I’m a member of the Sausage Sandwich Lovers Club. Well, I would be if there was such a club. Now normally, that means a grilled brat or kielbasa smothered in a red sauce with plenty of vegetables and cheese. Like my Italian version. These slow cooker Creole sausage sandwiches are a fantastic twist on what I normally make. Very simple flavors that come together over time with just the right ‘bite’. The sausages themselves are crazy good just as they are. Heck, I could eat them without putting them on a sandwich to be truthful.

Mayo For The Win

For me, mayonnaise is an absolute must on these slow cooker Creole sausage sandwiches. You want something creamy, something smooth. It might sound a little weird but for me, mayonnaise is the way to go. Now, if you’re in the mood for a spicier version, just substitute a hot sausage for the Italian. And maybe even add a pinch or two of cayenne or red pepper flakes to the slow cooker.

I almost always use Blue Plate mayonnaise in the dishes I make. I think it is the best around. If you can’t find it locally you can pick it up online for a fair price.

Ingredients

  • 1 tablespoon vegetable oil
  • 12 Italian sausages
  • 1 small red bell pepper cut into thin strips
  • 1 small orange bell pepper cut into thin strips
  • 1 small yellow bell pepper cut into thin strips
  • 1 large sweet onion halved, cut into thin strips
  • 1 ½ cups beef stock
  • 2 teaspoons Creole seasoning
  • 12 hot dog buns or Hoagie buns
  • 4 tablespoons mayonnaise or a bit more

Instructions

  • Heat the oil in a large skillet over medium-high heat.
  • Add the sausages and brown on all sides.
  • Remove to a slow cooker lightly sprayed with non-stick spray.
  • Add remaining ingredients except buns and mayo.
  • Cover and cook on low for 4-5 hours or until the sausages have reached at least 165 F.
  • Divide mayonnaise between the buns. Don’t be shy, the mayonnaise really makes these dogs even better!
  • Top each bun with a sausage of some of the pepper/onion mixture and enjoy!

Notes

Use hot Italian sausages for a nice spicy sandwich!

Slow Cooker Creamy Hash Brown Potatoes

I’m usually a crispy-hash-browns kind of guy. I like the potatoes to get that nice little crust on them.  And don’t tell anyone this, I like to put butter on them instead of ketchup. Well, this time I decided to go another route with frozen cubed hash brown potatoes. These slow cooker creamy hash brown potatoes are rich and tasty. They are the perfect breakfast side, whether breakfast is in the morning or for dinner. I’m a big fan of breakfast for dinner. I feel like I’m cheating when I have breakfast for dinner. Like I’m being bad and not getting caught.

For a little kick to your slow cooker creamy hash brown potatoes add diced roasted jalapenos, or use a pepper jack cheese instead of the Colby jack. You can also substitute cayenne pepper for the paprika. It’ll still add the (needed) color and a little spiciness.

Slow Cooker Guinness Corned Beef

Bored of that same-ole, same-ole crockpot corned beef recipe? Well, here ya go! You’re not going to be disappointed with this slow cooker Guinness corned beef. Oh yeah, it’s tender and moist. And, boy oh boy is it ever packed with great flavor. The stout beer adds a tremendous deep flavor to each and every bite. The mustard adds a nice little kick, almost unexpected. And onion. I’m a big fan of onion, and I never hesitate to add it to a dish, be in the slow cooker or a steak marinade. It adds a great flavor to the meat for sure.

Oh, What A Great Sandwich This Makes!

Any time I made slow cooker Guinness corned beef it’s going to end up in one place and one place only: between two slices of nice marbled rye bread as a sandwich. I could probably get more creative with it by why would I? Usually that means a Reuben. I love a good Reuben sandwich. There’s no such thing as too many Reuben’s in my world. Sometimes, I go the Swiss-and-corned-beef route, with plenty of mustard. I like to put the sandwich under a broil, open-faced, for a few minutes to get the cheese nice and melted.

Creamy Deliciousness

Slow cooker creamy bacon chicken is mighty darned good as it is. Now, you know me (or well, maybe you don’t) but I like a little kick to my food. I would not be afraid to use jalapeno cream cheese instead of the plain stuff. And I wouldn’t be afraid to add a few squirts of Sriracha or my favorite hot sauce, either. Heck, throw in some diced roasted jalapenos too. You can always make two versions. One nice and mellow and one nice and spicy.

Shredded vs Cubed

If you want your chicken to have a bit more texture than the shredded version in the recipe, just cut into small cubes instead. Same great taste with a little bit different bite.

Slow Cooker French Onion Soup

Ever order French onion soup at a recipe only to get a bowl with so much cheese you can’t tell whether you ordered soup or a grilled cheese sandwich? Yeah, me too. That’s why I love to make slow cooker French onion soup at home. I can control the cheese. I like mine on top of lightly crusted sliced baguettes. Like crunchy cheese croutons. Perfect on a cold day, this soup is packed with fantastic onion flavor. And the aroma that filled the house while this soup was cooking in the crockpot was absolutely amazing. My stomach was growling all day long!

I like to add a bit of beef base to my slow cooker French onion soup to give it just a bit more beefy flavor. Although it’s completely optional if you use a good homemade beef broth. I felt mine could use a little help in the beefiness flavor department. I used a store-bought beef broth which, though good, needed more flavor for sure. If I’d used a better brand (I admit it, I was being cheap) I could’ve skipped the base.

Ingredients

  • 6 tablespoons unsalted butter
  • 4 large yellow onions sliced thin, rings separated
  • 1 tablespoon sugar
  • 2 cloves garlic minced
  • ½ cup cooking sherry
  • 7 cups beef broth
  • 1 tablespoon beef base optional
  • 1 teaspoon kosher salt
  • ¼ teaspoon dried thyme
  • 1 bay leaf
  • 8 slices French bread or 16 slices of a thin baguette
  • cheese A mix of shredded Gruyere, Emmental, Parmesan and Mozzarella cheeses

Instructions

  • Melt the butter in a large pot or Dutch oven over medium-high heat.
  • Add the onions and saute about 10 minutes or until translucent, stirring often.
  • Sprinkle with the sugar, stir and reduce heat to medium.
  • Cook 30-40 minutes or until soft and lightly caramelized.
  • Add the garlic, stir and cook 2 more minutes.
  • Stir in the sherry and cook until evaporated, stirring and scraping up any yummy bits on the bottom of the pot.
  • Transfer the onions to a lightly greased slow cooker on low.
  • Stir in the broth, beef base, salt, thyme and bay leave.
  • Cover and cook 8 hours.
  • Place bread pieces under the broiler to get lightly browned.
  • Sprinkle with cheese and place back under the broiler until the cheese is melted.
  • Serve soup in bowls topped with a slice of the cheese bread (or 2 slices if using a small baguette).

Notes

You can use croutons instead of the bread.

Slow Cooker Cheeseburgers

I really wasn’t expecting these slow cooker cheeseburgers to be all that great. Would I get that great cheeseburger taste?  Would they leave me hankering for the real thing instead? I have to admit that I loved them! I thought they were great. Kind of like Sloppy Joes, but they taste just like cheeseburgers. Heck, they even look like cheeseburgers. Sorta.

On a cold day they hit the spot and then some. A little ketchup, a little mustard, and a few pickle slices and I was a happy guy!

Keep It Simple

I used ‘plain ole’ Velveeta for my cheeseburgers. For a change you can use Kraft’s Mexican- or Jalapeno-flavored Velveeta.

Slow Cooker Baby Back Ribs

I know my buddies on the grilling and smoker forums are going to give me grief over making slow cooker baby back ribs. But I am always up to trying something new (to me). Now, yes, I know these baby back ribs don’t sit in a smoker for 6 or so hours and get a beautiful smoke ring. But, they are tender, almost fall-off-the-bone tender, and with a little help, quite tasty. And hey, when it’s blowing 45 MPH winds outside with a wind chill well below 0, slow cooker baby back ribs will do just nicely.

A Little Smokiness

Like with boiling ribs (ok, don’t hate me for boiling ribs!) before grilling them, you have to add something so that the ribs get some flavor to them. Last time I boiled ribs, I added Old Bay seafood boil seasoning. When I made these baby back ribs I added a drop or two of liquid smoke and a little smoky BBQ sauce to boot. Sure, it’s not the same as sitting over hickory smoke for a long time, but those smoky flavors do absorb into the meat as it cooks.

  • Preheat oven to 375 F.
  • Remove ribs, discarding the onion.
  • Coat ribs in BBQ sauce on all sides.
  • Place on a foil-lined baking sheet and bake for 10-15 minutes or until the sauce has set.

Notes

I recommend a smoky hickory BBQ sauce to give you that ‘just off the smoker’ flavor.

Slow Cooker Creamed Corn

Wow, we were blown away with just how fantastic this slow cooker creamed corn was. Some of the credit goes to using the best sweet corn around, My Dad’s Sweet Corn. I put up a big batch of corn each summer for days just like today: cloudy, cold and dreary. The corn is creamy and sweet and smells, looks and tastes like summer.

A Few Thoughts

Corn from cans can be used instead of fresh, just drain the cans before adding to the slow cooker. For a spicier version of slow cooker creamed corn, use only half a brick of cream cheese and add 1/2 cup of cubed pepper jack cheese instead. Or a bit of cayenne pepper, but not much. You don’t want to bury the tremendous sweetness of the corn.

I’m a big fan of taco night. Granted, it’s not real Mexican taco night, but it’ll do. Well-seasoned ground beef, cooked slow all day, soaking up flavor after flavor. Deep, rich flavor in a sauce that is so delicious! Nothing fancy. No fine dining here. Just tasty tacos or taco salads. Perfect on a cold night. Heck, perfect on a hot night too! And nothing could possibly be easier to make than this slow cooker taco meat version 2.0. Why version 2.0? Well, because I knew I could make the original recipe better!

Seasoned To Perfection

I prefer to use my homemade taco seasoning instead of the packets you get in the store when you make this slow cooker taco meat version 2.0. I like to be able to control the amount of salt and making it myself gives me that chance. Also, what do you do if you use up a packet and want more seasoning? Go to the store for a little ole packet?

We’re both big fans of Mrs. Renfro’s salsas, and in particular the peach-flavored salsa. It adds a nice mellow sweetness to this slow cooker taco meat. For a nice kick, try Mrs. Renfro’s Mango Habanero salsa. It’ll wake you up!

Slow Cooker Beans ‘n Wieners

When I was a kid beans n’ wieners were one of my favorites. Here I am many years later and well, nothing much has changed because I still love them. I still eat most of the sauce first, saving the hot dogs for last. My grown-up version is slow cooker beans ‘n wieners. Cooked for hours so that that great sauce flavors the beans and hot dogs just perfectly. A big bowl can chase away the cold weather, and quick. I call it the perfect dish after shoveling the snow off the driveway! Heck, it’s perfect without going outside. Looking out the window on a cold winter’s day is enough to make me want a big bowl!

This recipe for slow cooker beans ‘n wieners is perfect as it is, but you can add a bit of heat if you want. Just add a small can of chopped roasted jalapenos in at the start and let that great heat get slow cooked into the rest of the ingredients. Starting with quality canned pork and beans gives you a better end result, but you can get by with your store’s generic too (I did)!
