicy Tasso and Corn Casserole

A Truly Special Corn Dish

The original recipe for spicy tasso and corn casserole called for topping the casserole with crushed potato chips. I decided to skip that and just enjoy the great vegetables and spice in this dish. True, adding chips would definitely add a nice crunch. I bet crushed tortilla chips would be outstanding, so feel free to add them if you like! Either way it bakes up delicious!

  • Preheat oven to 350° F.
  • Spray a 9″ x 9″ baking dish with non-stick spray.
  • Heat oil in a large skillet over medium-high heat.
  • Add the corn, pepper, green onion, and tasso and cook 5-8 minutes until the vegetables are soft.
  • Add the cream cheese and stir until it melts.
  • Remove from heat and stir in the Cajun seasoning, sour cream, parsley, salt, and cayenne pepper.
  • Spoon into the baking dish and bake 20 minutes.

Notes

The original recipe called for sprinkling the casserole with crumbled potato chips (2 cups) before baking. I omitted that ingredient to keep the casserole a little lower in carbohydrates. Feel free to add the chips, or Panko breadcrumbs if you like.

Spicy Creamy Coconut Salad Dressing

I smoked a few shrimp the other day since I already had the smoker going. I figured they’d be great in a Cobb salad, and I was right. For some reason, I was hankerin’ for a nice creamy dressing to top off the salad. But not any ole wimpy dressing. Something with a kick, something spicy. And something that makes you think about the tropics. Like coconut. I love the taste and creaminess of coconut so I made a spicy creamy coconut salad dressing that satisfied all of my cravings!

This spicy cream coconut dressing is really refreshing and spicy. It’s not only perfect on a salad, but it’s great as a dip for veggies. If it’s too thick for your liking just add a bit more mayonnaise or a splash of milk.

Coyote Sweet Corn

Ahhhhh, fresh corn-on-the-cob. I love it. The season is winding down here, so I grabbed a few more ears and made this wonderful Coyote sweet corn dish. The corn is the star of the show, but there are a lot of other great flavors to be found too! There’s so much flavor to be found in every single bite. This is an amazing bowl of goodness.

Incredibly Delicious

I was amazed on how much of a difference sun-dried tomatoes can make to this coyote sweet corn. I was just as amazed about the bread and butter pickles. After all, I’d never thought of adding either to something like this, and boy, was I surprised. It’s a combination of richness and a little spiciness, just like I love. And in my opinion, this is one mighty fine looking side dish to boot! You know, you eat with your eyes first!

This is really a fantastic side dish. It looks great, smells great, and tastes beyond great. This fall and winter, when fresh corn is nowhere to be found, I’ll make it using canned  corn kernels. It won’t be quite the same but it’ll remind me of summer and that great fresh corn flavor. Sadly, I’ll miss out on the joy from peeling ear after ear of freshly-picked sweet corn!

Spicy Avocado Salad Dressing

I grilled up a great batch of cedar-planked spicy shrimp the other day. They were perfect in a big Cobb salad. I didn’t want a wimpy dressing to tone down the kick from the shrimp. Since avocados were in season and on sale, I grabbed a few ripe ones and made this incredibly easy spicy avocado salad dressing.

Refreshingly Delicious

This spicy avocado salad dressing is reminiscent of guacamole. In fact, it’s thick enough that you can also use it as a spread on sandwiches or wraps, or even as a dip for chips or vegetables. If you find it to be too thick you can thin it with some milk or buttermilk. Or just add a bit more sour cream.

You can leave out the jalapeno if you like and still have a great dressing that won’t scare your non-heat-loving friends off.

  • ½ cup sour cream

  • 1 jalapeno pepper seeded, chopped
  • 1 tablespoon lime juice

  • Place all but the salt and pepper into a blender and pulse until smooth.
  • Season with salt and pepper and pulse a few more times.
  • If you have any leftover dressing place it in a container and place a piece of plastic wrap directly over it, contacting the dressing without any gaps.
  • Refrigerate for up to two days.

Cedar-Planked Spicy Grilled Shrimp

I’ve been on a cedar-planking cooking theme lately. I rather enjoy the flavor and aroma that grilled cedar produces. Cooking on cedar planks takes not much longer than cooking directly on the grill grates, and well, it looks cool. These cedar-planked spicy grilled shrimp came out perfect, with plenty of spice (I added much more cayenne than the recipe states. If you like heat like I do, you should add more too!) and a beautiful color.

You can chill these cedar-planked spicy grilled shrimp for salads or shrimp cocktail, or serve them hot off the grill as a great main dish.

Cedar-Planked Spicy Grilled Shrimp

Instructions

  • Place the shrimp in a resealable container.
  • Drizzle with the oil and toss to coat.
  • Add the salt, pepper, paprika and cayenne pepper and toss to coat.
  • Refrigerate for 2 hours.
  • Soak the cedar plank in water for 30 minutes.
  • Fire up your grill for medium-high cooking.
  • Add the cedar plank and leave it on the grill until it starts to smoke.
  • Add the shrimp and cook for 3-4 minutes.
  • Flip the shrimp and cook until done, another 3-4 minutes.
  • Serve drizzled with the lime juice and garnished with chopped cilantro.

Notes

These shrimp are also great served with cocktail sauce for dipping.
