White Pizza Grilled Cheese Sandwiches

There’s a scene in the movie Chef where the star, Jon Favreau, makes a grilled cheese sandwich. It was the perfect grilled cheese sandwich. Perfectly toasted on both sides. And it crunched, oh how it crunched, when he sliced it. I have to admit, I’m still working on my grilled cheese toasting skills. But I sure do enjoy a great grilled cheese sandwich for lunch. These white pizza grilled cheese sandwiches have a great pizza-ish herby flavor to them, with ooey-gooey melted mozzarella and a little Parmesan to boot. Very good, and a little different.

No Wimpy Bread Need Apply

I prefer to use Texas toast for my grilled sandwiches. It holds up and holds up well to just about anything you want to pile up on it. No one likes a grilled cheese that just dissolves once you get past the crust. Nope, you need a bread that will be there till the end, and for me that’s Texas toast. Oh, and I love to make smoked paprika and garlic croutons out of any leftover pieces of Texas toast I might have.

The Griddler is a champ at making grilled cheese sandwiches, like my muffuletta grilled cheese, grilled caramel apply cheese, grilled spinach and artichoke cheese, and pepperoni pizza grilled cheese.

Instructions

  • Turn on your Griddler to the griddle setting and 350 F, or heat a large skillet over medium heat.
  • Mix the ricotta and oil together in a large bowl.
  • Stir in the garlic, basil, oregano, salt, pepper and Parmesan cheese.
  • Mix in the mozzarella cheese. The mixture will be thick. Don’t be afraid to use your hands to mix it well.
  • Lightly butter each slice of bread on one side.
  • Working in batches, place slices of bread butter-side down on the Griddler or into the skillet. Top with the cheese mixture, spreading out evenly.
  • Add the top piece of bread butter-side up.
  • Cook until the bottom bread is golden brown. Flip and cook the other side until golden brown.
  • Let rest for 5 minutes before slicing.

Crab Grilled Cheese Sandwiches

Grilled cheese sandwiches aren’t uncommon in our household, not at all. They’re easy and good and that’s all you can ask for. But, sometimes I just gotta mix things up. Not crazy mix things up, but crazy good mix things up. The filling in these crab grilled cheese sandwiches is just like a good crab salad. It just needs a little ‘help’, and that comes in the form of melted oooey gooey Swiss cheese on crispy golden bread. A nice crunch then creamy salad and cheese. Perfect.

I used my Cuisinart Griddler to make these sandwiches.

Ingredients

  • 6 ounces lump crab meat picked over for shells
  • 2 tablespoons mayonnaise plus more, perhaps
  • 4 tablespoons green onions chopped
  • ½ teaspoon lemon zest
  • ¼ teaspoon ground black pepper
  • 4 slices bread I used 6 small slices of Vienna bread
  • 4 slices Swiss cheese
  • 1 tablespoon butter

Instructions

  • In a bowl combine the crab, mayonnaise, green onions, lemon zest and pepper.
  • Heat a large skillet over medium-high heat or turn a panini press on high.
  • Slather one side of each piece of bread with butter.
  • Lay two slices of bread-butter side down in the skillet or onto the panini press.
  • Add a slice of cheese to each, then divide the crab mixture between them.
  • Add remaining slice of cheese to each and top with other piece of bread, butter-side up.
  • Fry until golden brown on the bottom then flip and fry on the other side until done, or close your press and cook until nice and golden brown.
  • Remove from skillet or panini press and slice and serve.

Buffalo Chicken Grilled Cheese Sandwich

I often do ‘theme weeks’ when it comes to dinners, and sometimes lunches. A recent theme was Buffalo chicken. I love the flavor of traditional Buffalo chicken wings, so I figured I’d make a large batch of chicken breasts flavored the same way. I cooked the Buffalo chicken on my Char-Broil Big Easy, but any Buffalo chicken will do. After it was cooked, I shredded the meat, added a bit more wing sauce, and got to making a week’s worth of great Buffalo chicken-flavored dishes, like this Buffalo chicken grilled cheese sandwich.

Carrot And Celery. In A Sandwich?

Every great thing about Buffalo chicken is in this grilled cheese sandwich, from the sides of carrots and celery, to blue cheese crumbles. They cook up oooey gooey, and have that great Buffalo chicken kick. I could eat these sandwiches all day long. You can make the chicken mixture ahead of time. Then you only the time it takes to assemble and toss in a hot skillet. Lunch in just minutes!

I’m pretty sure that the Cuisinart Griddler was made specifically for making this sandwich and others like it. You can use a skillet instead, sure. But for easiness, you can’t beat the Griddler!

These sandwiches are great along with my Buffalo chicken soup.

  • Gently flip sandwiches and cook until bread turns golden brown and crispy and cheese has melted.
  • Let cool slightly before slicing.

Pretzel Grilled Bacon and Cheese Sandwiches

I wanted a grilled cheese sandwich. But, after visiting the Der Pretzel Wagen food truck here in Indianapolis a few days earlier and grabbing an outrageously good pretzel sandwich (The Ham Solo, is my favorite), I was also jonesin’ for a pretzel. I’m always jonesin’ for a pretzel. So, I decided to combine the two desires into a very easy sandwich. Pretzel ‘bun’, melty gooey cheese, crispy bacon, and a bit of Dijon mustard. These pretzel grilled bacon and cheese sandwiches are easy to make, and quite tasty. They make for a delicious lunch time treat!

I didn’t go the fancy route. I used frozen pre-made pretzels. Heck, I’ve tried to make my own pretzels and I can’t. And American cheese. My pretzel grilled bacon and cheese sandwiches are good enough to hold me over until I can get back to Der Pretzel Wagen food truck for one of their pretzel sandwiches!

Update: Sadly, Der Pretzel Wagen is no longer open for business! I sure do miss their food. Hopefully they’ll come back some day.

To get the cheese all ooey-gooey I tossed the sandwiches on a hot Griddler for a few minutes.

Mushroom Grilled Cheese

I’m going to have a hard time ever eating any other kind of grilled cheese sandwich after devouring these mushroom grilled cheese sandwiches. They are incredible. Creamy, gooey cheese. And the best part, sautéed, earthy mushrooms. Absolutely fantastic. Of course, you need a little something to counter all that creamy stuff. That’s where the nicely-toasted, just-a-bit-crunchy bread comes in. It’s the texture contrast this sandwich needed to make it to perfection.

Time Well Spent

It takes a bit of time to make these sandwiches. You can’t rush it since you want the onions to be soft and golden. Remember that you want the cheese to be melted and you just can’t rush that. And definitely don’t rush the bread. You want that buttery goodness to get nicely golden brown with a light crunch. Your efforts will be rewarded.

I like to cook these mushroom grilled cheese sandwiches on my Cuisinart Griddler. It does sandwiches like nobody’s business.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 small sweet onion sliced thin
  • 8 ounces cremini mushrooms sliced
  • 2 cloves garlic minced
  • ½ teaspoon dried thyme
  • ¼ cup white wine or chicken broth
  • Kosher salt to taste
  • ground black pepper
  • 1 tablespoon parsley chopped
  • 1 cup gruyere cheese shredded (shredded mozzarella or provolone are also great!)
  • ¼ cup Parmigiano Reggiano cheese grated
  • 4 slices bread
  • 2 tablespoon butter softened

Instructions

  • Add the 1 tablespoon of butter and the oil to a large skillet over medium heat and heat until the butter has melted.
  • Add the onion and saute until tender.
  • Add the garlic and thyme and saute 1 minute.
  • Add the mushrooms and saute until they start to caramelized and turn golden brown in color, 10-15 minutes.
  • Add the wine or broth and deglaze the pan. Stir and cook until most of the liquid has evaporated.
  • Add salt and pepper, to taste.
  • Remove from heat and stir in the parsley.
  • Let cool slightly then stir in the cheeses.
  • Heat another large skillet over medium-high heat.
  • Butter one side of each slice of bread with the remaining butter and place two slices butter side down in the pan.
  • Divide mushroom mixture between the two slices of bread and add remaining slice butter side up.
  • Cook until bread is golden brown, then flip and cook on other side until golden brown and cheese mixture is nice and gooey.
  • Remove. Let cool slightly before slicing then serve.

Spicy Grilled Cheese

I work from home, and with all the food I end up cooking through the week, I usually heat up some leftovers for lunch. Sometimes, though, no leftovers are to be found. That’s when I like to throw together a quick meal, like a grilled cheese sandwich. No need for it to be just cheese and bread, though. I throw on a little tomato and jalapeno and all is good in the world again. Done in minutes this spicy grilled cheese is and nice and different. With a kick.

Don’t fear the ‘spicy’ in this ‘spicy grilled cheese’. You’re just adding a little ole jalapeno and that’s for two sandwiches. I mean, you do want it to be spicy, right? At least it should have a little kick. You want to go crazy with it, add a serano pepper or habanero. Now, that’s spicy!

  • 2 tablespoons unsalted butter softened
  • 4 slices Texas toast

  • 1 Roma tomato seeded, chopped
  • 1 small jalapeno seeded, minced

Instructions

  • Heat large skillet over medium heat.
  • Spread butter on one side of each slice of bread.
  • Lay two slices of bread butter-side down in the skillet. Top each with one slice of cheese. Divide the tomato and jalapeno between the bread slices and top with remaining cheese.
  • If your skillet is large enough, lay the remaining bread slices butter-side down into the skillet. This prevents you from having to flip the sandwiches to brown them on both sides. Bad things can sometimes happen when you flip a sandwich! But, if you’re a good flipper, put the remaining bread on top of the sandwiches, butter-side out.
  • Cook until bread is nice and browned. Flip when ready and brown on other side if you aren’t cooking the top slices separately. Otherwise, top the sandwiches with the cooked top slices.
  • Serve hot and gooey.

Muffuletta Grilled Cheese Sandwich

I love olive salad. I could probably eat muffuletta sandwiches any day, every day. It takes a bit of work, but I prefer my homemade olive salad. But, if time is of the essence, I take no shame in using a great, quality store-bought olive salad like the one from Boscoli. Putting olive salad on a grilled cheese sandwich seemed like not only a good idea, but a great idea. Muffuletta grilled cheese sandwich? Yes!

Get That Runny Cheese Action

You can use sliced provolone, but for really big extra flavor, use our smoked provolone cheese sauce instead. It makes for an amazing, oeey-gooey muffuletta grilled cheese sandwich.

So, the question is… do you flatten your grilled cheese? Many say it’s not a grilled cheese unless you press down on it and make it super thin. I like mine thick. Sorry 🙂

Smoked Pot Roast

I read somewhere that you’re not supposed to say “This is the best thing that I ever ate” on a food show or on a food blog. The theory is that well, tomorrow, you might have a better version of the same dish, so then what are you going to say? “This is even better than the best thing I ever ate”? Well, I’m going to violate the rule right here and now and say that this smoked pot roast is the best pot roast I have ever eaten. It’s incredible and it’s tender. It’s juicy and it’s so flavorful. And it has a hint of smoke.

It’s All About That Smoky Goodness

You could make this same recipe in the oven, but since you won’t get that great smoke flavor, you’ll need to add a bit (to taste, but not much) of liquid smoke.

We had some leftover pot roast, so I used up the meat in two other great dishes. First, I substituted the pot roast for corned beef on Reuben sandwiches (rye and Thousand Island and kraut).

  • Fire up your smoker for 250 F and add a chunk or two of light wood (I used apple).
  • Place each chuck steak into a deep 9″ x 11″ aluminum pan.
  • Combine the gravy, dressing, and seasoning packets and rub liberally over each chuck. Use it all.
  • Add 1/2 of the can of beef broth to each pan.
  • Smoke for 1 hour.
  • Cover each pan in foil and cook another 4 hours or until the meat is tender but not yet falling apart.
  • Divide the vegetables between both pans, cover again, and cook another 2 hours.
  • Remove from the smoker and let rest 10 minutes then shred as desired.
  • Devour.

After hearing that one of the sandwiches that the Serendipity food truck (sadly, no longer around) serves is based on a spinach and artichoke dip, I took it as a challenge to take my spinach and artichoke dip and make it into a grilled cheese sandwich. And oh, what a happy day it was. This grilled spinach and artichoke cheese sandwich combines a great cheesy dip with grilled sourdough bread. The result is gooey and savory, a perfect change from the ole traditional grilled cheese sandwich. And oh, the bread! The perfect crunchiness to go with the creamy filling!

Wimpy Bread Need Not Apply

You’ll want to use a thick, hearty bread for these sandwiches. Thin wimpy white bread isn’t going to cut it. I bought a loaf of sourdough and cut it thick.

I used my Cuisinart Griddler to make these sandwiches. It is a sandwich cooking machine. I love it. I use it for whole bunch of other dishes, too. Like pancakes or waffles. And hamburgers. It’s really a versatile tool to have.

The Griddler is a champ at making grilled cheese sandwiches, like my muffuletta grilled cheese, grilled caramel apply cheese, and pepperoni pizza grilled cheese.

Grilled Spinach and Artichoke Cheese Sandwich

Instructions

  • Spray a large non-stick skillet over medium-high heat.
  • Meanwhile, brush one side of the bread pieces with butter.
  • Place bread, butter side down, into skillet.
  • Spoon as much dip as you want onto one of the bread slices.
  • Cover skillet and cook until bread is browned and dip starts to melt.
  • Assemble sandwich and serve.
