Italian Meatballs and Gravy Grilled Country Style

Well, that does it for my search for the perfect meatballs and gravy. I’m done looking. These Italian meatballs and gravy, grilled country style, were absolutely fantastic. I used our Italian meatball recipe, which makes the best, tasty and tender meatballs you can find. We love them. I grilled them, but you can bake or smoke them instead. If you do grill your meatballs, use a skillet over the hot coals to make the gravy once the meatballs are done.

And as great as the meatballs were, the gravy is a new level of insanely tasty. Beef broth and coffee. Brilliant. And just a touch of garlic powder. Not only smooth, creamy, and tasty, but the gravy also has a really nice light coffee aroma.

Italian Meatballs and Gravy Grilled Country Style

The Perfect Combination

I served the grilled Italian meatballs and gravy grilled country style with our new favorite, creamy mashed cauliflower. You seriously cannot tell that you aren’t eating mashed potatoes, specially when they are covered in the fantastic country style gravy for the meatballs.

I recommend that you use a grill basket when making this dish if you decide to grill the meatballs. It makes cooking easier and you don’t have to worry about anything falling through the grates. And cleanup is easier too!

For the meatballs

  • 2 pounds Italian meatballs I used our fantastic version, found here. Frozen pre-cooked meatballs can be used too.

For the gravy

Instructions

For the meatballs

  • Cook the meatballs. I grilled ours over indirect heat for about 45 minutes. You can also bake them until done.
  • Serve with gravy.

For the gravy (for extra flavor, make the gravy in a skillet on the grill after the meatballs are done)

  • Melt the butter in a medium saucepan over medium-high heat.
  • Whisk in the flour and cook, stirring constantly, until the flour is cooked and the mixture is thick.
  • Add in the crumbled meatball, garlic powder, coffee, and broth. Stir.
  • Bring mixture to a boil, then reduce to a simmer, and let simmer, stirring often, until thickened.

Notes

The gravy is great over chicken fried steak or chicken, too.

Barb’s Royal Brownies

I had my Weber Smokey Mountain smoker going the other day to make some Tasso ham and to smoke some beans. After the cooking was done, I decided to whip up this great recipe for Barb’s royal brownies. I found the recipe in the most recent copy of Chile Pepper magazine (sadly, no longer around!).

Since this came from a magazine devoted to all things zesty, I knew that the brownies would have some great kick. And they did. They were fantastic! Chewy, chocolatey, a hint of smokiness, and just a bit of kickin’ spice. Absolutely great with some of my homemade Neapolitan ice cream.

Blue Moon Hot Dogs

I really like grilled hot dogs topped with a creamy salad. Just about any kind of salad will do, too. This time I went with a simple iceberg mixture, with a good helping of blue cheese crumbles and dressing. And mushrooms. The coolness of the salad on these blue moon hot dogs contrasts well with the just-off-the-grill wieners.

Go Funky. Or Don’t.

Some folk aren’t so keen on blue cheese, and that’s ok. Just substitute Gorgonzola (or diced Monterey jack for an even mellower flavor) for the cheese, and ranch salad dressing for the blue cheese dressing when you make these blue moon hot dogs.

Smoked Pepper Stout Beef

I love smoking chuck roast. It’s a cheap cut of meat that takes on great smoke flavor, while still having that great beefy taste. It’s usually fuss-free and doesn’t take too long to cook until fall-apart tender. I’ve done a few variations before, including a Cajun-style chuck roast to an incredible smoked pot roast. This smoked pepper stout beef is as great as any I’ve ever made. Great peppery flavor with a hint of the beer and incredibly tender. Perfect on a sandwich or by itself with mashed potatoes.

Smoked Pepper Stout Beef

Easy. Delicious. And Amazing.

For our simple smoked pepper stout beef on-a-bun sandwiches I mixed up a batch of creamy horseradish sauce. The sauce is incredible, with just a hint of horseradish. It goes perfectly with any beef-based sandwich. I added a few slices of provolone, which continue that slight smoky flavor you’ll get from the sandwich. You could also serve the au jus on the side, serving the sandwiches up as a take on a French dip. Perfect!

I prefer to use fruit or nut woods when I smoke unless I want a heavier smoke flavor. Pecan, apple or cherry are my favorites. I used apple for smoking this beef.

Bourbon Street Pulled Pork Sandwiches

There’s nothing I love more than pulled pork, made on my Weber Smokey Mountain Smoker, mixed with a fantastic homemade sauce. My favorite sauce, for everything from chicken wings to pulled pork to burgers is my Bourbon Street sauce. For topping the perfect pulled pork sandwich I add either coleslaw or sliced onion and dill pickle. Either one gives the Bourbon Street pulled pork sandwiches a great crunchy, and the vinegar helps tone down a bit of the sweetness in the sauce. Every bite is perfect.

Bourbon Street Pulled Pork Sandwiches

Sauce It Now Or Later

You can sauce the pork before mounding it high on the buns for these Bourbon Street pulled pork sandwiches. Or you can add the pork first, then pour the sauce over the top. Or heck, don’t put any sauce on, serve it on the side and dip your sandwich in it! When I am eating out I prefer to add the sauce myself. I order it ‘dry’, and ask for the sauce on the side. That way I can add as little or as much as I want. I’d rather be the one that makes the decision instead of someone in the kitchen. No offense to the fine folks in the kitchen! It’s a personal preference thing.

Black Pepper Bacon

After my first time making homemade bacon (a very successful first time, I must say), I decided I’d up my game and try different flavors beyond maple. The maple bacon was a little sweet, as you’d expect, so this time I went a more savory route by making this black pepper bacon. The end result was absolutely fantastic. My goodness, what great bacon. A great pepper flavor, but not overwhelming. Not only great for breakfast, but this bacon easily made for the best BLT sandwich I’ve ever had.

A Good Butcher Makes For Good Bacon

Some of the credit for the success of this black pepper bacon goes to my butcher, Moody’s Butcher shop. The folks at Moody’s got me the most fantastic pork sides ever. They were absolutely perfect for making bacon. I mean, look at that slab. That’s just gorgeous bacon!

Black Pepper Bacon

It’s Easier Than You Think

Making bacon at home is actually really easy, much easier than I had ever expected. I love making it and eating it. And don’t worry about slicing it, just get your knife really sharp (I sharpened my Wusthof knives with the sharpener below) and you can cut bacon thick or thin, like it’s butter!

Woods

I prefer to smoke with fruit woods, like apple or peach or the like. I like the flavor but without it being too strong. Like say a mesquite. Sometimes I’ll use hickory if I’m after a stronger flavor. Of course you can also control the amount of smokiness by adding more (or less) wood. If this is your first time making bacon I recommend taking good notes. How much wood you used, what kind, etc. The next time you make bacon you can decide if you want more or less.

Roasted Beet and Dill Cucumber Salad

You could’ve just knocked me over with a feather. Silly me, having low expectations for a salad with roasted beets, dill and cucumber. I couldn’t have been more wrong about what was coming. This salad is absolutely fantastic. It’s almost exactly like my favorite, my mom’s creamy cucumber salad, with the addition of roasted beets. And those beets are what take this from being a good salad to being a truly amazing one.

Roasted Beet and Dill Cucumber Salad

A Fantastic Taste Combination

This roasted beet and dill cucumber salad is a great fall dish and is perfect with a Thanksgiving turkey. I love the creaminess of the dressing with the cool crisp cucumbers, followed by that great earthy beet flavor, with a hint of sweetness and smoke from roasting them. I roasted them over a grill, but you could roast them in an oven as well.

Get a good set of grill tools for these beets and anything else you grill. You won’t regret the extra few bucks they cost over the cheap ones that you’re going to have to replace in a few years. I have had several sets of Weber tools for decades and have yet to replace a single one.

Sriracha Bacon

I’ve been really enjoying making bacon at home. It has turned out to be much easier than I ever imagined, and definitely tastier than I ever dreamed. Although the process takes over a week, it’s so easy you won’t even notice it. I started by making applewood maple bacon, and have since expanded my bacon horizons, including making this great Sriracha bacon.

Sriracha Bacon

Just The Right Amount Of Spiciness

This bacon isn’t overly spicy, so don’t fear the Sriracha. Sriracha has such a great flavor, and it really isn’t overwhelmingly hot (well, to me at least). The bacon definitely has Sriracha flavor, and color. Add more Sriracha to the recipe if you want it spicier, but I felt the amount I used was just perfect for us.

Sriracha bacon is absolutely fantastic. Not only on burgers, but also on BLT sandwiches. Or for breakfast. Heck, just grab a piece and eat it as a snack.

I prefer to use fruit or nut woods when I smoke unless I want a heavier smoke flavor. Pecan, apple or cherry are my favorites. I used apple for this bacon.

Teriyaki Jerky

After making homemade bacon on my Weber Smokey Mountain smoker, I figured the next logical thing to try would be making homemade Teriyaki jerky. The curing process for jerky is similar in ways to curing bacon, but it doesn’t take as long. The smoking process is different, since the jerky needs to dry out on the smoker.

Teriyaki Jerky

The Perfect Flavor-Packed Jerky

The end result was fantastic. This Teriyaki jerky has great Asian-inspired flavor. The meat was tender, with a little bit of tug, as you’d expect from jerky. We loved it. Everyone loved it.

A Few Notes

The most important thing to keep in mind when making jerky is to start with a lean cut of meat (I used a lean top round), sliced super thin, and smoke at a fairly low temperature, 150 – 175 F.

Smoked To Perfection

I lit just a handful of charcoal using my charcoal chimney. The easiest way to do that is to turn the chimney upside down, putting the charcoal where you’d normally put newspaper, and putting newspaper where you’d normally put charcoal. I put just enough unlit charcoal in the bottom of the WSM to cover the bottom grate.

To make slicing the beef easier, I sat it in the freezer for about 30 minutes first. Then I used a very sharp knife to get very thin slices.

Jerky on the Weber Smokey Mountain

To fit as much jerky on my Weber Smokey Mountain as I could, I suspended the meat on skewers. I was able to fit 3 pounds of jerky on my 18″ cooker (I made two different flavors). I could’ve probably fit 5 or so pounds on without any trouble.

Chipotle Bacon

This is the first year that I’ve been experimenting with curing my own meats to make bacon and jerky. I’ve found the processes to be much easier than I had expected, and the end results to be far, far better than I could’ve ever dreamed. It all started when I bought a small pork belly and made homemade applewood-smoked maple bacon. After that success, I contacted my local butcher at Moody’s Butcher Shop and ordered two pork sides. As I soon found out, a pork side (seen below) is like a pork belly but oh so much bigger and thicker and perfect. It screams bacon. It screams chipotle bacon.

Chipotle Bacon

Subtle, But Fantastic

This chipotle bacon had a mild chipotle flavor. The first time I made it I was way too shy with the chipotle, and although it was fantastic, it didn’t have much of that great smoky chipotle flavor. I recommend you be quite liberal with the chipotle peppers. We aren’t making cheesecake here. Use a lot of chipotle.

Blows Store-Bought Bacon Away

I am so hooked on homemade bacon I know I’ll never go back to store-bought. Not only is homemade tastier, I can make whatever flavor combination I want. I usually do a few big batches all at once, freezing any leftovers for later use.

Chipotle Bacon

This chipotle bacon had a mild chipotle flavor. The first time I made it I was way too shy with the chipotle, and although it was fantastic, it didn’t have much of that great smoky chipotle flavor.

Instructions

  • Put the belly into a large resealable bag.
  • Whisk together the remaining ingredients in a medium bowl. Add to the baggie.
  • Seal the bag, trying to remove as much air as possible. Place in to a deep flat pan (in case the bag leaks) in the fridge for 7 days, flipping over twice a day.
  • The day you are ready to smoke, fire up your smoker for 225 F cooking over a light wood such as apple.
  • Remove belly from the bag and rinse well with cold water.
  • Place belly onto smoker and smoke for 1 1/2-2 hours or until the meat reaches 150 F.
  • Remove belly from smoker and let cool slightly before placing in the fridge for an hour.
  • Slice bacon as desired. Bake, pan fry, or use however you wish!
  • Store smoked bacon in a plastic bag or container in the fridge for up to 2 weeks.
